Easy Matzo image

At its most traditional, matzo is made from just flour and water. But adding a little salt for flavor and olive oil for richness yields an airy, tender matzo that's easy to make. This version also includes a small amount of whole-wheat flour for earthiness, but you can use all white flour if you prefer. Matzos will keep for at least a week stored airtight at room temperature. (Note that these matzos are not kosher for Passover.)

2 cups/255 grams all-purpose flour, plus more for rolling
1/4 cup/30 grams whole-wheat flour
3/4 teaspoon kosher salt
1/4 cup/60 milliliters extra-virgin olive oil
Flaky sea salt (optional)

Steps:

  • With the racks positioned the top third and middle, heat oven to 500 degrees.
  • In a large bowl, use a wooden spoon to stir together all-purpose flour, whole-wheat flour and kosher salt. Add in 1/2 cup water and the 1/4 cup oil, and stir until a pliable dough forms, adding more water if the dough seems dry.
  • Lightly flour a work surface, and knead dough briefly until it becomes smooth. Cut dough into 4 even pieces. Re-flour your work surface, if necessary, and use a rolling pin to roll out 2 pieces as thinly as you can, about 6 to 8 inches in diameter. (They should be almost translucent.) Aim for rounds, but don't worry if they are oblong.
  • Transfer each matzo to a separate cookie sheet, and prick each one all over with a fork. Sprinkle with flaky sea salt, if you like. Bake until golden all over and lightly browned in spots, about 7 to 12 minutes. (Timing will depend on how thinly you rolled the dough.) Transfer matzos to a wire rack and let cool.
  • While first batch is baking, roll out remaining dough. If you have enough baking sheets, transfer the rolled dough onto another two sheets. If not, use the warm sheet trays you used in the first batch, being careful while transferring and pricking the dough with a fork. Bake and cool.

4 large eggs, lightly beaten
1 cup matzo meal
1/4 cup oil
1/4 cup water
1 tsp. salt
1 tsp. onion powder
1/4 tsp. garlic powder

Steps:

  • Mix all ingredients until well blended; cover. Refrigerate 30 min.
  • Shape evenly into 18 balls, each about 1 inch in diameter, using moistened hands. Add to large pot of boiling salted water; cover.
  • Cook 30 min. or until matzo balls are cooked through; drain.

EASY FRUITY MATZO KUGEL



Easy Fruity Matzo Kugel image

We had this kugel at seders when I was a child. It has been hidden away for years. Last year we broke it out again and it was a nice addition. Recipe is for a 9 or 10-inch square dish but can easily be doubled into a 9x13-inch dish. Farfel can be substituted for the matzo but I don't know the conversion factor. The original recipe called for a lot of salt and sugar. The amounts can be reduced per one's own taste. Any flavor pie filling may be used. I have had both apple and cherry flavors and both are quite tasty.

8 matzos, broken into pieces
6 eggs
1/2-1 1/2 teaspoon salt, to taste
1/2-1 cup sugar, to taste
4 tablespoons margarine (1/2 stick) or 4 tablespoons butter, melted (1/2 stick)
1 cup raisins
2 teaspoons cinnamon
1 cup pie filling (flavor of your choice)

Steps:

  • Preheat oven to 350°F.
  • Soak broken matzo in water until soft, approximately 2-3 minutes, and drain.
  • Beat eggs with salt.
  • Add sugar to eggs.
  • Add margarine/butter, raisins, cinnamon and pie filling to eggs, mixing well.
  • Add matzo to mixture and combine well.
  • Pour mixture into baking dish.
  • Bake for 1 hour.

7 chocolate bars (3 oz. each - dairy or pareve)
7 matzo squares
1 small bottle sweet kosher wine or grape juice

Steps:

  • In a double boiler or the microwave, melt the chocolate bars till smooth. Pour sweet wine or grape juice into a shallow baking dish or pan. Soak the matzos for 45-60 seconds until they've absorbed some of the wine or juice. Don't let them soak too long, or they'll get mushy and fall apart! Remove matzos from liquid. Place one moistened matzo in the center of a small tray or plate. Using a spatula, spread the matzo generously with melted chocolate, covering the whole surface of the matzo.Place one moistened matzo in the center of a small tray or plate. The thicker the cake, the longer it will take to set in the refrigerator.
