- Pulse garlic in a food processor until finely chopped. Add tomatoes and juices, oil, and 3/4 teaspoon salt; process to a smooth puree. Transfer to a large saucepan or straight-sided skillet. Bring to a boil, then reduce heat to medium-low and simmer, stirring occasionally, until thickened and reduced slightly, about 20 minutes. Let cool completely before using or storing. Sauce can be refrigerated in an airtight container up to 5 days, or frozen up to 3 months.
