1 cup salsa
2 cups chopped cooked chicken breast meat
1 (15.5 ounce) can pinto beans, drained
6 (6 inch) flour tortillas
2 cups shredded Colby-Jack cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a small saucepan over medium heat, combine the cream cheese and salsa. Cook, stirring until melted and well blended. Stir in chicken and pinto beans. Fill tortillas with the mixture, roll and place into the prepared baking dish. Spread cheese over the top. Cover with aluminum foil.
  • Bake for 30 minutes, or until heated through. Garnish with your favorite toppings such as lettuce and tomatoes, or sour cream.

3 -4 chicken breasts
15 white corn tortillas (fajita size) or 15 flour tortillas (fajita size)
3 (10 ounce) cans green enchilada sauce (I use Old El Paso)
3 -4 cups grated monterey jack pepper cheese (or for less spice, use 1 cup pepper jack and 2 cups of cheddar, or a fiesta blend mexican cheese mix)

Steps:

  • Boil chicken until it falls apart, then shred.
  • Mix 1/2 can of sauce and a little cheese with chicken.
  • Put other 1/2 can on bottom of 11x9 baking dish.
  • Microwave tortillas until soft.
  • Roll chicken mixture into tortillas.
  • Put in pan semi-tightly.
  • Cover with remaining 2 cans sauce.
  • Cover top with remaining cheese and bake at 350 until cheese is fully melted (usually about 20-25 min).
  • Brown top slightly or to preference.

2 tablespoons olive oil
½ cup diced onion
½ teaspoon salt, or more to taste

½ teaspoon freshly ground black pepper

Steps:

  • Melt butter with olive oil in a saucepan over medium heat. Add onion and salt; cook and stir until onion starts to turn golden brown, 3 to 5 minutes. 1 lb ground beef or 1 lb boneless skinless chicken breast
1/4 cup chopped onion
1 teaspoon garlic powder (I prefer fresh minced)
1 tablespoon Worcestershire sauce
1 (8 ounce) can tomato sauce
1 teaspoon paprika
1 teaspoon oregano
2 teaspoons chili powder (more or less for your taste)
1/2 teaspoon cumin
1/2 teaspoon black pepper
3 cups shredded cheese (I like the jack or cheddar combos)
1 (10 ounce) can enchilada sauce (I prefer the green sauce)
olive (optional)
12 corn tortillas
oil

Steps:

  • If using chicken, boil chicken in water.
  • Then rinse and shred with fork.
  • Add onion and garlic.
  • If using ground beef, brown with onion and garlic, drain.
  • Add next 7 ingredients (worcestershire sauce through black pepper).
  • In another skillet, heat oil.
  • Add tortillas, one at a time, for 10 seconds on each side.
  • Drain on paper towel.
  • In 10x13 baking pan, pour just enough enchilada sauce in the bottom to coat the bottom of the pan.
  • Fill each tortilla with a spoonful of meat mixture.
  • Cheese, onions, and/or olives can be put inside each enchilada at this time, if desired.
  • Roll tortilla and place seam side down in pan.
  • Continue with remaining tortillas.
  • Pour remaining enchilada sauce over tortillas and top with cheese (additional olives may be added if desired).
  • At this time, pan may be refrigerated for several hours or overnight.
  • Bake in 350 degree oven for 20 minutes (30 minutes if refrigerated).
  • Top with sour cream.
  • Enjoy!

3 cloves garlic, minced
2 tablespoons chili powder
2 tablespoons cocoa powder
1 teaspoon ground cinnamon

One 6-ounce can tomato sauce
1 cup chicken broth
1 tablespoon peanut butter
2 teaspoons brown sugar
Kosher salt
Eight 6-inch flour tortillas
2 cups shredded cooked chicken, skin removed
1 cup shredded Monterey Jack
1/4 cup Mexican crema or sour cream
1/2 cup crumbled queso fresco
2 tablespoons toasted sesame seeds
Cilantro leaves, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • For the sauce: Heat the oil in a medium skillet over medium heat. Add the garlic and cook until fragrant, about 2 minutes. Add the chili powder, cocoa powder, cinnamon and cumin and saute until toasted and fragrant, about 2 more minutes. Add the tomato paste and cook 1 minute, then add the tomato sauce and chicken broth and whisk until smooth and combined. Stir in the peanut butter, brown sugar and a pinch of salt. Bring to a simmer and cook for 10 minutes to thicken. Remove from the heat.
  • For the enchiladas: Wrap the tortillas in a damp paper towel and microwave in 30-second internals, just until warmed through and pliable. Add the chicken to a medium bowl and pour about 1/2 cup of the mole sauce over top; toss to coat the chicken. Spread another 1/2 cup of the mole sauce in the bottom of an 11-by-7-inch baking dish.
  • Place one warmed tortilla flat on a clean work surface. Top with 1/4 cup of the chicken filling and 2 tablespoons of the shredded cheese. Roll up and place seam side down in the prepared baking dish. Repeat with the remaining tortillas, filling and shredded cheese. Pour the remaining mole over the top of the rolled tortillas. Cover the dish with foil and bake until the cheese is melted and the mole is bubbling, 25 to 30 minutes.
  • Remove from the oven and top with the crema, queso fresco and sesame seeds. Serve garnished with cilantro leaves.

7 ounces chicken broth
4 boneless skinless chicken breasts

2 cloves garlic
1 medium onion, chopped
16 ounces cheddar cheese
12 corn tortillas

Steps:

  • Cut chicken into small bite-sized pieces.
  • Brown in frying pan.
  • In a large sauce pan over medium heat combine the cream of mushroom soup and chicken broth.
  • Then add the garlic, onion, green chile.
  • Preheat oven to 350 degrees.
  • Cover the bottom of a 12x9 baking dish with a thin layer of the sauce.
  • Cover with half of the tortillas.
  • Put half of the cooked chicken on top of the tortillas.
  • Spread half of the remaining sauce over the chicken.
  • Top with half of the cheese.
  • Repeat by layering the remaining tortillas, chicken, sauce, then cheese.
  • Bake 350 degrees for 30 minutes.
  • Allow several minutes to cool.
  • Top with chopped onions and fresh chopped tomatoes (optional) and serve with sour cream.

1 jalapeno pepper, seeded and chopped

3 cups chicken broth
1 to 2 tablespoons ground cumin
1 teaspoon garlic powder

Steps:

coarse-grind garlic salt

12 -14 corn tortillas
vegetable oil (for softening tortillas)

Steps:

  • In frypan, cook chicken in oil over medium-high heat until chicken is just done; season with garlic salt and cumin to taste; add salsa, black beans, and half the cheese and stir until evenly distributed.
  • Heat oil in small frying pan; soften tortillas, one at a time, by placing in hot oil for a few seconds on each side; drain tortillas on absorbent paper.

2 (10 ounce) cans Rotel tomatoes & chilies (or 2 cans chopped tomatoes, 2 cans of green chiles)
1/4 cup chopped onion (i used green onions)
1/2 cup sour cream
6 corn tortillas
1 tablespoon shortening

Steps:

  • To make my chicken, I put 5 drumsticks (frozen) in the crock pot on low with the 2 cans of Rotel.
  • These cooked for 7 hours when the chicken was nice and tender. I took out the bones and put it in a bowl with 1 cup of the cheese, the onions, and a little of the tomato mixture from the crock pot.
  • Now, take the 6 corn tortillas, spread a thin layer of the shortening on them, place them on a microwave safe plate and cook for about 1 minute (until they are warm and soft).
  • Take 1 tortilla and put 2-3 spoonfuls of the chicken/cheese mixture in it, then roll the tortilla like a cigar, and place it seam side down in your pan (I used a 1 1/2 quart pan--you can use a larger one if you are doubling the recipe) continue previous step with the rest of your tortillas.
  • Mix 1/4 cup of crock pot tomato mixture with your sour cream.
  • Pour this mixture over your enchiladas.
  • top with the rest of your cheese.
  • cover with foil and cook for 25 minutes at 350 degrees.

Rotisserie chicken is something we all buy on occasion as it's quick and when you remove the skin it isn't too bad for you either. It is great by itself, but over the years I have started using it in a few of my recipes. This not only saves time, it is even better than 'just chicken'. My rotisserie chicken enchiladas is one of those recipes! The rotisserie meat is so tender and perfect for this type of meal, and with my homemade enchilada sauce? YUM. Adults and kids love this one and if you control the cheese, it is healthy yet satisfying. My recipe serves approximately 6 and takes less than one-hour from start to devour. So easy and so DELISH (also gluten free)!

1 rotisserie chicken
1 large sweet onion, chopped
14 -16 small corn tortillas
1 cup shredded cheese, of choice (I like a jack or cheddar mix)
1 (15 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1/2 cup water
1/2 cup light sour cream
1/2 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon red chili pepper flakes
1 teaspoon chili powder
1 teaspoon vinegar

Steps:

  • preheat oven to 350 degrees; prep baking dish with cooking spray.
  • remove chicken from bones (discard skin) and chop or shred into small pieces; place meat in a bowl; chop onion and set aside.
  • in a bowl, mix tomato sauce, tomato paste, water, sour cream, pepper, salt, onion powder, red chili flakes, chili powder and vinegar.
  • take each tortilla in your hand, add some chicken, onion and spoonful of sauce and roll it up; place each in cooking dish seam side down; repeat until baking dish is filled.
  • spread remaining sauce over the top of the enchiladas; cover dish lightly with foil and bake 20 minutes.
  • remove from oven, remove foil and top with cheese; bake an additional 15 minutes; garnish with extra sour cream if you like.

I make this or a version of this every single week-so easy! Sometimes I make them with all cheese, sometime with ground beef seasoned with taco seasoning and use a can of red sauce instead of green. The possibilities are endless!!!!!

4 chicken thighs or 2 chicken breasts-seasoned and roasted in oven, then shredded
1 large can green enchilada sauce
6 large la tortilla low carb corn tortillas or substitute regular large corn tortillas
1 1/2 c shredded cheddar cheese

Steps:

  • 1. Preheat oven to 350 degrees. Spray a 9x13-inch baking dish with nonstick cooking spray. In a large skillet on medium low heat, add enchilada sauce and warm.
  • 2. Dip a tortilla into sauce and shake off and place in prepared baking dish. Add a heaping amount of shredded cooked chicken and sprinkle with about 1 Tablespoon or so of shredded cheese. Roll and place seamside down in pan. Continue with the other 5 tortillas, using all of the chicken but reserving some cheese for top.
  • 3. Pour the remaining sauce over top of enchiladas and sprinkle with remaining cheese. That's it! Bake for appx. 30 minutes until bubbly and hot. Serve with a big heaping spoonful of sour cream and sliced avocado, if desired. Makes 6 very large enchiladas. I eat one; my husband eats 2; some may eat 3. May serve 2, 3, 4 or 6!
  • 4. *Note - To make this very easy, you can substitute shredded rotissiere chicken. *2nd Note - Sometimes I add a splash of heavy cream to the sauce to make it a little creamier.

My sister Shawn is famous for these enchiladas, and her husband Rob makes the killer margaritas to match. My husband and I like them with Sangria. It's the ideal entree for dinner guests because it can be completely prepared in advance. You can substitute whatever meat you have...ground chicken or turkey, steak, shredded pork, Krab, etc. as well as any creamed soups. I was even out of sour cream and substituted fat free cottage cheese which worked fine. Be creative and please share your ideas here!

1 lb chicken breast
1/2 yellow onion
4 cups cheese, shredded (whatever kind you like, I usually used a reduced fat Mexican blend inside and pepper jack for the to)
1 (4 -8 ounce) can diced green chilies
2 (10 3/4 ounce) cans 98% fat-free cream of chicken soup
1 (16 ounce) package light sour cream
8 -10 flour tortillas
1 (1 1/4 ounce) package taco seasoning mix (HOT is best!)
1 tablespoon poultry seasoning (Paul Prudhomme's)

Steps:

  • Cook chicken with poultry seasoning.
  • Cool completely.
  • Shred chicken in food processor. (Steps #1-3 can be done the day before assembling enchiladas.).
  • Saute onion in a saucepan.
  • Add chicken, 1/2 of the green chilis and taco seasoning and cook for two minutes.
  • Remove from heat and add two cups cheese.
  • Prepare sauce in a medium bowl: combine soup, sour cream and the other half can of green chilis.
  • In a 9 x 13 pan, place 1 cup of sauce.
  • Place 1/8 to 1/10 of chicken mixture in each flour tortilla and roll up and place in pan with seams down.
  • Pour remaining sauce over enchiladas and sprinkle top with remaining two cups cheese. (Steps #1-10 can all be done in advance and keep pan in refrigerator ready to cook.).
  • Bake at 375 degrees for 20-25 minutes.

4 skinless, boneless chicken breast halves
2 (19 ounce) cans green enchilada sauce
24 corn tortillas
1 cup 2% shredded Mexican style cheese
1 large zucchini, shredded

Steps:

  • Place the chicken breasts in a slow cooker along with one can of enchilada sauce. Cook on High until tender and no longer pink, about 3 hours. Shred using two forks and return to the slow cooker.
  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Pour the remaining can of enchilada sauce into a shallow dish. Dip tortillas in the sauce; fill each with 1/3 cup shredded chicken, a sprinkle of Mexican style cheese, and a bit of grated zucchini. Roll up and place in the prepared baking dish, seam side down. 1 (10 3/4 ounce) can Campbell's Cream of Chicken Soup (Regular or 98% Fat Free)
1/2 cup sour cream
1 cup Pace Picante Sauce
2 teaspoons chili powder
2 cups chopped cooked chicken
1/2 cup shredded monterey jack cheese (about 2 ounces)
6 flour tortillas, warmed (6-inch)
1 small tomatoes, chopped (about 1/2 cup)
1 green onion, sliced (about 2 tablespoons)

Steps:

  • 1.Heat the oven to 350°F Stir the soup, sour cream, picante sauce and chili powder in a medium bowl.
  • 2.Stir 1 cup soup mixture, chicken and cheese in a large bowl.
  • 3.Divide the chicken mixture among the tortillas. Roll up the tortillas and place seam-side up in a 2-quart shallow baking dish. Pour the remaining soup mixture over the filled tortillas. Cover the baking dish.
