Had this at a potluck picnic and it was wonderful. I sought out the woman who made it and got the recipe. The secret is to drain it before serving so it isn't swimming in dressing. Serve with tortilla chips. I use cider vinegar but feel free to use white, red, raspberry or any other flavor of your choice. Can sizes are given for the current commonly available sizes in the US. Adjust ingredients for your taste. Times do not include marinate or draining time.

1/2 cup oil
1/2 cup sugar
1/2 cup vinegar (flavor of your choice)
1 (16 ounce) can pinto beans, rinsed and drained
1 (15 ounce) can black-eyed peas, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 (7 ounce) can white shoepeg corn, rinsed and drained
1 green bell pepper, diced
1 red bell pepper, diced
1 orange bell pepper, diced
1 onion, diced

Steps:

  • In small saucepan, combine oil, sugar and vinegar.
  • Heat and boil 1 minute and then cool completely.
  • In large bowl, combine beans, peas, corn, peppers and onions.
  • Pour vinegar mixture over bean/pepper mixture and mix to thoroughly coat.
  • Cover and marinate overnight.
  • Drain for 2-3 hours before serving.

I got this recipe from a cookbook that came free in the mail (from a cigarette company of all things)!! I modified it slighty, and I've gotten nothing but compliments on it. I do tend to go heavier on the garlic & sometimes add a bit more vinegar than what's called for. It sets real nice if chilled overnight, but if time's an issue, chilling isn't totally necessary. I like to serve it in a bright colored bowl.

2 (15 ounce) cans black beans (drained & rinsed well)
2 -4 garlic cloves, cut
1 medium onion, cut up
1/2 teaspoon salt
1 teaspoon pepper
1/3 cup parsley
1/3 cup olive oil
3 -5 tablespoons red wine vinegar
1 (7 ounce) can whole kernel corn (rinsed well)

Steps:

  • Place all ingredients except corn in a food processor. Process in an on-off manner for about 1 minute.
  • Transfer to large bowl & stir in corn manually.
  • Refrigerate overnight to allow flavors to blend. Serve with chips, crackers or toast.

2 (15 ounce) cans black beans, drained and rinsed
2 (10 1/2 ounce) cans of mild Rotel tomatoes & chilies
1 (10 1/2 ounce) can regular Rotel tomatoes & chilies
1 bunch cilantro, chopped
8 green onions, chopped
2 lemons, juice of
2 limes, juice of

Steps:

  • Add all ingredients together in a bowl.
  • Serve with tortilla chips.

5-6 roma tomatoes (diced)
1 can black beans (drained and rinsed (15 ounce can))
1 can corn (drained (14 ounce can))
1/2 red onion (diced)
1 avocado (diced)
1 green bell pepper (diced)
2 Tablespoons diced jalapenos (more or less, depending on how hot you prefer it)
1/2 teaspoon garlic powder
3/4 cup Italian dressing (I used Wishbone Robusto Italian)
1/2 cup fresh cilantro (chopped)

Steps:

  • Mix together tomatoes, black beans, corn, onion, avocado, green pepper, and jalapenos in a large bowl.
  • Sprinkle garlic powder on top, then stir in dressing and cilantro.
  • Serve with tortilla chips (I suggest using the "scoop" chips- you are going to want to get a lot of this with every bite!).

1 can(s) sweet corn, drained
1 can(s) chopped tomatoes, flavored is ok, don't drain
1 can(s) black beans, rinsed
1/2 red onion, medium sized
1 green pepper
red wine vinegar
olive oil
freshly ground sea salt & pepper to taste
1 bag(s) tostito's scoops or other corn chips if using as an appetizer or snack

Steps:

  • 1. I usually make this in the same bowl I use to serve it. Open can of tomatoes--add to bottom of mixing bowl. Open and drain can of corn; add to bowl. Open, drain and thoroughly rinse can of black beans, add to bowl.
  • 2. Chop green pepper into pieces the same size as corn and beans. Add to bowl. Chop red onion into pieces the same size as corn and beans. Add to bowl.
  • 3. Add red wine vinegar, olive oil, salt and pepper to taste.
  • 4. For variety, add hot sauce.
