I'm not so great at baking whole hams, but I love when my Mom sends me leftover ham that she has cooked. Hubby loves ham salad sandwiches, and whenever we get ham, his first question is always "Are you going to make that ham salad?" It's just been a matter of experimentation to come up with it. It's quick and easy, with common ingredients. Hope you enjoy it as we do. I'm not really sure how many sandwiches this makes--enough for a couple of days for our small family. Let me know if the servings are off. (And I guess it depends on how thick you like your sandwiches.) Can be served on any type of bread, but I have found rye really complements ham salad.

Number Of Ingredients 6

3/4 lb cooked ham, finely chopped (I prefer to chop mine up in the food processor, but just till it's fine, not mushy.)
1/8 teaspoon black pepper
1/2 medium sweet onion, finely minced (I like to throw it in the food processor with the ham)
1/2 cup light mayonnaise
2 tablespoons sweet relish
1 teaspoon mustard

Steps:

  • Gently combine all ingredients till well mixed.
  • Refrigerate several hours until well chilled to let flavors blend.
  • Serve on your favorite bread.

2 cups elbow noodles
1/2 cup cubed chedder cheese
1/2 cup cubed ham
1/2 cup mayonnaise
1 tablespoon mustard

Steps:

  • 1. Cook, drain and rinse macaroni and put in fridge while you dice up cheese and ham. Mix together cold macaroni, cheese, and ham in a bowl. In a separate bowl mix mayo and mustard. (If it is too tangy you can add a teaspoon of sugar. Mix it all together and chill or serve immediately. I sometimes substitute the cooked shrimp instead of ham and it's delish. Add a dash of Old Bay seasoning if you use shrimp.

2 Tbsp. KRAFT Mayo with Olive Oil Reduced Fat Mayonnaise
1 g CLAUSSEN Sweet Pickle Relish
2 g eggs
4 g whole wheat bread, toasted
12 slices OSCAR MAYER Deli Fresh Smoked Ham
2 slices tomato

Steps:

  • Mix mayo and relish.
  • Beat eggs in small microwavable bowl; cover with waxed paper. Microwave on HIGH 45 sec.; stir. Microwave, covered, an additional 30 sec.; stir. Let stand, covered, 1 min. or until eggs are set and no visible liquid remains. Stir in mayo mixture.
  • Top 2 toast slices with ham, egg mixture and tomatoes. Cover with remaining toast slices.

EASY PHYLLO CUPS WITH SALAD AND HAM (SIDE OR SNACK)



Easy Phyllo Cups With Salad and Ham (Side or Snack) image

These are so easy, and can be made ahead. To make more, simply multiply the ingredients. Store the phyllo cups airtight to stay crisp. (Otherwise, refresh them in a warm oven). This is a great snack, and a good side or starter with grilled meats! Top with mozzarella or bacon instead of ham. Our phyllo sheets measure about 14 x 16 inches, which are enough for 9 muffin hollows. Four sheets will give you a nice firm cup shape. Dressing should be added, if at all, at the last moment to prevent sogginess.

4 phyllo pastry sheets
1 ounce butter, melted
1 tablespoon oil
12 tomatoes, Rosa, small, cut up (the small plum tomatoes)
6 olives, pitted, finely chopped (green or black)
1 teaspoon garlic, finely chopped
9 leaves basil, large, finely sliced
1/4 cup spring onion, finely chopped
2 tablespoons parsley, finely chopped
1 pinch flaked sea salt
coarse black pepper
1 -2 tablespoon dried breadcrumbs (optional)
9 slices ham, Black Forest ham (or Parma ham, use thin air-dried ham or fried bacon or mozzarella cheese)
3 tablespoons vinaigrette dressing (homemade or shop-bought)

Steps:

  • First, prepare and mix together the tomatoes, olives, garlic, basil, spring onions, parsley, and add salt and pepper sparingly. Mix well and cover the bowl.
  • Preheat oven to 350 deg F/180 deg Celsius.
  • Open out the 4 phyllo sheets (one on top of the other, as it comes).
  • Using a round utensil considerably larger than the muffin hollows, cut out circles right through the 4 thicknesses of the pastry. Brush each circle (4 per hollow) with the melted butter and oil, and press into 9 muffin hollows.
  • Sprinkle some dried breadcrumbs over the pastry cups, if you like.
  • Bake the phyllo cups for 5 - 7 minutes, or until golden brown. Cool before carefully removing.
  • (All this can be done ahead, but keep the salad chilled and the cups airtight).
  • To serve, fill the phyllo hollows with the salad. Top each with a rolled slice of ham (or bacon, or mozzarella).
  • Drizzle with a little vinaigrette at the last moment before serving (to prevent the phyllo pastry from getting soggy).

1 1/4 lb smoked ham
2/3 c finely chopped onion
1 1/4 c chopped bread and butter pickles
2 Tbsp dijon mustard
2/3 c chopped celery
3/4 c mayo
1 Tbsp pickle juice
1 Tbsp dried dill
6 delectable sweet buns (optional)
2 Tbsp butter melted (optional)

Steps:

  • 1. Cut ham into small sections and pulse in food processor 6-7 times or until desired consistency. Place in large bowl. Add onion, pickles, mustard, celery, mayo, pickle juice and dill. Stir until combined.
  • 2. Brush buns with butter. Toast under broiler until lightly browned. Split ham salad between rolls.
