Easy Marinated Vegetables image

Serve these marinated vegetables as a salad or as an appetizer. Optional add ins include: pitted Greek olives, cubes of feta cheese, and thin slices of Maui or Walla Walla onion.

Number Of Ingredients 6

1 ½ cups broccoli florets
1 ½ cups cauliflower florets
1 green bell pepper, cut into 1 inch pieces
1 cucumber - peeled, seeded and chopped
1 carrot, coarsely chopped
¼ cup Italian-style salad dressing

Steps:

  • Bring a large pot of salted water to boil. Place the broccoli and cauliflower florets into the boiling water for one minute. Drain and rinse florets.
  • Combine broccoli, cauliflower, bell pepper, cucumber, carrot and Italian salad dressing in a medium size mixing bowl. Cover the bowl and refrigerate the vegetables for one hour.

4 cups fresh broccoli florets
2 cups fresh cauliflowerets
1-1/2 cups sliced fresh mushrooms
1 cup cherry tomatoes, halved
1 cup chopped celery
3/4 cup chopped green pepper
1 cup vegetable oil
3/4 cup sugar
1/3 cup white vinegar
3 tablespoons grated onion
1 tablespoon poppy seeds
1-1/2 teaspoons ground mustard
3/4 teaspoon salt

Steps:

  • In a large bowl, combine the vegetables. In a jar with a tight-fitting lid, combine the remaining ingredients; shake well. Pour over vegetables; toss to coat. Cover and refrigerate for at least 3 hours. Serve with a slotted spoon.

This beautiful salad has gone to many dinners with family and friends. It's one of my favorites because it can be prepared the night before, allowing the fabulous flavors to blend.

DRESSING:
1 cup vinegar
1 cup sugar
1/2 cup water
2 tablespoons vegetable oil
2 teaspoons salt
1 teaspoon celery seed
1 teaspoon dill seed
SALAD:
1 medium head cauliflower
1 pound carrots, sliced
2 medium cucumbers, sliced
1 medium green pepper, julienned
1 small onion, sliced into rings
1 jar (4-1/2 ounces) whole mushrooms, drained
1 can (2-1/4 ounces) sliced ripe olives, drained

Steps:

  • In a saucepan, bring dressing ingredients to a boil, stirring occasionally. Remove from the heat; cool to room temperature. Break cauliflower into florets and blanch. Place in a large bowl; add remaining salad ingredients. Add dressing; toss to coat. Cover and refrigerate for several hours or overnight, stirring occasionally. Serve with a slotted spoon.
