3 slices bacon, diced
2 cups diced potatoes
1/4 cup chopped onion
1 (8 ounce) bottle clam juice
2 (6 1/2 ounce) cans minced clams
2 cups heavy cream

Steps:

  • In a 3 quart saucepan, brown bacon over medium heat (do not drain drippings).
  • Add potato and onion and saute for about 7 minutes.
  • Drain the minced clams and reserve the liquid.
  • Add clam juice and reserved clam liquid to mixture in saucepan.
  • Cover and simmer 15 minutes or until potato is tender.
  • Stir in cream and clams and bring to a slow simmer.
  • DO NOT BOIL.
  • Serve with crackers.

My friend gave me this recipe when we lived in Maine. Be sure and eat it with some good sour dough bread - maybe even inside a bread bowl (like they serve in CA).

2 (7 ounce) cans minced clams
5 slices bacon, diced
2 cups water
5 medium potatoes, peeled and diced
1 onion, diced
1 (12 ounce) can evaporated milk or 1 (12 ounce) can heavy cream
1 cup milk
1 1/2 teaspoons salt
pepper, to taste

Steps:

  • Drain clam juice and set aside.
  • Fry bacon and when half done put onions in fat and then add potatoes for a few minutes to absorb flavor of the bacon fat and saute briefly and gently.
  • Put those ingredients in a pan with the clam juice, salt, pepper and water and simmer until the potatoes and onions are done.
  • Add the clams and the milks and heat until heated through (do not boil).

1-1/3 cups milk
1 can (6-1/2 ounces) chopped clams, drained
2 tablespoons sherry or chicken broth
1 tablespoon butter
Shredded cheddar cheese, optional

  • In a large saucepan, combine the first five ingredients. Bring to a boil. Reduce heat; cover and simmer for 5 minutes. Sprinkle with cheese if desired.

1 lb potato, peeled and cut into 1/2-inch chunks
1/4 cup carrot, chopped
1/4 cup onion, chopped
1/4 cup celery, finely chopped
1 (12 fluid ounce) can evaporated milk
1/4 cup all-purpose flour
2 (6 1/2 ounce) cans minced clams
1 cup milk
1/2 cup water
1/2 teaspoon salt
1/2 teaspoon Worcestershire sauce
1/4 teaspoon ground black pepper

Steps:

  • Cook bacon in medium saucepan over medium heat until crisp; drain.
  • Reserve 2 tablespoons bacon fat.
  • Return bacon fat to saucepan.
  • Add potatoes, carrot, onion and celery.
  • Cook, stirring frequently, for 6 to 7 minutes or until potatoes are tender.
  • Combine evaporated milk and flour in small bowl until blended; add to potato mixture.
  • Stir in clams with juice, milk, water, salt, bacon, Worcestershire sauce and pepper.
  • Reduce heat to medium-low; cook, stirring frequently, for 15 to 20 minutes or until creamy and slightly thick.

1/2 lb bacon
1/2-3/4 cup flour
2 (10 ounce) cans baby clams
1 (10 ounce) can minced clams
1 (10 ounce) can seafood sauce
3 medium potatoes, cooked
1 medium onion
1 pint half-and-half
1 -2 cup milk

Steps:

  • Peel and cube potatoes, put them in the bowl, cover with plastic wrap, and cook till they done in the microwave. (5-8 min). /I recommend cuting them when they r cold, so you dont have to wait for them after/.
  • Cut the onion.
  • Slice bacon and cook it.
  • After bacon is done, add onions and cook them till they done (you may wanna use extra butter or lil half and half).
  • Start adding flour little by little to the bacon an onions.
  • Add half and half
  • Finish line: add all clams, minced clams, Progresso Seafood Sauce (White Clam), and cooked cubed potatoes. Do not drain your clams. If you like how it is - then let it simmer. If you think its too thick - add some clam juice - or milk - or half and half - or just water. Uoy also might want to add some garlic.
  • Let it simmer for at least 10 min (if you will be able to wait that long).

10 strips bacon
1 leek
1/2 sweet onion
3 stalk(s) celery
3 carrots
4 potatoes
4 clove garlic
1/3 c butter
2 bottle clam juice, 8 oz
3 can(s) whole baby clams, 10 oz.
2 can(s) chicken broth, 14.5 oz
1/4 c flour
2 c milk
2 Tbsp dried oregano
1 tsp black pepper
1/2 tsp liquid smoke

Steps:

  • 1. Cut bacon into 1/2″ pieces. Rinse leek under cold water; cut off root end and slice in half. Cut into 1/2″ pieces. Rinse celery and cut into 1/2″ pieces. Clean garlic and mince finely. Clean onion and dice. Clean carrots and cut into 1/2″ pieces. Wash and cube potatoes; no need to peel if you are using red or yellow potatoes. In a large stock pot, brown the bacon over medium high heat. Remove from pot with slotted spoon and set aside. To the drippings in the pot, add the butter and melt. Add the leek, onion, celery and garlic. Cook and stir for 10 to 12 minutes. Add the potatoes and carrots. Cook and stir for 5 minutes longer. Add the chicken broth, clam juice and liquid smoke. Bring to a boil and turn heat to medium. Cook, stirring occasionally, for 30 minutes or until vegetables are tender. Meanwhile, in a medium bowl, combine the flour and milk. Whisk well so that no lumps remain. Add to the broth and stir until slightly thickened. Stir in drained clams. Turn heat to low and cook, stirring frequently, for 12 to 15 minutes. Serve with a crisp green salad and crackers or fresh bread Serves 6 to 8
