- In a large bowl, combine the first seven ingredients. Combine the corn, egg substitute, cheese, milk, onion, butter and jalapeno. Stir into dry ingredients just until moistened. , Pour into an 8-in. square baking dish coated with cooking spray. Bake at 425° for 12-14 minutes or until a toothpick inserted in the center comes out clean. Cut into squares; serve warm.

- Heat oven to 400 degrees. Grease an 8- or 9-inch loaf pan. Mash the banana in a bowl. Combine the dry ingredients with it. Stir in the milk, oil and egg whites, mixing until dry ingredients are moistened. Pour batter into prepared loaf pan. Bake at 400 degrees for 30 minutes, until top of bread is golden brown. Serve warm. If bread is not served immediately, store in refrigerator and microwave slightly before serving.
