This homeade corn bread sent in by Angela Oelschlaeger is dressed up with green onion, cheddar cheese and jalapeno pepper. It takes just minutes to bake. "Serve it warm with honey," suggests the Tonganoxie, Kansas cook.

1/2 cup cornmeal
1/2 cup all-purpose flour
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon garlic powder
1/2 cup cream-style corn
1/4 cup egg substitute
1/4 cup reduced-fat cheddar cheese
1/4 cup fat-free milk
2 tablespoons chopped green onion
1 tablespoon butter, melted
2 teaspoons chopped seeded jalapeno pepper

Steps:

  • In a large bowl, combine the first seven ingredients. Combine the corn, egg substitute, cheese, milk, onion, butter and jalapeno. Stir into dry ingredients just until moistened. , Pour into an 8-in. square baking dish coated with cooking spray. Bake at 425° for 12-14 minutes or until a toothpick inserted in the center comes out clean. Cut into squares; serve warm.

1 cup milk
1 cup butter, melted and cooled
1 cup white sugar
4 eggs
2 cups pancake mix, sifted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking dish.
  • Combine corn, milk, butter, sugar, and eggs in a blender; blend until smooth. Pour mixture into a bowl; stir in pancake mix until batter is well blended. Pour batter into the prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 45 minutes.

1 cup yellow cornmeal
1/2 cup all purpose flour
3 tablespoons sugar
2 teaspoons baking powder
3/4 teaspoon salt
3/4 cup canned creamed corn
1/4 cup (1/2 stick) unsalted butter, melted, cooled slightly
1 large egg, beaten to blend

Steps:

  • Position rack in center of oven; preheat to 400°F. Butter 8-inch square baking pan. Whisk cornmeal, flour, sugar, baking powder and salt in large bowl to blend. Add creamed corn, butter and egg. Stir just until blended. Spoon batter into pan.
  • Bake until edges begin to pull away from pan sides and tester inserted into center comes out clean, about 20 minutes. Cool in pan on rack.

1 ripe banana, mashed
1 cup Quaker Yellow Corn Meal
¾ cup Wheat Germ
¼ cup white flour
¼ cup sugar
2 tsps. Baking powder
½ tsp. Salt
1 cup skimmed milk
¼ cup vegetable oil
2 egg whites or 1 whole egg, beaten (I use 2 egg whites)
Handful of frozen blueberries (to taste)
Half a dozen broken up pecans (to taste)

Steps:

  • Heat oven to 400 degrees. Grease an 8- or 9-inch loaf pan. Mash the banana in a bowl. Combine the dry ingredients with it. Stir in the milk, oil and egg whites, mixing until dry ingredients are moistened. Pour batter into prepared loaf pan. Bake at 400 degrees for 30 minutes, until top of bread is golden brown. Serve warm. If bread is not served immediately, store in refrigerator and microwave slightly before serving.
