The secret to a perfect grilled cheese recipe? Mayonnaise! (No, really, it makes the outside crispier and tangier.) Spread butter on one side of each bread slice and mayo on the other. Sandwich the cheddar slices between the buttered sides, leaving the mayo sides on the outside. Fry for a few minutes until golden, dip into a bowl of tomato soup, and resolve to never make a grilled cheese without mayo ever again!

2 pieces sourdough bread
1 ½ tablespoons unsalted butter
1 ½ tablespoons mayonnaise
3 slices cheddar cheese

Steps:

  • On a cutting board, butter each piece of bread with butter on one side.
  • Flip the bread over and spread each piece of bread with mayonnaise.
  • Place the cheese on the buttered side of one piece of bread. Top it with the second piece of bread, mayonnaise side out.
  • Heat a nonstick pan over medium low heat.
  • Place the sandwich on the pan, mayonnaise side down.
  • Cook for 3-4 minutes, until golden brown.
  • Using a spatula, flip the sandwich over and continue cooking until golden brown, about 2-3 minutes.
  • Enjoy!

3 tablespoons butter, at room temperature and divided
1 medium red onion, thinly sliced
3/4 teaspoon cumin seed
6 ounces best quality medium-aged gouda cheese, coarsely grated
8 slices rye bread, with caraway seeds

Steps:

  • In a large nonstick skillet, melt 1 tablespoon butter over low heat.
  • Add in the onions; cook very slowly, stirring occasionally, until the onions turn a dark golden color; about 30-40 minutes.
  • If the onions start to scorch, add about 1 tablespoon water.
  • Remove the onions from the pan and set aside.
  • Wipe skillet using a paper towel; do not wash skillet.
  • Heat the same skillet over med-high heat.
  • Add in the cumin seeds and toast just until they become fragrant, approx 3 minutes; watch carefully because they burn easily.
  • Remove the seeds and let cool briefly.
  • Do not wash the skillet.
  • When the seeds are cool, crush them using a mortar/pestle.
  • In a bowl, toss the crushed seeds with the cheese.
  • To make the sandwiches: butter one side of each bread slice.
  • Place 4 slices on a work surface, buttered side down.
  • Distribute the cheese evenly over the 4 slices, then do the same with the onions.
  • Place the remaining 4 slices on top, buttered side up.
  • Heat the same skillet over med-high heat for 2 minutes.
  • Put the sandwiches in the skillet (do this in batches, if necessary), cover, and cook for 2 minutes or until the underside is golden brown and the cheese has begun to melt.
  • Uncover and turn the sandwich using an spatula, pressing firmly to flatten the sandwich slightly.
  • Cook for 1 minute or until underside is golden.
  • Turn the sandwich again, press with spatula, and cook for 30 seconds or until the cheese has melted completely; serve.

6 tablespoons butter, softened, divided
8 slices sourdough bread
3 tablespoons mayonnaise
3 tablespoons finely shredded Manchego or Parmesan cheese
1/8 teaspoon onion powder
1/2 cup shredded sharp white cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Gruyere cheese
4 ounces Brie cheese, rind removed and sliced

Steps:

  • Spread 3 tablespoons butter on 1 side of bread slices. Toast bread, butter side down, in a large skillet or electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, mix together mayonnaise, Manchego cheese, onion powder and remaining 3 tablespoons butter. In another bowl, combine cheddar, Monterey Jack and Gruyere. , To assemble sandwiches, top toasted side of 4 bread slices with sliced Brie. Sprinkle cheddar cheese mixture evenly over Brie. Top with remaining bread slices, toasted side facing inward. Spread mayonnaise mixture on the outsides of each sandwich. Place in same skillet and cook until bread is golden brown and cheese is melted, 5-6 minutes on each side. Serve immediately.
