6 (4 ounce) bone-in chicken drumsticks, with skin
6 tablespoons unsalted butter
½ cup extra-virgin olive oil, divided
1 pinch garlic salt, or to taste
1 pinch seasoned salt, or to taste
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a glass baking dish with aluminum foil.
  • Spread 1/4 cup of olive oil over the bottom of the prepared baking dish and line up drumsticks on top, alternating directions so that they fit. Top with 1 tablespoon of butter each, on the thick part of the chicken. Sprinkle with garlic salt, seasoned salt, salt, and pepper.
  • Bake in the preheated oven for 35 minutes. Cover chicken with remaining olive oil; continue to bake until juices run clear and chicken is no longer pink in the centers, 10 to 15 more minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Serve.

Chicken drumsticks are marinated in mustard, beer, red pepper flakes, garlic, salt, and pepper to make this simple tasty dinner.

½ cup light beer
⅓ cup prepared yellow mustard
2 cloves garlic, chopped
½ teaspoon red pepper flakes
½ teaspoon salt
½ teaspoon black pepper
2 pounds chicken drumsticks

Steps:

  • Combine beer, mustard, garlic, pepper flakes, salt, and pepper in a 1-gallon resealable plastic bag. Add chicken drumsticks; turn to coat evenly. Seal bag, squeezing out all the air.
  • Let chicken marinate in the refrigerator, at least 2 hours and preferably overnight.
  • Preheat oven to 425 degrees F (220 degrees C). Place drumsticks and sauce into a baking dish, discarding the plastic bag.
  • Transfer drumsticks and marinade to a baking dish and cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Check chicken and remove cover if desired. Continue to bake until chicken is no longer pink at the bone and the juices run clear, about 15 more minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

1 kg chicken drumstick
1 1/2 heads garlic separated and cloves, peeled 1 reserved and diced
250 g mushrooms, chopped
1 lemon
olive oil
salt
pepper
2 handfuls rocket

Steps:

  • Preheat oven to 200c.
  • Rub the chicken with some olive oil, season with salt and pepper, then place in baking tray with enough room so there is gaps around them, then put in the oven.
  • Bake for 15 minutes, scatter the garlic cloves (reserve one and dice it while cooking the chicken) around the chicken, return to the oven and bake for another 30-35 minutes until the chicken is tender.
  • When done, remove the chicken to a plate and cover with foil, then a teatowel.
  • Drain the juice from the oven tray and reserve it.
  • Heat up a frying pan and fry the reserved, chopped, clove of garlic in some oil (about a tbsp), then add the mushroom, and the reserved juices and saute until tender.
  • Serve the chicken drumsticks on a bed of rocket (one handful per person), with the mushrooms on the side, a lemon wedge, and scatter the roasted garlic around it.
  • Lovely with a glass of white wine!

1/4 tsp pepper
1/2 tsp onion powder
1/2 tsp garlic powder
6 chicken drumsticks
1/4 c butter, melted

Steps:

  • 1. Pre-heat oven to 425°
  • 2. Mix flour, salt, paprika, onion powder, garlic powder and pepper in a bowl.
  • 3. Dip chicken drumsticks into the butter; roll in flour mixture to coat.
  • 4. Arrange in an ungreased square pan (8x8x2)
