An easy to make fruit loaf using sultanas or a mixture of dried fruits. Serve buttered with tea or coffee for a change from cookies.

Yield 1 loaf

Number Of Ingredients 8

2 cups water
2 cups sugar
2 cups sultanas or 2 cups mixed dried fruit
2 ounces butter
3 cups flour
1 teaspoon mixed spice
1 teaspoon cinnamon
1 teaspoon baking soda

Steps:

  • Heat gently together in a pot on stove top the water, sugar, dried fruit and butter until butter melts and sugar dissolves.
  • Allow to cool for a few minutes then stir in flour and spices and baking soda.
  • Pour into a large loaf pan which has been greased and floured or bottom lined with baking paper and bake at 350'F for 45 minutes or until a cake tester comes out clean.
  • Remove from oven and leave to cool in tin for 10 minutes then tip out onto a wire rack to finish cooling.
  • Serve cut in slices and buttered.

This is a super fast recipe that is simple but yummy in every way..an added bonus kids love it too!!!

Steps:

  • In a bowl add together your bran, milk, cinnamon, vanilla extract, strawberrys and sultanas. Give a light mix. Then leave overnight or until the bran has lost original form
  • Once the bran has absorbed the milk, and has gone like a mushy texture, you can the add your self raising flour and sugar. Mix altogether until all combined with other ingredients
  • Put the mixture into buttered, medium sized loaf tin or something similar to this
  • Place into a pre heated oven ( 160 degrees c) for 25-30 minutes. Keep testing the minture though!!! You will know it is cooked if you insert a knike blade and when pulled out it is clean.
  • Allow to cool then slice and enjoy with butter, or its even yummy on its own
