2 ½ cups all-purpose flour
1 ½ cups white sugar
1 tablespoon baking powder
1 teaspoon salt
1 cup milk
½ cup vegetable oil
2 eggs, beaten
2 teaspoons vanilla extract
2 cups fresh blueberries
2 teaspoons all-purpose flour, or as needed
2 tablespoons butter, melted
2 tablespoons white sugar, or more to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9x13-inch baking dish.
  • Sift 2 1/2 cups flour, 1 1/2 cup sugar, baking powder, and salt together in a bowl. Add milk, vegetable oil, eggs, and vanilla extract; mix into a semi-thick batter.
  • Toss blueberries with about 2 teaspoons flour in a separate bowl; fold into batter. Pour batter into prepared baking dish.
  • Bake in the preheated oven until cake is lightly browned, 25 to 30 minutes. Brush melted butter on top of cake and sprinkle with about 2 tablespoons sugar. Continue to bake until golden brown and a toothpick inserted in the center comes out clean, 5 to 10 more minutes.

No one would ever guess this lemon-blueberry cake starts out with a boxed mix. Adding blueberries, lemon, and milk to the mix will result in a moist, light, and fluffy cake.

1 (15.25 ounce) package lemon cake mix, divided
¾ cup milk
½ (8 ounce) package Neufchatel cheese, softened
¼ cup freshly squeezed lemon juice
2 eggs, at room temperature
1 tablespoon lemon zest
1 cup blueberries, fresh or frozen
1 ½ cups powdered sugar
3 tablespoons lemon juice, or more as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a fluted tube pan (such as Bundt®) with cooking spray.
  • Place all but 1 tablespoon cake mix in a large bowl. Add milk, Neufchatel cheese, eggs, and lemon zest and beat with an electric mixer for 3 minutes.
  • Place blueberries in a separate bowl and toss with remaining 1 tablespoon cake mix until coated. Fold into cake batter and transfer to the prepared Bundt® pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 40 to 45 minutes. Set on a wire rack until completely cooled, about 30 minutes.
  • Combine powdered sugar and lemon juice for glaze in a small bowl. Mix together until desired consistency, adding more lemon juice a bit at a time, if needed.
  • Run a table knife around the edges of pan to loosen cake. Invert carefully onto a serving plate and slowly pour glaze over top.

1 box pillsbury sugar free yellow cake mix
3 large eggs room temperature
1/3 c canola oil
1 c 2% milk
2 tsp orange extract
1 c frozen blueberries
2 Tbsp all purpose flour

Steps:

  • 1. Preheat oven to 325 degrees F.Spray bundt pan liberally with non stick cooking spray. This is the 10 cup bundt pan that I used it is called a Kugelhopf Bundt Pan.
  • 2. Empty cake mix into a large mixing bowl, add the oil, eggs, orange extract, and milk. Begin slowly to incorporate the dry ingredients into the wet, then increase speed till batter is mixed.
  • 3. Measure out blueberries, and dust with flour, pour into a small dish, make sure they are evenly coated, then take blueberries from dish individually, and leave any excess flour, add dusted blue berries to cake batter. Then with a spatula gradually mix blueberries into cake batter.
  • 4. Pour batter into prepared cake pan, and bake in preheated 325 degree oven for 45 minutes or until tooth pick inserted into center comes out clean. NOTE: I added an extra few minutes to the baking time, because the blueberries were frozen. If you use fresh, you may only need the time reccomended on the box.
  • 5. PLEASE NOTE: Dusting the Blueberries with flour before hand, allows them to stay afloat, and distribute more evenly throughout cake during baking. I DID NOT FOLLOW PACKAGE DIRECTIONS EXACTLY. Recipe turned out great, and the addition of orange extract added lots of flavor to the cake.

  • Preheat the oven to 180 degrees and line or grease the tin. Start by creaming the butter with the sugar until light and fluffy
  • Beat the eggs and add to the creamed sugar and butter, stirring with a wooden spoon continuously.
  • The flour sifted with salt, baking powder and cinnamon must slowly be combined into the mixture.
  • Now add your blueberries to the mixture.
  • Add your mixture to the tin and allow bake for 45 - 50 minutes.
  • Allow to cool and optionally you can garnish with clotted cream and/or blueberry compote.

  • Other ingredients will vary according to box directions, such as eggs, oil, etc.
  • Brown sausage in a frying pan; drain.

3 eggs (or as called for by your cake mix)
1/3 cup oil (or as called for by your cake mix)
1 1/3 cups water (or as called for by your cake mix)
berry blue gelatin mix
1 1/4 cups water
3/4 cup sour cream
3/4 cup powdered sugar
8 ounces Cool Whip Topping
1 1/2 cups blueberries
2 white chocolate baking squares
1 -2 drop blue food coloring

Steps:

  • Bake two 9" round cakes in preheated oven as directed on package.
  • When done, loosen edges with knife and let cool for 15 minutes.
  • Meanwhile, bring 1 cup of water to a boil, remove from heat and stir in the jello, then add the 1/4 cup of water and mix well.
  • Poke cakes several times with fork and evenly pour the jello mix over the top of both cakes.
  • Cover loosely and refrigerate at least 4 hours.
  • When cake is ready to be frosted, combine the sour cream and the powdered sugar, mix well and then gently mix in the cool whip.
  • Dip bottoms of cake pans into warm water for 10-15 seconds, and remove cakes.
  • Set one cake down on serving tray and add about 1 cup of the frosting, carefully spread over the top.
  • Add a layer of blueberries and top with the second cake.
  • Use the remaining frosting and frost the top and sides of the cake.
  • Add your desired amount of blueberries on top.
  • Microwave the white bakers chocolate as directed on package and add the blue food coloring.
  • Drizzle over top of cake, and Enjoy :0).
  • Keep leftovers refrigerated!

3 cups fresh blueberries, rinsed and dried on paper towels
1 cup whole milk (or buttermilk)

Steps:

  • Lay out the butter and eggs about 30 minutes before beginning the cake. Meanwhile, generously grease and flour a 10-inch tube cake pan; set aside. Preheat oven to 325 F. In a mixing bowl, whisk or sift together the flour, baking powder, and salt. Whisk in the lemon zest and set aside. In a large mixing bowl, beat the butter and sugar on medium speed of an electric mixer until light and creamy, 4 to 5 minutes. Beat in eggs, one at a time, until each one is well incorporated. Beat in lemon extract or lemon juice. Add the blueberries to the flour mixture, tossing to coat; then, using a rubber spatula, fold it into the batter just until there are no floury streaks left. Gradually pour the milk around and through the batter, gently lifting and folding it in just until combined. Spoon batter in the prepared pan. 2 eggs
1/2 cup sugar
1 teaspoon vanilla
1/2 cup milk
1 cup frozen blueberries, thawed and drained

6 ounces cream cheese, softened
2 tablespoons milk
1/4 cup sugar

Steps:

  • Preheat oven to 350.
  • In a small bowl mix cream cheese 2 TBSP milk and 1/4 cup suagr until smooth. Set aside.
  • In a large mixing bowl, beat eggs, sugar milk, oil, and vanilla until smooth.
