Steps:
- Prepare cake mix as directed.
- Pour into 9x13 or 15x10x1 inch pan.
- Drop rhubarb over cake mix.
- Sprinkle sugar over rhubarb.
- Over this sprinkle 1 small pachage strawberry Jell-o (dry).
- Bake at 350F for one hour or until cake is done.

EASY RHUBARB PUDDING CAKE
From a neighbor, very simple and great rhubarb pudding bottom. Reminds me of a pineapple upside-down cake. I'm not a big fan of rhubarb but this is excellent and easy.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking pan.
- Stir cake mix, 1 cup water, vegetable oil, and eggs in a bowl until moistened; beat with an electric mixer on medium speed for 2 minutes. Pour batter into prepared cake pan. Top the batter with rhubarb and sprinkle with sugar and cinnamon; pour 1 cup hot water evenly over the cake.
- Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean or with moist crumbs, 50 minutes to 1 hour.

EASY RHUBARB CAKE
This recipe was given to me by my friend and co-worker, Trish. It is a moist and delicious cake. Can also substitute any other fruit for the rhubarb. *The brand name cake mix, eggs, water & oil listed are just a suggestion that was required to analyze the nutritional values. Any brand yellow cake mix will work as well, just be sure and follow the directions on that box for mixing their specific amounts and ingredients of eggs, water, oil or butter instead of what I have listed.*

Steps:
- Preheat oven to 350 degrees.
- Mix the cake mix, eggs, water & oil together as directed on cake mix box.
- Pour into deep 9X13 pan.
- Top with the rhubarb.
- Sprinkle the sugar over the top of rhubarb.
- Pour the heavy cream over the top of entire mixture.
- Place the pan on a cookie sheet or foil to protect your oven (batter might spill over if the pan is not deep enough).
- Bake @ 350 degrees for 45-60 minutes or until the top is a golden brown.
- Top with whipped cream to serve (optional).
- Enjoy!

- Preheat oven to 350 degrees.
- Grease 9x13inch pan.
- Mix together Rhubarb, tapioca, sugar and package of DRY jello (NO WATER) and pour into prepared pan.
- Prepare cake mix according to package directions (adding the lemon extract to the wet ingredients) and pour over Rhubarb mixture.
- Bake 1 hour.
- Serve with whipped cream or ice cream.

EASY RHUBARB CREAM CAKE
I found this recipe among my Mom's newspaper clippings. It appears to be from the 1970's. I don't remember her making this but I wanted to add it to her cookbook for future use as it sounds great to me.

Steps:
- 1. Preheat oven to 350 degrees. Grease a 9 by 13 inch cake pan. Mix cake as directed on box. Pour batter into prepared cake pan. Spread rhubarb on top of cake batter. Do not mix into batter. Sprinkle sugar on top of rhubarb. Gently pour cream on top of rhubarb. Do not mix. Bake for 35-40 minutes or until cake tests done.
EASY RHUBARB CAKE
This sounds too easy to be true but the result is a truly beautiful dessert with an excellent flavour. I found it in Mastercook while searching for something to serve for a bunch of children but the adults loved it too. The originator is a Francis Bolton. Bless her, whoever she is! Be sure and bake it enough. If the top is dark it doesn't matter, no-one sees it.

- Preheat oven to 350ºF.
- Line the bottom of an ungreased 9x13- inch baking pan with enough chopped rhubarb to cover bottom.
- Sprinkle sugar evenly over rhubarb.
- Then sprinkle Jello powder and marshmallows.
- Prepare a standard white cake mix according to package directions.
- Pour the mix over ingredients in pan.
- Bake about 45 minutes.
- Let stand a few minutes and invert pan on serving sheet.
