Creamy, delicious lemon filling bejeweled with fresh raspberries, this no-bake pie is the perfect springtime dessert! Just as easy as it is delicious, this luscious lemon pie is great for Easter dinner, cookouts, or any get-together!

1 prepackaged graham cracker crust ( in tin)
8 oz cream cheese at room temperature
1/2 c. powdered sugar
3.4 oz instant lemon pudding mix
1 c. cold milk
zest of 1 lemon
16 oz frozen whipped topping, thawed
12 oz fresh raspberries, rinsed and divided
mint leaves for garnish (if desired)

Steps:

  • With a had or stand mixer, beat together the cream cheese and powdered sugar until creamy and smooth. In a seperate bowl, whisk together the milk and pudding mix until thick (about 1 minute.) Pour the pudding mixture into the cream cheese mixture and beat together until creamy. Stop mixer to scrape down the sides of the bowl. Add in 1 container of whipped topping, and mix together until just combined. Gently fold in the lemon zest and 1 container of raspberries. Add filling to the pie crust, and refrigerate for at least two hours to set.
  • Just before serving, top with the second container of whipped topping, and additional raspberries. Garnish with mint leaves, if desired.

1 cup crushed fresh raspberries
¾ cup water
1 cup white sugar
3 tablespoons cornstarch
⅛ teaspoon salt
1 teaspoon lemon juice
4 cups fresh raspberries, or as needed
1 (9 inch) baked pie shell

Steps:

  • Bring crushed raspberries and water to a simmer in a saucepan. Simmer for 2 to 3 minutes. Strain and return 1 cup liquid to the pan.
  • Whisk sugar, cornstarch, and salt together in a small bowl. Add to the 1 cup liquid, whisking to combine. Bring to a boil over medium heat and cook, whisking constantly, until thick and clear, about 1 minute. Remove from heat and cool slightly, 10 to 15 minutes. Stir in lemon juice.
  • Heap fresh raspberries into pie shell. Pour glaze over top. Chill until set, 1 to 2 hours.

This nearly no bake Creamy Lemon Raspberry Pie is a lemony, sweet treat that is perfect for any spring or summer celebration.

1 ½ cups graham cracker crumbs ((10 to 12 whole crackers))
¼ cup packed brown sugar
6 tablespoons butter (melted)
1 cup fresh raspberries (plus additional for garnish)
2 tablespoons granulated sugar
8 ounces cream cheese (softened)
1 cup Cool Whip (frozen whipped topping, completely thawed, plus additional for garnish)
14 ounces sweetened condensed milk
2 lemons (juiced (I recommend Meyer lemons))
1 teaspoon lemon zest
½ teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350 degrees F.
  • Combine crust ingredients in a medium bowl. Pat the mixture down into an ungreased 9-inch pie plate.
  • Bake for 7 to 8 minutes, or until lightly golden brown and deliciously fragrant. Remove from oven and allow to cool completely before filling.
  • Place raspberries in a small mixing bowl and add sugar. Use a fork to lightly mash them. Set aside.
  • In a large mixing bowl, beat cream cheese until fluffy. Add Cool Whip, sweetened condensed milk, lemon juice, lemon zest, and vanilla. Mix until smooth. Add smashed raspberries and gently fold in with a spoon.
  • Pour mixture into crust. Refrigerate at least 3 hours or overnight before serving.

Steps:

  • Add boiling water to gelatin mix in large bowl; stir 2 min. until completely dissolved. Add enough ice to cold water to measure 1 cup. Add to gelatin; stir until slightly thickened.
