EASY CARAMEL APPLES
Steps:
- Remove stems and thoroughly wash and dry apples; insert pop sticks into tops. Line a baking sheet with parchment and grease the parchment; set aside., Place caramels and water in a small saucepan; cook and stir over medium-low heat 3-5 minutes or until smooth, stirring frequently. Remove from heat; cool slightly. Dip each apple in caramel mixture, allowing excess to drip off. Place on prepared pan. Refrigerate until set.

I was thinking about this when making caramel apples the other day and thought I would share with everyone here. :) NOTE: You can also substitute the caramel for peanut butter instead for a healthier version for the kidlets.

- 1. Cut your apples in half. Remove stems.
- 2. Hollow out each half by coring and shaving away some of the inner apple. (I use a muffin tin to help balance.)
- 3. Fill with warmed caramel. (You can use homemade or you can use store-bought and microwave it in 15 second intervals until warmed.)
- 4. Let the caramel cool and harden. Once completely cooled, cut apples into slice and serve.

- Line a baking sheet with waxed paper and coat with cooking spray. In a medium saucepan, bring sugar and 1/2 cup water to a boil over high. Reduce to medium-high and simmer, undisturbed, until caramel is golden brown, 8 minutes. Remove from heat and carefully stir in cream (mixture will sputter). Transfer to a small bowl and let cool 5 minutes.
- With a paring knife, make a small slit in top of each apple. Insert an ice-pop stick 1 inch deep into each slit. Dip apples into caramel, swirling to coat. Sprinkle with nuts (if using) and transfer to sheet.

- 2. Pour SOME of the caramel sauce over the cream cheese. Sprinkle nuts over all.
- 3. Serve with fresh apple slices. This dip is also great with nut-based crackers.

- Wash and thoroughly dry your apples. Stick a skewer into the end of each apple, making sure not to pierce your hand. (Don't ask)! Melt the caramels in a microwave safe bowl for thirty seconds at a time, until they are fully melted. Add the milk to slightly thin the caramel, stir well. Dip each apple into the caramel, using a spoon to coat it, if necessary. Let the apple set on a piece of wax paper to firm up a little bit for at least 10 or 15 minutes. Enjoy!
