2 cups flour
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter (softened)
1 cup brown sugar
1/2 cup sugar
2 large eggs
1 Tablespoon Vanilla
2 Tablespoons honey
3 cups old fashioned oats
1 heaping cup raisins

Steps:

  • In a medium size bowl combine the flour, cinnamon, baking soda, and salt.
  • In another bowl cream the butter, brown sugar, sugar, eggs, vanilla and honey.
  • Slowly combine the flour mixture.
  • Add in the oats and raisins and mix until combined. Chill for 30 minutes.
  • Preheat the oven to 350 degrees. Scoop out a tablespoon of cookie dough and place on a parchment lined baking sheet. Bake for 8-10 minutes or until golden brown.

This is our family recipe for shortbread oatmeal cookies, handed down through the Scottish side of the family. There is nothing better. They are definitely not low in fat.

3 cups rolled oats
1 cup all-purpose flour
1 cup packed brown sugar
1 cup butter
¾ teaspoon baking soda
½ teaspoon water

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Dissolve the baking soda in the water.
  • Combine the oats, flour and brown sugar. Cut in the butter until the mixture resembles coarse crumbs. Stir in the baking soda mixture and form dough into a ball. Either roll dough out to 1/4 inch thick and cut with cookie cutters or press dough into the bottom of one 9x13 inch baking pan.
  • Bake at 375 degrees F (190 degrees C) for 12 to 15 minutes.

  • Heat oven to 350°F.
  • Whisk butter, COOL WHIP and egg in large bowl until blended. Add remaining ingredients; mix well.

1 1/2 cups pecans
1/2 pound (2 sticks) unsalted butter, at room temperature
1 cup dark brown sugar, lightly packed
1 cup granulated sugar
2 extra-large eggs, at room temperature
2 teaspoons pure vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon kosher salt
3 cups old-fashioned oatmeal
1 1/2 cups raisins

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the pecans on a sheet pan and bake for 5 minutes, until crisp. Set aside to cool. Chop very coarsely.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the butter, brown sugar, and granulated sugar together on medium-high speed until light and fluffy. With the mixer on low, add the eggs, one at a time, and the vanilla.
  • Sift the flour, baking powder, cinnamon, and salt together into a medium bowl. With the mixer on low, slowly add the dry ingredients to the butter mixture. Add the oats, raisins, and pecans and mix just until combined.

100g raisin
150ml vegetable oil
200g golden caster sugar
1 large egg, beaten
1 tsp ground cinnamon
1 tsp vanilla extract
140g plain flour
¼ tsp bicarbonate of soda
300g oats

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line 2 baking trays with baking parchment. Pour 50ml/2fl oz boiling water over the raisins and leave to soak for 20 mins until plump. Drain, reserving the liquid.
  • Meanwhile, in a large bowl, mix together the oil and sugar. Gradually beat in the egg, along with the reserved water from the raisins, the cinnamon and vanilla extract. Sift the flour, bicarbonate of soda and a pinch of salt into the bowl, then add the oats. Finally, mix in the raisins.
  • Drop heaped tbsps of the cookie dough onto the baking trays, well spaced apart as they will spread when cooking. Bake for 12-15 mins until golden. Leave to cool on the trays for 10 mins before tucking in, or transfer to a cooling rack to cool completely. Will keep in an airtight container for up to 3 days.
