A wonderful appetizer to have on hand that can be made ahead of time, frozen, and used as needed.

20 thin slices sandwich bread, crusts removed
¾ pound butter
4 ounces blue cheese, at room temperature
1 (8 ounce) package cream cheese, at room temperature
1 egg, beaten
20 fresh asparagus spears

Steps:

  • Trim crusts from bread, and flatten slightly with a rolling pin.
  • In a bowl, stir blue and cream cheeses together with the egg until well blended and creamy. Spread a thin layer of cheese mixture over each slice of bread. Roll one asparagus spear inside each, and fasten with a toothpick.
  • Melt butter in a small saucepan. Roll each asparagus wrap in butter to coat. Place on a baking sheet small enough to fit into the freezer, and freeze for one hour, or until butter hardens and wraps are somewhat firm. Remove pan from freezer, discard toothpicks, and cut each wrap in half crosswise. Store in a resealable plastic bag in the freezer until ready to use.
  • To serve, preheat oven to 400 degrees F (205 degrees C).
  • Arrange frozen asparagus wraps on an ungreased baking sheet. Bake in the preheated oven for 25 minutes, or until lightly browned. Check occasionally, and turn if necessary, for even browning and to prevent burning. Enjoy!

A delicious appetizer that is also excellent at any party. I have been making the asparagus roll-ups for many years and most everyone just loves them.

1 lb fresh asparagus (younger, thin asparagus)
2 tablespoons water
6 slices white bread
4 tablespoons butter
1/4 cup mayonnaise (Kraft Miracle Whip preferred)
salt
pepper

Steps:

  • Snap off tough ends of asparagus and discard.
  • In a micro-wave proof casserole dish, place asparagus in a single layer, with spears facing the centre.
  • Add 2 tablespoons of water and microwave on HIGH (full power) for 4 minutes turning once at half time; DO NOT OVERCOOK.
  • Remove from microwave, drain and immediately pour cold water over asparagus and place a few ice cubes to cool and stop any further cooking.
  • Drain well and pat dry with paper towelling before using.
  • Cut off the crust from the bread slices and discard.
  • Using a roller, carefully roll each slice to flatten to about 1/4 inch thickness.
  • Spread butter on one side on each piece of flattened bread.
  • Then spread some mayonnaise over the butter.
  • Place 3 asparagus spears to one side of the flattened bread (facing opposite direcions to each other).
  • Sprinkle with salt and pepper to taste.
  • Carefully roll bread/asparagus.
  • Cut each roll to about 1/2 inch thick slices.
  • Place on a platter and serve.
  • Refrigerate any unused portions.

24 asparagus spears
12 slices bacon
24 slices white bread
24 slices sharp cheddar cheese, Thin and narrow slices
3 tablespoons butter

Steps:

  • Cut bacon in half strips.
  • Fry in a pan until just beneath Crisp Not to limp.
  • Lay on paper towels to degrease the Bacon.
  • Cut Asparagus into 5/6 inch lengths. Pick thin Stems not thick. Steam the Asparagus in a Steamer until Tender.
  • Cut cheese into thin strips about 5x1/2 inches long.
  • Melt Butter.
  • White bread. Cut off the crust, and roll out thinly with a rolling pin.
  • Lay Asparagus, bacon and cheese on a diagonal into the bread.
  • Roll the bread upward and seal with butter.
  • spread Butter on top so to brown.
  • Put into Broiler until Bread is Browned.
  • Serve.

8 bacon strips, cooked and crumbled
2 tablespoons chopped green onion
12 slices white bread, crusts removed

1/4 cup butter, melted
3 tablespoons grated Parmesan cheese

Steps:

  • In a small bowl, combine the cream cheese, bacon and green onion. Flatten bread slices with a rolling pin; spread tops with cream cheese mixture. Trim asparagus 2 in. longer than bread. Place two spears on each slice; roll up bread and place seam side down on a greased baking sheet. Brush with butter; sprinkle with Parmesan cheese. , Bake at 400° for 10-12 minutes or until lightly browned. Serve immediately.

1 lb asparagus
1 frozen pie crust
1 tablespoon sesame seeds
3 slices prosciutto
1 tablespoon Smart Balance butter spread (melted)

Steps:

  • Bring a pot of water to boil and blanch the asparagus. Drop into an ice bath to stop cooking.
  • Roll out pie crust to 1/8 inch thickness.
  • Slice the prosciutto into long thin strips.
  • Starting at the top of the spear, wrap a strip of prosciutto around the asparagus, spiraling it down to the base. Do the same with the pie crust strips, overlaying the prosciutto.
  • Lay each spear on a cookie sheet. When each one is wrapped, brush lightly with melted butter and sprinkle with sesame seeds.
  • Bake at 350° for about 8 minutes, or until crust is golden.
  • Serve warm.

ROASTED BALSAMIC GARLIC ASPARAGUS APPETIZER



Roasted Balsamic Garlic Asparagus Appetizer image

After preparing AngelaTN's roasted asparagus for dinner recently, I just couldn't get enough of them! I wanted to make them again, but the event I was going to was a non-heating kind of thing, so I decided I'd put together an adapted version that would work well chilled or room temperature, as an appetizer. Here's what I came up with, and it's delicious! I made them as part of an anti pasto tray. Prep time does not include chilling.

2 lbs asparagus, medium to thick stems (not too thin)
olive oil (or pan spray, but olive oil in mister preferred)
1/2 teaspoon sea salt, to taste
1/4 teaspoon fresh ground pepper, to taste (I like tricolor peppercorns)
2 teaspoons butter (not margarine)
2 teaspoons extra virgin olive oil
4 -6 cloves garlic, peeled and sliced lengthwise into 3 pieces (amount of garlic to taste)
1 tablespoon soy sauce or 1 tablespoon Braggs liquid aminos
2 teaspoons balsamic vinegar

Steps:

  • Preheat your oven to 400 degrees F.
  • Trim the asparagus: rinse the asparagus, cut about an inch off the ends, then use a vegetable peeler to take the outer layer off another inch of the remaining fibrous ends (easiest is to lay the spear on a flat surface then use peeler to gently take off the layer - careful, or you'll remove too much).
  • Place the trimmed asparagus in a single layer on a non-stick baking sheet, then spray with an olive oil mister or drizzle evenly with olive oil (or spray with pan spray).
  • Season with the sea salt and the freshly ground pepper.
  • Place in oven and roast for 8 minutes (don't overcook).
  • Meanwhile, in a small saucepan over very low heat melt the butter and extra virgin olive oil.
  • Add the sliced garlic and simmer (again, over very low heat) for 5 minutes - careful not to burn.
  • Remove from heat and add the soy sauce and balsamic.
  • When asparagus is done, remove from the oven and place in a container which has an airtight cover.
  • Place the garlic from the balsamic mixture on the asparagus; whisk the balsamic mixture well (I use a pigtail whisk) and pour it over the roasted asparagus.
  • Cover tightly, shake, and place in refrigerator to chill (please note that the asparagus is still hot in the container, and that covering them and adding the sauce at this point will continue to steam them a bit for a few minutes).
  • Chill for at least 4 hours before serving, the place attractively on serving platter.
  • Goes well as part of an anti pasto course!
  • Note: although I used these as an appetizer/snack, they could also work quite well as a side dish.

I make this for every special occasion.. very easy,can be made a day or two ahead. You can use any kind of bottled salad dressing,although Greek,Balsamic,and Honey Mustard work well.

15 asparagus spears
1/2 lb imported prosciutto, sliced thick enough so it holds together when laid out
1/2 cup boursin cheese (available in dairy section or see below)

Steps:

  • Snap bottoms off of asparagus, use a vegetable peeler to peel spears and steam them to a point where they are not totally wilted. Refrigerate until needed.
  • Lay out pieces of prosciutto and spread about one tablespoon of Boursin cheese onto each slice. Mean Chef has a recipe if you find it hard to locate in your local market -- Boursin Cheese - Make your own Recipe #65204.
  • Put chilled asparagus spears on kitchen towels to absorb any moisture. Place one or two asparagus spears in each slice of prosciutto and roll. Refrigerate if not serving immediately.

These are lovely appetizers to serve and so easy to make and not too expensive ingredients. You may freeze them before baking just allow a little longer in the oven when baking from the frozen state. I have just made these again using square white sandwich bread. I needed 25 slices of bread, put a generous tbsp of the filling on each, cut them in two and ended up with 50 appies. If using the sandwich bread you will need few extra asparagus but most aaparagus are longer than the slice of bread so you get 1 1/2 from most spears

12 asparagus spears, ends snapped off, steamed but still crisp
12 slices white bread, home made style, crusts removed
4 ounces blue cheese
1 teaspoon Worcestershire sauce
1 egg, beaten
8 ounces cream cheese (you can use lite but regular is better)
garlic powder
pepper
1/4 cup butter

Steps:

  • Flatten each slice of bread with a rolling pin so it is less than 1/4" thick.
  • Mix Blue cheese, worcestershire sauce, beaten egg, cream cheese and seasonings.
  • Spread the mix on each slice of bread.
  • put an asparagus spear at the edge of each slice and roll up like a Jelly roll.
  • Coat the outside of each roll with butter.
  • Cut each roll into 3 pieces.
  • Place, seam side down, on a cookie sheet and bake for about 20 minutes, 375°F.
  • Turn over to the other side after about 10 minutes.
  • The rolls should be nice and golden.

Easy Breezy Asparagus Appetizer image

This easy appetizer has been a hit at many of my parties. The pickled asparagus goes well with the cream cheese and chives. The asparagus comes in various thicknesses. If thin, use three sprigs. If thicker, one sprig is enough. Small jars of pickled asparagus can be found in most grocery stores; large jars are available at stores such as Sam's Club.
