DUTCH BABY

Dutch Baby image

This large, fluffy pancake is excellent for breakfast, brunch, lunch and dessert any time of year. And it comes together in about five blessed minutes. Just dump all of the ingredients into a blender, give it a good whirl, pour it into a heated skillet sizzling with butter, and pop it into the oven. Twenty-five minutes later? Bliss.

The next time your crew craves pancakes, serve something new and exciting: a Dutch baby. This baked pancake requires whirring a few basic ingredients in a blender, pouring the batter into a piping-hot skillet, and baking for 20 minutes (no need to flip). DUTCH BABY

I've had these a lot at B&B's, probably because they're delicious and dependable if the right technique is used. This dish is puffy around the outside and flat in the center offering the perfect nest for sliced fresh fruit. It's airy, light and makes a beautiful presentation. The batter can be made up to a day ahead and refrigerated.

CHEF JOHN'S BLUEBERRY DUTCH BABY

Chef John's Blueberry Dutch Baby image

You're in for a huge treat with this blueberry studded baked pancake--it's rich and satisfying but surprisingly light tasting. The true magic of a Dutch baby is the contrast of texture between the crispy, crusty outside and the soft, custardy, fruity center. This version is not only gorgeous and delicious, but it's fun and simple to make! There's no sugar in the batter, so all the sweetness comes from the berries and the powdered sugar. For a sweeter version, serve with maple syrup like regular blueberry pancakes.

LEMON GARLIC BABY DUTCH YELLOW POTATOES

Lemon Garlic Baby Dutch Yellow Potatoes image

I found this recipe on a bag of baby Dutch yellow potatoes that I recently bought for a different recipe. THIS recipe sounded so good that I changed my menu and prepared this instead. It was a hit with my family. Although it states "baby DUTCH yellow potatoes", I'm sure that this would work as well with any variety of baby potatoes. I haven't tried it with larger potatoes cut down to size. I used fresh lemon juice and I really think that this made the recipe so I can't vouch for it if you use the bottled stuff.

DUTCH BABY PANCAKE WITH RASPBERRY-ORANGE COULIS

Dutch Baby Pancake with Raspberry-Orange Coulis image

Provided by Valerie Bertinelli

Categories     dessert

Time 50m

Yield 4 servings

Number Of Ingredients 11

12 ounces fresh raspberries
3 tablespoons sugar
2 tablespoons freshly squeezed orange juice
1 teaspoon vanilla extract
1/2 teaspoon orange zest
3 large eggs
3/4 cup whole milk
3/4 cup all-purpose flour
1/2 teaspoon vanilla extract
1/4 teaspoon salt
3 tablespoons unsalted butter, cut into 1/2-inch pieces

Steps:

  • For the coulis: In a medium saucepan over medium-low heat, combine the raspberries, sugar, orange juice and vanilla. Cook, stirring frequently, until the raspberries are completely broken down and the sauce is syrupy, 10 minutes. Strain, a little at a time, through a fine-mesh sieve into a bowl, stirring to separate the seeds. Stir the orange zest in the strained sauce. Serve warm or set aside to cool. Carefully remove the skillet from the oven and add the butter, swirling until it is melted and coats the pan. Pour in the batter and immediately return the skillet to the oven. Bake until the pancake is puffed and golden brown, 16 to 18 minutes.
  • Serve the Dutch baby with the raspberry coulis.

OVEN BAKED PANCAKE (DUTCH BABY OR DAVID EYRE'S PANCAKE)

Oven Baked Pancake (Dutch Baby or David Eyre's Pancake) image

From "The Essential New York Times Cookbook"; this recipe is David Eyre's, adapted by Craig Clairborne in 1966. The best and simplest version of this classic breakfast, with a drizzle of lemon juice and powdered sugar to finish.

Provided by Raquel Grinnell

Categories     Breakfast

Time 25m

Yield 1 pancake, 2 serving(s)

Number Of Ingredients 8

1/3 cup all-purpose flour
1/2 cup whole milk
2 eggs, lightly beaten
1 pinch nutmeg
1 pinch salt
4 tablespoons unsalted butter (one half stick)
2 tablespoons confectioners' sugar
1/2 lemon, juiced

Steps:

  • Heat oven to 425 degrees. Combine the flour, milk, eggs, and nutmeg in a bowl. Beat lightly. Leave the batter a little lumpy as overbeating will make the pancake tough.
  • Melt the butter in a 12-inch cast iron or other ovenproof skillet with a heatproof handle. When it is very hot and slightly browned, pour in the batter. Bake for 15 to 20 minutes, until the pancake is golden brown.
  • 4. Sprinkle with the sugar and return briefly to the oven. Sprinkle with lemon juice, and serve. My kids like the sugar and lemon juice stirred together like a kind of glaze drizzled onto the pancake, which is how I remember having crepes from the crepe stands in Paris -- Additionally can be served with jelly, jam, or marmalade.
