This is a tasty, zesty side dish that can easily become a main meal. Serve soupy with warm flour tortillas or crusty bread, crumble corn bread on top, or scoop up with tortilla chips. Like mac and cheese, it's a great comfort food. It is easy to make because it doesn't require constant attention and is good for everything from a family meal to a football party. It can easily be doubled. Check flavor before serving and alter seasonings to taste if necessary. Top with more onion and cilantro as desired. If there are any leftovers, they hold up well and taste great the next day.

2 (15.5 ounce) cans pinto beans, undrained
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®), drained
1 cup cubed cooked ham
¼ cup finely chopped fresh cilantro
¼ cup finely chopped red onion
2 cloves garlic, minced
ground black pepper to taste
1 dash hot sauce, or to taste

Steps:

  • Combine pinto beans, tomatoes with green chile peppers, ham, cilantro, red onion, garlic, black pepper, and hot sauce in a saucepan; bring to a boil. Reduce heat and simmer for about 1 hour.

My family eats this as a main dish, usually with cornbread, but it's a wonderful side dish for picnics, potlucks, and camping. We like it sweet, so we add another 1/4 cup of brown sugar, but you could also spice it up by adding jalapenos or another kind of chilies. It's even good cold! It freezes very well, too.

1/2 lb bacon
1/2 lb ground beef
1 onion
1/2 cup sugar
1/2 cup brown sugar
1/2 cup ketchup
2 tablespoons apple cider vinegar
1 (15 ounce) can kidney beans
1 (15 ounce) can pinto beans
1 (15 ounce) can lima beans
1 (15 ounce) can pork and beans

Steps:

  • Cook bacon until crispy. Drain and crumble. Put in large pot.
  • Brown ground beef and onions together. Drain. Add to pot. (Bacon can be cooked with the ground beef and onions if cut into chunks. I use kitchen shears to just cut through all the slices--into about 1-1/2" chunks.).
  • Add the rest of the ingredients to the pot. DO NOT drain the beans! Stir everything together.
  • Bring to a boil, then turn down heat and simmer for about an hour. If you're going to let it simmer, don't add the lima beans right away, as they tend to fall apart.
  • These are generally better the next day, but are might fine the same day!

6 slice smoked bacon coarsely chopped
1 lb lean ground beef
1 medium onion chopped
2 slice (1/4 inch thick) smoked ham diced
2 clove garlic minced
1 can (16 ounces) pinto beans
1 can (15 ounces) black beans
1 can (14.5 ounces) diced tomatoes with hatch green chilies (see notes)
1/4 c brown sugar
2 Tbsp prepared yellow mustard
1/2 c ketchup
1/4 c kansas city style barbecue sauce (see notes)

Steps:

  • 1. In large skillet over medium heat cook bacon until it starts to crisp on the edges. Add ground beef and onion; cook until beef is browned and bacon is crispy. Add ham and cook another 1-2 minutes to get it a little crispy. Add garlic and cook for 30 seconds. Remove from heat, drain any excess grease and add to crock pot.
  • 2. To crock pot add beans, diced tomatoes, brown sugar, yellow mustard, ketchup and barbecue sauce.
  • 3. Cook on low for 6-7 hours or on high for 4 hours.
