EASY MARINARA SAUCE

Easy Marinara Sauce image

We built this recipe from a lot of trial and error and a little experimentation with the wine selection. It has a sweet flavor with just a little zing to keep things interesting. Great for all types of italian dishes. We even used it for Italian sausage bombers.

EASY MARINARA DIPPING SAUCE FOR THE LAZY

Easy Marinara Dipping Sauce for the Lazy image

For those of us who don't like sauces laden with tomato chunks (much as I like tomato-based foods, tomato chunks just gross me out!) and also happen to be way too lazy to peel and cut tomatoes (that's what cans are for.) For some variation ideas try replacing one of the cans of tomato sauce with tomato paste if you like it thicker. Like it really spicy? Replace one plain can with one can of pre-seasoned tomato sauce. Yummy dipping sauce for mozzarella sticks, serve 1/4 cup in a ramekin. Recommended dishes to have with this sauce: Recipe #394477, Recipe #30977, and Recipe #91274 if making pretzel cheese logs!

Yield 2 cups, 8 serving(s)

Number Of Ingredients 9

2 (8 ounce) cans tomato sauce
1 1/2 teaspoons olive oil
3/4 teaspoon basil
3/4 teaspoon oregano
1 teaspoon onion powder
1 garlic clove, minced (1/2 tsp liquid garlic)
1 tablespoon sugar
1/4 teaspoon salt
1 dash white pepper

Steps:

  • Blend all the ingredients together in a food processor or blender.
  • To gently heat, pour 1/4 cup (or the desired amount) into a microwave-safe ramekin or container, and put a paper plate over it so tomato splats won't get all over the microwave. Nuke for 30 seconds on 50% power. You may have to adjust up or downward depending on microwave strength.

MUSHROOM MARINARA SAUCE--EASY

Mushroom Marinara Sauce--Easy image

This is a quicker version of my basic tomato sauce. I cut several corners in this recipe, without sacrificing too much. Instead of pureeing the tomatoes for a smooth sauce, I leave it chunky. I do not use a knife or cutting board for the preparation (although you could, of course). Rather, I use an egg slicer to slice mushrooms and a garlic press to mince garlic. The sauce is started when the pot of water for the pasta is put on the stove. When the pasta is cooked, the sauce is ready.

Time 25m

Yield 2 serving(s)

Number Of Ingredients 12

1/2 tablespoon extra virgin olive oil
10 medium white button mushrooms, wiped clean
salt
pepper
3 garlic cloves
red pepper flakes
1 (28 ounce) can whole canned tomatoes
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1 teaspoon sugar
1 dried bay leaf
1 tablespoon chopped fresh parsley

Steps:

  • Start by heating the oil over medium-low heat in a large pan.
  • Slice mushrooms with egg slicer.
  • When all the mushrooms are sliced, raise the heat on the pan to medium and add the mushrooms.
  • Cook, stirring occasionally, for a few minutes until the mushrooms are tender and their juices released.
  • Season the mushrooms with salt and pepper and reduce the heat to medium-low.
  • Using the garlic press, place a clove of unpeeled garlic into the press and add right to the pan (using a fork to get the garlic off the press as necessary). Discard the peel, and continue with the remaining garlic.
  • Stir in the pressed garlic and add a small pinch of red pepper flakes.
  • Open the can of tomatoes and pour the liquid right into the pan.
  • With a kitchen scissor, chop the tomatoes coarsely, right in the can, then, add them to the sauce.
  • Add more seasoning, the bay leaf and dried basil, thyme and sugar, then simmer uncovered for about 15 minutes (while the pasta cooks).
  • When it is almost time to serve, add a little of the pasta cooking liquid to the sauce.
  • Using the scissors, snip the parsley leaves into the sauce.
  • I taste for seasoning, discard bay leaf and serve over cooked pasta.

BIG POT MARINARA SAUCE - EASY PEASY

Big Pot Marinara Sauce - Easy Peasy image

This is so good I refuse to buy marinara or spaghetti sauce from the jar now. I make this and freeze the leftovers and we get about 5-6 meals from each batch. My husband likes to pour this over baked chicken breasts and tops with provolone cheese. Its very versatile.

Provided by val rollheiser

Categories     Pasta

Time 2h

Number Of Ingredients 12

9 lb tomatoes peeled, seeded, diced
1 c onion, diced
1 c carrot, finely chopped
1 1/4 c celery, finely chopped
1/4 c olive oil
3 tsp garlic, minced
1 tsp sugar
2 medium bay leaf
1 tsp basil, dried
1 tsp oregano, dried
1 tsp marjoram, dried
as needed pinch salt and pepper

Steps:

  • 1. I make this during canning season so at this point I have already peeled seeded and chopped my tomatoes and they are cooking on med-low with the 2 bay leaves in large pot for about an hour to thicken them up. (I do leave some seeds in my marinara)In the winter I use 4 quarts of home canned tomatoes.
  • 2. Chop up the onions, carrots and celery.
  • 3. In a large skillet combine and cook onion, celery, and carrots in the olive oil until tender - about 20 minutes.
  • 4. Add garlic and stir. Remove from heat.
  • 5. Add celery, carrots and onion mixture to the pot of tomatoes. Cook for 10 minutes. Remove bay leaves.
  • 6. I use a Immersion blender to puree the marinara right in the pot. We like ours with little veggies pieces but you could blend until smooth.
  • 7. Add your oregano marjoram and basil to the pot and cook to your desired consistency.
  • 8. Serve over hot pasta. This makes a big pot. I freeze the leftovers after the sauce has cooled. This recipe usually gets us 5 meals and we have a 4 people family.

EASY LIGHT AND LOVELY MARINARA SAUCE

Easy Light and Lovely Marinara Sauce image

This is my favorite Marinara to use on any pasta. Fast and flavorful and refined. Hope you like it too. Try it on top of my ravioli recipe, Recipe #rz.278638, or any of the fresh pastas! The yield really depends on how much water you add and how long you cook it down for. You can cut back on the oil or increase it. This sauce is very forgiving so make it your own and add what you like. If you add oregano you should cook it a little longer so the herb has a chance to flavor the sauce. Me? I like it very, very simple,

Categories     Vegetable

Time 25m

Yield 5 cups, 6 serving(s)

Number Of Ingredients 7

1/3 cup olive oil
4 -6 garlic cloves, smashed
28 ounces tomatoes in puree (Cento Imported plum tomatoes or any Poma D'oro in puree, these cans used to be 35 ounces!)
8 ounces tomato sauce
1 cup water (up to, depending on how long you cook it and how thick you like it)
salt and pepper
basil leaves (to garnish)

Steps:

  • In a skillet, warm the olive oil on medium low and toss in the garlic. Saute the garlic until it is very fragrant and golden in color. Remove the garlic and discard or save for another use.
  • Pour the liquid from the tomato can into the skillet but be careful of splattering. Stick your hand into the can and squeeze the tomatoes, discard any stem ends that are hard. Pour the crushed tomatoes into the skillet and heat through while you cook your pasta. Cook it down until it is the desired consistency. I don't like chunky thick pasta sauces so I cook mine down and even use my immersible blender to smooth it out. Cook it until it reaches a good consistency for what you are using it for.
  • My mother always said that the sauce is ready when it doesn't foam any longer. It should only take 20 minutes to make, if that.
  • Taste for seasoning, sauce your pasta and top with basil leaves.
