Steps:

  • 1. Preheat oven to 375°F. Spray a 9 x 13-inch pan with non-stick cooking spray. 2. Rinse chicken and pat dry. Arrange in prepared pan. 3. Pour duck sauce liberally and evenly all over chicken. 4. 5 pounds chicken parts
1 cup water
6 potatoes, quartered
2 tablespoons olive oil
2 teaspoons crushed dried rosemary
2 teaspoons crushed dried thyme
salt and ground black pepper to taste

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Place the chicken pieces in a large baking dish; pour the water into the bottom of the dish. Arrange the potatoes around and over the chicken pieces. Drizzle the olive oil over the mixture; season with the rosemary, thyme, salt, and pepper.
  • Bake the chicken in the preheated oven until no longer pink at the bone and the juices run clear, about 1 hour. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C).

3 tablespoons all-purpose flour
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon ground black pepper
1 pound skinless, boneless chicken breast halves, cut into 1-inch cubes
3 tablespoons vegetable oil, divided
3 celery ribs, sliced
2 green bell peppers, diced
1 onion, chopped
½ cup ketchup
½ cup lemon juice
½ cup crushed pineapple with syrup
⅓ cup packed brown sugar

Steps:

  • Combine flour, garlic powder, salt, and black pepper in a shallow dish.
  • Roll and coat chicken cubes in flour mixture.
  • Heat 2 tablespoons vegetable oil in a skillet over medium-high heat.
  • Cook and stir chicken in hot oil until not longer pink in the center and juices run clear, 8 to 10 minutes; remove and set aside.

Recipe 1 -- 2-Ingredient Sweet and Sour Chicken:
1 whole chicken (approximately 3 to 3 1/2 pounds or 1.5 kilo), cut into 8 pieces
1-1/2 cups Cantonese-style duck sauce, such as Gold's
Recipe 2 -- Sweet and Sour Chicken with Peppers and Pineapple:
1 whole chicken (approximately 3 to 3 1/2 pounds or 1.5 kilo), cut into 8 pieces
Paprika
Garlic powder
Black pepper
2 to 3 tablespoons neutral-flavored oil, such as canola or sunflower
1 onion, peeled, trimmed, and thinly sliced
1 red bell pepper, cut into strips
1 green bell pepper, cut into strips
1 1/2 cups fresh or canned pineapple chunks (drained if canned)
1-1/2 cups Cantonese-style duck sauce, such as Gold's

Steps:

  • Preheat the oven to 400° F (205° C). Oil a 9x13x2-inch baking pan, or spray with non-stick cooking spray.
  • Arrange the chicken pieces in a single layer in the baking pan. Pour the duck sauce evenly over the chicken.
  • Cover the pan with foil, and bake in the preheated oven for 40 minutes. Uncover the pan, baste the chicken, and bake for another 30 to 45 minutes, or until the chicken is browned and cooked through, the juices run clear, and an instant-read thermometer inserted in thickest part of the meat registers at least 165° F (74° C). 200ml pineapple juice
100g light brown soft sugar
4 tbsp tomato ketchup
2 tbsp soy sauce
3 tbsp rice wine vinegar
1 tbsp cornflour

  • Put everything except the cornflour into a small saucepan and cook over a medium heat, while whisking, until just simmering.
  • Add the cornflour to a small bowl, add 1 tbsp water and mix together. Pour into the saucepan and whisk together until thickened and saucy.

Duck Breasts with Coriander, Endive, and Sweet-and-Sour Orange Sauce image

Endive
12 small heads of Belgian endive
1 tablespoon sugar
1/8 teaspoon salt
3/4 cup fresh orange juice
3/4 cup chicken stock or canned low-salt chicken broth
Sauce
1/2 cup red wine vinegar
1/4 cup sugar
1 tablespoon whole coriander seeds
1 1/4 cups fresh orange juice
1 cup chicken stock or canned low-salt chicken broth
1/2 teaspoon grated orange peel
Duck
4 duck breasts (each about 7 ounces), excess skin trimmed
1 tablespoon unsalted butter
1 tablespoon olive oil
2 tablespoons honey
4 tablespoons whole coriander seeds, coarsely crushed

Steps:

  • For endive:
  • Arrange endive in single layer in heavy large skillet; sprinkle with sugar and salt. Add juice and stock; bring to boil. Reduce heat to medium-low. Cover; simmer 15 minutes. Turn endive over. Cover; simmer until tender, about 10 minutes longer. Using tongs, transfer endive to plate, draining juices back into skillet. Boil juices in skillet until reduced almost to glaze, whisking occasionally, about 9 minutes. Season juices with salt and pepper. Return endive to skillet.
  • For sauce:
  • Stir vinegar, sugar, and coriander seeds in heavy small saucepan over low heat until sugar dissolves. Increase heat and boil (do not stir) until syrup is dark at edge of pan and bubbles break thickly on surface, swirling pan occasionally, about 5 minutes. Carefully add juice and stock and boil until sauce is reduced to 1 cup, stirring often, about 12 minutes. Strain sauce into another small saucepan. Add peel. Simmer until sauce is reduced to 1/2 cup, about 3 minutes. (Endive and sauce can be made 1 day ahead. Cover separately; chill.)
  • For duck:
  • Preheat oven to 425°F. Sprinkle duck with salt and pepper. Melt butter with oil in heavy large ovenproof skillet over high heat. Add duck, skin side down; cook until skin is very crisp, about 5 minutes. Using tongs, transfer duck, skin side down, to work surface. Brush meat side of each duck breast with 1/2 tablespoon honey. Press 1/2 tablespoon coriander seeds into honey on each breast. Discard fat from skillet. Return duck, skin side up, to skillet. Press 1/2 tablespoon coriander seeds onto skin of each breast.
  • Place duck in oven and roast until cooked to desired doneness, about 7 minutes for medium-rare (150°F to 160°F). Rewarm endive in covered skillet. Transfer duck to work surface. Brush most seeds off duck. Cut each breast crosswise into thin slices. Overlap slices of 1 breast on each plate. Spoon sauce over. Set 3 heads of endive on each plate.
