  • Peel and mash avocados in a medium serving bowl. Stir in onion, garlic, tomato, lime juice, salt and pepper. Season with remaining lime juice and salt and pepper to taste. Chill for half an hour to blend flavors.

A tasty dip that is a success at any party. I got this recipe from a friend from Mexico. Easy to make!

3 ripe avocados (ripe as in really dark in color and slightly soft when squeezed)
1 small onion, finely diced
1 medium tomatoes, diced
1 lime (juice of )
salt and pepper (to taste )
Tabasco sauce (optional)

Steps:

  • Take avocados and cut into and around the circumference of the avocado's pit.
  • With both hands twist the two halves in opposite directions and pull apart.
  • Remove the pit with a knife or a spoon.
  • Carve out the flesh of the avocado with a tablespoon.
  • Place avocados into a medium bowl and mash and stir until moderately creamy. I use a fork or a pastry blender.
  • Some people like the avocados more chunky than others-- either way it tastes great.
  • Add diced onion and tomatoes to the avocados.
  • Add salt, pepper, tabasco sauce and lime juice and taste to see if seasoned enough to your liking.
  • In a separate small bowl put in 2 tablespoons of the dip.
  • Add 1 tbsp of sour cream and adjust your seasonings again.
  • Taste it and decide if you prefer your guacamole with or without sour cream.
  • If you like with sour cream add 4 tablespoons or more to the avocado mixture and adjust your seasonings again.
  • If not, do nothing and leave it like it is.
  • Serve chilled with chips or add a little to your taco salad, tacos or fajitas.

⅓ cup salsa
½ cup shredded Cheddar cheese
3 tablespoons guacamole

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a baking pan.
  • Season chicken breasts with salt and pepper and lay out in the baking pan. Spread salsa across chicken breasts and sprinkle with Cheddar cheese.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, 25 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

  • Halve and pit 2 ripe avocados and scoop the flesh into a mixing bowl.
  • Mash the avocados with a fork until the mixture reaches a coarse, chunky consistency. Stir in the remaining ingredients: 1 onion, minced, 1 garlic clove, minced and mashed to a paste with ½ tsp. salt, an additional ½ tsp. salt, 4 tsp. lime juice, ½ tsp. ground cumin, 1 jalapeño, seeded and minced, and 3 tablespoons chopped fresh cilantro, if using. ½ cup salted butter
1 tablespoon olive oil
½ lb ground pork meat
1 lb ground beef

2 medium size avocados, peeled, de-seeded, and mashed
½ lime, juiced
⅓ tablespoon salt
¼ tablespoon pepper
2 cloves garlic, chopped
1 teaspoon onion powder
1 teaspoon mustard powder
½ tablespoon cilantro powder
¼ cup red onion, chopped
½ cup onion, chopped, yellow, regular
½ cup fresh cilantro
1 clove garlic, chopped
½ pickled jalapeno, chopped into tiny pieces (Optional)
6 cherry tomatoes, (each chopped in 1/2 inch pieces)
½ lime, juiced
½ teaspoon salt
2 teaspoons ground pepper
½ cup shredded cheddar cheese
1 cup romaine lettuce, chopped
⅓ cup sour cream, for serving

Steps:

  • For the guacamole: Mash together ingredients in a bowl. Cover with plastic wrap and let chill in the fridge.
  • For the pico de gallo: In a medium-sized bowl, combine the onions, fresh cilantro, chopped garlic, *pickled jalapeño, cherry tomatoes, lime juice, salt and pepper. Cover with plastic wrap and let chill in the fridge.
  • For the meat: Into a large pan, turn on the low heat and combine the oil with the butter. Add the ground beef and pork and mix them until combined. Turn on the medium heat, then add the taco seasoning.
  • Once the taco meat mixture is cooked, turn off the heat and preheat your oven to 180°C (356°F) . On an inverted (upside-down) cupcake tin, place the small tortillas in crevices to create 'taco shells.' Place in the oven and let dry for 10-15 minutes until crisp.
  • To serve: Fill each taco shell with 2 tbsp meat mixture and garnish/assemble with condiments and toppings as desired.

I have a recipe for salsa verde and guacamole posted from a friend who grew up in Mexico City, but I can't always find good tomatillos. This recipe is just as good, using just a few, fresh ingredients. My husband's favorite snack. Prep time does not include chill time.

GUACAMOLE
3 extra large avocados
2 tsp garlic (i like garlic paste found in the produce section)
1/2 cup red onion, finely minced
1/2-3/4 tsp salt, or to taste
1 tb olive oil
1 tsp finely minced jalapeno, totally optional, or to taste ( i usually leave this out)
juice from 1/2 to 1 lime, or to taste
GARNISHES
dollop of sour cream
a few chopped grape tomatoes
a tablespoon or two of chopped cilantro, optional

Steps:

  • 1. Remove avocados from shells, saving pits. Mash two and chop the third. (For creamy guac, mash all three.) Place in medium glass bowl.
  • 2. Add onion, salt, garlic, lime juice, olive oil and jalapeno, if using. Mix thoroughly. Push whole pits gently into guac. (This prevents browning.) Press plastic wrap onto top of guac, pressing lightly. Then, cover the entire bowl and refrigerate for 2 hours to allow flavors to blend.
  • 3. When ready to serve, remove pits, stir and place in serving bowl. Top with a dollop of sour cream, then chopped grape tomatoes, then sprinkle with chopped cilantro, if using. Serve with your favorite tortilla chips.

EASY QUESADILLAS WITH FRESH GUACAMOLE



Easy Quesadillas with Fresh Guacamole image

I made this up last night for dinner (May 17, 2012) and it was a big hit. They cook up quickly and are excellent served with the guacamole, salsa, and sour cream. It gets even easier if you can find pre-made pico de gallo in your produce section. Also, leftover steak, pork, or ground beef can be used instead of chicken for variety. OPTIONS: 1- Make this vegetarian by leaving out the meat and doubling the beans. 2- I used whole grain tortillas in this. They were excellent.

QUESADILLAS
1/2 - the meat from a rotisserie chicken
1/2 teaspoon(s) garlic salt
1 or 2 large poblanos or red bell peppers, cut in strips
2 teaspoon(s) olive oil
1 cup(s) pico de gallo
3/4 cup(s) black beans (rinsed and drained) - optional
2 cup(s) shredded mexican cheese blend
4 large (10-inch) flour tortillas
GUACAMOLE
2 small ripe avocados
1/2 teaspoon(s) sea salt (or to taste)
- juice of 1/2 a lime
1/4 cup(s) prepared pico de gallo

Steps:

  • Chop meat from chicken in small pieces, and season with garlic salt. Place in a microwave container and heat up just before using, about 1-1/2 minutes.
  • In a 10-inch iron skillet, heat olive oil over medium high heat. Cut peppers into strips, and cook in the oil until they are a bit blackened, turning and stirring as necessary. Remove and drain on paper towels.
  • Reduce heat in skillet to medium and wipe excess oil out with a paper towel. On a prep surface, lay out one tortilla. Place 1/4 of the peppers on half the tortilla. Add 1/4 of the chicken (heat it up first), 1/4 of the pico de gallo, 1/4 of the black beans (if using), and 1/2 cup of the cheese. Fold tortilla in half. Repeat with remaining 3 tortillas.
  • Place folded tortilla in skillet and cook 3-4 minutes until very browned, then carefully turn over and cook the other side. The timing will depend on how hot your skillet is. You want the cheese to melt, but you don't want to burn the tortillas.
  • Remove tortilla to serving plate and cut into fourths. Serve with fresh Guacamole. Tip: if your tortillas are 10 inches and so is your skillet, you can actually cook two quesadillas at once in the skillet.
  • To make Guacamole: Peel and mash the avocados, adding salt and lime juice. Stir in 1/4 cup pico de gallo until blended.

EASY GUACAMOLE DIP

2 ripe avocados
1/2 red onion, minced (about 1/2 cup)
1-2 serrano chiles, stems and seeds removed, minced
2 tablespoons cilantro leaves, finely chopped
1 tablespoon of fresh lime or lemon juice
1/2 teaspoon coarse salt
A dash of freshly grated black pepper
1/2 ripe tomato, seeds and pulp removed, chopped

Steps:

  • 1 Cut avocados in half. Remove seed. Scoop out avacado from the peel, put in a mixing bowl. (See How to Cut and Peel an Avocado.) 2 Using a fork, mash the avocado. Add the chopped onion, cilantro, lime or lemon, salt and pepper and mash some more. Chili peppers vary individually in their hotness. So, start with a half of one chili pepper and add to the guacamole to your desired degree of hotness. Be careful handling the peppers; wash your hands thoroughly after handling and do not touch your eyes or the area near your eyes with your hands for several hours. Keep the tomatoes separate until ready to serve. Remember that much of this is done to taste because of the variability in the fresh ingredients. Start with this recipe and adjust to your taste. 3 Cover with plastic wrap directly on the surface of the guacamole to prevent oxidation from the air reaching it. Refrigerate until ready. 4 Just before serving, add the chopped tomato to the guacamole and mix. Variations For a very quick guacamole just take a 1/4 cup of salsa and mix it in with your mashed avocados. You don't need to have tomatoes in your guacamole. To extend a limited supply of avocados, add either sour cream or cottage cheese to your guacamole dip. Purists may be horrified, but so what? It tastes great. In fact, guacamole with a little cottage cheese added to it is my favorite.
