This is my grandmother's recipe for the salad dressing she used instead of mayonaise. (I never tasted mayo until I was a teenager). We used it in pasta salads, egg and tuna salads and sandwiches. I still don't eat BLTs without the tang of this dressing. Grandma made hers on the stovetop and had to stir constantly to avoid scorching. I now do mine in the microwave and no longer have to worry about that.

Number Of Ingredients 8

1/2 cup sugar
1 tablespoon cornstarch
1/2 teaspoon salt
1 egg
1/4 cup vinegar (either white or cider )
1/2 cup hot water
2 tablespoons prepared yellow mustard (Dijon, Honey Mustard or other flavors will work)
1 tablespoon butter

Steps:

  • In microwave safe bowl mix sugar, cornstarch and salt.
  • Whisk in the egg, vinegar, water and mustard.
  • Microwave on high for 3 minutes then stir.
  • Microwave again on high for 1 minute then stir and repeat in 1 minute increments until dressing comes to a boil and thickens - about 5 - 6 minutes total cook time. (It will continue to thicken as it cools).
  • Add butter.
  • Store in refrigerator.

An old fashioned boiled dressing, this is my family's dressing for tuna and potato salad. We used to make it in a double boiler, but with a microwave the cooking is really simple!

1/2 cup white sugar
1 tablespoon flour
1 teaspoon dry mustard
1 teaspoon salt
1/2 cup liquid (2/3 vinegar and 1/3 water)
1 tablespoon butter (optional)
1 egg

Steps:

  • Mix all dry ingredients in a microwave safe bowl, making sure lumps are out of the mustard.
  • Beat in egg and liquid until smooth.
  • Microwave on medium for 3 minutes, whisk. Microwave again for 2 minutes, whisk.
  • When dressing is the consistency you like (don't overcook it), you can add the optional butter, but I no longer do.
  • chill and use with tuna salad or potato salad.

EASY MICROWAVE SALAD DRESSING

Sometimes when I am in a hurry - I make a batch of this dressing - keep it in the 'fridge and vary the flavours according to the meal I am serving - today its Roasted Chicken and a leg of Lamb - the dressing is easy peasy!

30 ml all purpose flour
15 ml sugar
3 ml salt
3 ml dry mustard powder
190 ml milk
1 egg yolk
45 ml vinegar
15 ml butter

Steps:

  • 1. Mix flour, sugar, salt and dry mustard in a Large casserole. Slowly stir in the milk. Microwave on 100% for 2 1/2 to 4 1/2 minutes - stirring every minute until the mixture thickens.
  • 2. Slowly stir half the hot mixture into the egg yolk then blend this into the remaining hot mixture. Microwave for 1 to 1 1/2 minuts, stirring ever 30 seconds - the mixture will start to thicken.
  • 3. Stir in the vinegar and the butter - let the mixture cool then store in the refridgerator.
  • 4. Here are some variations to turn your salad into something special - BLUE CHEESE DRESSING: While mixture is hot stir 70gr crumbled blue cheese, 3ml Worcesterchire sauce and 50ml cream - mix well.
  • 5. HERBED DRESSING: While mixture is still warm add chopped fresh herbs of your choice - such as parsley, dill and thyme or parsley, tarragon and spring onions. Mix well into dressing and refridgerate.
  • 6. 1000 ISLAND DRESSING: To the cooled Dressing add 60ml Tomato Sauce (ketchup), 2 small finely chopped gherkins, 30ml chopped onion, 1 chopped hard boiled egg, 5ml Sugar and 5ml white vinegar. Mix well and refridgerate - this is a tangy dressing! NOTE: YOU CAN DOUBLE THE QUANTITY
