Yield Makes 2 crusts

Number Of Ingredients 7

2 1/2 cups all purpose flour
3/4 cup (1 1/2 sticks) chilled unsalted butter, cut into 1-inch pieces
2 tablespoons sugar
3/4 teaspoon salt
1/4 cup frozen vegetable shortening, cut into large pieces
1 large egg
3 tablespoons (about) ice water

Steps:

  • Blend first 4 ingredients in processor 10 seconds. Add shortening; process just until very coarse meal forms. Beat egg with 2 tablespoons water; add to processor. Blend until large moist clumps form, adding more water if dry. Gather dough into ball; divide in half. Flatten each piece into disk. Wrap in plastic; chill at least 1 hour. (Can be made 2 days ahead. Keep chilled. Let dough soften slightly before rolling out.)

1 1/2 cups all-purpose flour
3 tablespoons white sugar
1/4 teaspoon salt (if using unsalted butter)
2/3 cup unsalted butter, cubed (or use salted butter and omit salt)
1 egg, beaten
1/2 teaspoon vanilla extract

Steps:

  • Sift together the flour, sugar, and salt (if using) into a bowl.
  • Toss butter into flour mixture to coat pieces. Using fingertips, rub butter into flour, working it until you have created a coarse meal with a few pea-size pieces.
  • In a small bowl, combine egg and vanilla. Whisk together, then add gradually to flour mixture, stirring with a fork. Mix with hands until dough forms a ball.
  • Knead the dough to make it smooth. Cover with plastic wrap and refrigerate for 10 minutes.
  • Roll out dough and shape to pie pan or cut out rounds for tarts.

3/4 cup flour
1/2 cup butter
1/4 cup sour cream

Steps:

  • Using a food processor, pulse butter into flour until it resembles crumbs. pulse in sour cream just until a ball forms and it just begins to hold together, being careful not to over-mix.
  • Roll out and fold over in three sections (like folding a business letter). Repeat 2-3 times to get the layers of puff pastry.
  • Wrap in plastic wrap and refrigerate for a minimum of 30 minutes before using. Let sit for a few minutes or pound with rolling pin to get it pliable.

This recipe is adapted from the one we used to use when I did dome training at a college for pastry arts. It's so simple, freezes really well and tastes great. I use it both for sweet and savory dishes and everyone raves about the "crust"

Yield 6-8 pie shells (single)

750 g pastry flour
500 g shortening
250 ml cold water
15 g salt
30 g brown sugar

Steps:

  • Rub shortening into flour until reduced to irregular pea size.
  • Dissolve salt and sugar in cold water.
  • Add to the flour and shortening until mixed just enough to incorporate. Do not over mix.
  • Transfer dough to floured table (using bread flour), shape into a thick roll, cover with cling film and allow to rest in the fridge for about 30 mins before rolling.
  • Divide into portions and use for pie shells etc or use what you need and freeze the rest for later use.
  • Bake at temperature suggested by the recipe you are using the pie shell/dough for.
