This is a creamy, decadent side dish that we love served alongside pork or a juicy steak. So good!

Number Of Ingredients 8

1 medium cauliflower head, broken up
4 large red new potatoes, unpeeled and cut in 1/4
1 Tbsp butter
pinch salt
pinch pepper
3 eggs
3/4 c gruyere cheese
1/4 tsp cayenne pepper

Steps:

  • 1. Cook the cauliflower in boiling salted water for 15 minutes or until tender.
  • 2. Meanwhile, cook the potatoes in boiling water for 15 minutes or longer until tender; drain the potatoes and cauliflower and place in mixing bowl.
  • 3. Add the butter, salt and pepper; mash together to make a puree; it is better to use a potato masher as a food processor can make it too mushy.
  • 4. Beat the eggs into the puree, one at a time, then stir in the cheese.
  • 5. Spoon into a greased dish, and bake one hour with foil on it in a 350 oven.
