2 tablespoons canola oil
1 onion, chopped
6 cloves garlic, chopped
2 tablespoons minced fresh ginger root
2 pounds large shrimp, peeled and deveined
1 pinch salt
½ teaspoon ground black pepper
1 tablespoon red pepper flakes, or to taste
¾ cup beer
¼ cup ketchup
1 tablespoon white sugar
1 tablespoon cornstarch
1 tablespoon water
1 tablespoon toasted sesame oil
3 green onions, chopped

Steps:

  • Heat canola oil in a large skillet over high heat, and cook and stir onion, garlic, and ginger just until fragrant, about 15 seconds. Add the shrimp, salt, and black pepper, and cook and stir until the shrimp is slightly pink, about 5 minutes. Stir in the beer, ketchup, and sugar, and bring the sauce to a boil.
  • Dissolve the cornstarch in the water, and stir into the boiling sauce. Cook until the sauce returns to a boil and thickens, the shrimp are bright pink on the outside, and the meat is no longer transparent in the center, about 5 minutes. Stir in the sesame oil; remove from heat. Sprinkle with the green onions.

2 tablespoons white tequila
1 teaspoon ground cumin
1 teaspoon paprika
Pinch cayenne pepper
2 cloves garlic, minced
1 lime, juiced, plus 2 limes cut into wedges
Canola oil
32 medium shrimp, peeled and deveined
Kosher salt and freshly cracked black pepper
1/4 cup chopped fresh cilantro
1 cup mayonnaise
1/2 cup Mexican crema
2 teaspoons lime juice
1 teaspoon light agave
1 chipotle pepper, minced, plus 1 tablespoon chipotle in adobo sauce (add more if you like it spicy)
Kosher salt
Nonstick cooking spray
16 corn tortillas
1 cup finely grated Parmesan
2 vine tomatoes, diced
3 cups shredded iceberg lettuce
Cotija cheese
Lime wedges
Chopped fresh cilantro

Steps:

  • For the shrimp: Soak 8 bamboo skewers in water, if grilling over an open flame (or use metal skewers).
  • Begin by making a quick marinade. In a large mixing bowl, combine the tequila, cumin, paprika, cayenne, garlic, lime juice and a little canola oil. Add the shrimp and toss well to coat. Sprinkle with salt and pepper. Take the skewers and thread 4 shrimp per skewer.
  • Heat up a grill, grill pan or flat top. Place the shrimp skewers on the grill and cook until pink, well-marked and nicely charred, 40 to 50 seconds. Remove from the grill and set on a large platter. Add the cilantro and finish by squeezing the lime wedges for some fresh lime juice all over (while the shrimp are warm they will soak up the lime flavor).
  • For the spicy pink mayo: Combine the mayonnaise, Mexican crema, lime juice, agave, chipotle and adobo sauce and some salt in a mixing bowl. Refrigerate until ready to serve.
  • For the tacos: Take a large nonstick saute pan (or on a flat grill top) and spray lightly with some nonstick cooking spray. Warm a tortilla for about 30 seconds on both sides, and then lightly coat one side with a sprinkle of Parmesan. Warm through, and then flip so it toasts cheese side down. Allow the cheese to cook and brown about 15 seconds, and then remove from pan. Repeat with the remaining tortillas.
  • To assemble: Place a skewer of shrimp on a doubled-up tortilla (cheese side up) and remove the skewer to leave the shrimp lined up in a row. Top with the diced tomato, iceberg, Cotija cheese, spicy pink mayo, lime and cilantro. Serve with beans.

Steps:

  • In a large skillet, melt the butter over medium-high heat.
  • Add the shallots and cook until soft, about 2 minutes.
  • Add the garlic& ginger, then saute for 1 minute.
  • Add the shrimp, Essence, salt, lemon juice,& whiskey to the pan and cook until the shrimp are pink.
  • (about 2 minutes).
  • Remove the shrimp from the pan with a slotted spoon and keep warm.
  • Add the honey& cream to the pan and cook until thickened.
  • Return the shrimp to the pan and stir well to coat.
  • Serve immediately alone or over a bed of noodles or rice.

This is a warm peel-and-eat shrimp recipe that I tried to duplicate from a little bar-and-grill in Deland, Florida. The shrimp are boiled in a spicy beer and thyme broth and served hot in a beer mug. Serve with dipping sauces of lemon-butter and hot sauce. I dip first in lemon-butter and then hot sauce, but you will find what works best for you! You will need plenty of paper towels!

2 tablespoons seafood seasoning (such as Old Bay®)

15 jumbo shrimp
1 1/2 ounces butter
1 tablespoon. onion, finely chopped
2 teaspoons fresh cilantro, washed, dried, finely chopped
1/2 teaspoon chipotle chile in adobo
2 ounces anejo tequila
salt and pepper

Steps:

  • Peel and devein the shrimp.
  • Chop onion finely.
  • Wash the cilantro in several changes of water, dry it by squeezing it in a towel, and then chop in finely.
  • Mash the chiptole chile.
  • Heat a saute pan or frying pan over a high flame. Add butter, onions and chipotle chile.
  • Season shrimp with salt and pepper.
  • When pan begins to sizzle, add the shrimp. Stir fry until shrimp are almost cooked, approximately 3 minutes.
  • Remove the pan from the heat, add the tequila and return it to the flame. Be careful when adding the tequila because it may flame up.
  • Cook the shrimp for another 2 minutes, add the cilantro, and remove the pan from the fire.
  • Taste the juice in the pan and season it with a salt and pepper.

1 cup water
1/4 cup apple cider vinegar
2 onions, quartered
1 garlic clove, smashed
1 tablespoon Neelys Seasoning Rub, plus more for garnish, recipe follows
1 tablespoon crab boil seasoning (recommended: Old Bay)
2 bay leaves
3 whole peppercorns
1 lemon, quartered
1 tablespoon hot sauce
2 pounds large shrimp, peeled and deveined
Lemon wedges, for garnish
BBQ Cocktail Sauce, for garnish, recipe follows
1 1/2 cups paprika
3/4 cup sugar
3 3/4 tablespoons onion powder
1/2 cup Neelys Barbecue Sauce, recipe follows
1/2 cup prepared horseradish
1/2 cup ketchup
1 lemon, juiced
Dash hot sauce
2 cups ketchup
1 cup water
1/2 cup apple cider vinegar
5 tablespoons light brown sugar
5 tablespoons sugar
1/2 tablespoon fresh ground black pepper
1/2 tablespoon onion powder
1/2 tablespoon ground mustard
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce

Steps:

  • Add all ingredients, except shrimp and garnishes to a large saucepan on high heat. Bring to a boil for 10 minutes. Reduce the heat to low. Add the shrimp and cook until bright pink, about 5 minutes. Drain the shrimp from the cooking liquid and place in a serving dish. Chill or eat while warm, sprinkled with the dry rub before serving alongside Cocktail Sauce.
  • Add all ingredients to a bowl and stir until combined. Keep in an airtight container for up to 6 months.
  • Mix all ingredients in a small bowl. Cover and refrigerate until use.
  • In a large saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to a simmer. Cook uncovered, stirring frequently, for 1 hour 15 minutes.
  • Yield: 3 1/2 cups

John Stage almost always leaves something out in the recipes he publishes so they are just a little off. In this case, I think he just wrote "creole seasoning" when in fact, this stuff tastes most authentic with a spice they sell around here in the restaurant and in stores called "Cajun Foreplay." Use it generously. Either way these are delicious, especially served with Dinosaur BBQ Cocktail Sauce (recipe # 295318). Not for wimps!

1 cup citrus juice made from freshly squeezed orange, lime, and lemon juice
1/4 cup peeled ginger, chopped

1/2 cup light cooking oil, preferably sesame, canola, or vegetable
1 pound small shrimp, rinsed, shells intact
1/2 pound bay scallops

Steps:

  • Soak skewers in water for 45 minutes. In a mixing bowl, combine vodka, citrus, ginger, garlic, sugar, and miso paste and whisk until mixed. Slowly whisk in oil until smooth. Pour marinade over unpeeled shrimp and scallops. Cover and let marinate in refrigerator for 45 to 60 minutes. Skewer shrimp and scallops (4 to a skewer is optimal) and place on grill over direct heat. Allow tails and legs of shrimp to slightly blacken before turning. Scallops should brown slightly before turning.

Better drink some red wine with this to combat the clogging arteries, though. It's well worth all the effort, you will be hailed a hero! 2 red bell peppers
vegetable oil
1 quart heavy whipping cream
2 teaspoons garlic, shopped

1 (12 ounce) bottle abita amber beer
16 ounces angel hair pasta, cooked al dente

Steps:

  • Preheat the oven to 400 degrees.
  • Core the tomatoes and cut into halves.
  • Core the bell peppers and cut into halves lengthwise, discarding the seeds and membranes.
  • Rub the skins of the tomatoes and peppers with a small amount of vegetable oil and make a small slit in the skin of each tomato half.
  • Arrange cut side down in a baking pan and roast in the oven until the skins blister.
  • Squeeze the seeds from the tomatoes and chop coarsely.
  • Julienne the bell peppers.
  • Bring the cream to a boil in a heavy saucepan.
  • Stir in the roasted tomatoes and cook until the mixture is reduced 1/3 and the sauce will coat the spoon.
  • Saute the garlic in the butter in a large saute pan until golden brown.
  • Add the shrimp, leeks, mushrooms, and Creole seasoning.
  • Saute until the shrimp are partially cooked.
  • Add the beer and stir to deglaze the pan.
  • Cook until the beer has evaporated.
  • Add the tomato cream and pasta; mix well and season with kosher salt.

  • Cover again and cook for 2 minutes, or til the shrimp turn pink and the flesh is just opaque.
  • Drain the shrimp in a colander and cover with a layer of ice to chill them down just enough to stop the cooking.
  • Throw the shrimp into a bowl and toss with the garlic and Creole Seasoning, (They can be eaten warm or chilled.).
  • Whip all of the ingredients for the cocktail sauce together in a bowl, and serve with that mess of shrimp.

2 1/3 tablespoons cornstarch, divided
1 teaspoon sugar, divided

1 cup pina colada nonalcoholic drink mix (I use Mr. T's or Trader Vic's)
1/4 cup Meyer's dark rum

  • Peel the shrimp (the really big ones don't have the vein!).
  • Mix the pina with the rum.
  • Pour over shrimp, reserving a small amount for the grilling process.
  • Marinate for no longer than 30 minutes or the acids will turn it into ceveche.
  • Grill for approximately 2 minutes each side, brushing each side with mix.

3/4 lb medium raw shrimp, shelled,and,deveined,tails left intact
1 tablespoon dry sherry
1 teaspoon cornstarch
1/4 teaspoon salt
1 tablespoon vegetable oil
4 shallots, peeled & halved
6 dried red chili peppers
2 stalks lemongrass, bottom 6 inches only,cut into 2 inch lengths,and crushed
1/4 cup fried garlic, slices
1 sprig cilantro
1/4 cup dry sherry
1 tablespoon lime, juice
1 tablespoon soy sauce
2 teaspoons oyster sauce
1 teaspoon fish sauce
1/2 teaspoon packed light brown sugar

Steps:

  • Marinate the shrimp: In a medium bowl, combine the shrimp, rice wine, cornstarch and salt; toss until the shrimp are evenly coated.
  • Set aside for 10 minutes.
  • Prepare the sauce: In a small bowl combine the rice wine, lime juice, soy sauce, oyster-flavored sauce, fish sauce and brown sugar; stir until the sugar dissolves.
  • Place a wok over high heat until hot.
  • Add the oil, swirling to coat the sides.
  • Add the shallots, chili peppers, lemongrass and fried garlic; stir-fry until fragrant, about 30 seconds.
  • Slide the shrimp into the wok; cook, stirring, until the shrimp begin to turn pink, about 1 minute.
  • Pour in the sauce; reduce the heat to low, cover and cook until the shrimp are cooked through and the shallots are tender, about 5 minutes.
  • Scoop into shallow bowl and garnish with the cilantro sprig.

1 1/2 lbs shelled de-veined uncooked large shrimp (16-20 count)
1/2 cup chopped cilantro (divided)
4 garlic cloves, minced
1 1/2 tablespoons lime juice
1/2 teaspoon kosher salt (divided)
2 ounces good tequila
1/2 teaspoon ground fresh chili paste (I prefer sambal oelek, found in Asian section)
1 1/2 tablespoons olive oil
2 cups jicama (sliced matchsticks, may substitute water chestnuts)
1/2 cup scallion, sliced

Steps:

  • Combine shrimp, 1/4 c cilantro, garlic, lime juice, 1/4 teaspoon salt, and tequila in a glass bowl. Cover w/ plastic wrap and refrigerate for 20 minutes.
  • Heat oil in large nonstick skillet until medium hot. Cook jicama and green onions 3 minutes. Add shrimp with marinade, cook 3 minutes or until shrimps just turn pink (do not overcook), stirring occasionally. Remove from heat; stir in remaining cilantro, salt and ground chili paste. Serve over rice with extra lime wedges.
  • I recommend a white Sauvignon Blanc wine or Corona Beer w/ lime wedge.

Because this dish has only two ingredients, finding the best shrimp is of utmost importance. In Hong Kong, where only live fish is considered fresh, live shrimp are common. Here you may find them at some fishmongers (especially in Chinese neighborhoods) and even in some Western supermarkets. The wine traditionally used for this dish in the south of China is Mei Kuei Lu Chiew and is quite strong and a little sweet; you can find it at many Chinese markets. Shopping hassles aside, this dish is worth trying. Serve it with an assortment of other Chinese dishes or as a starter.

1 pound medium shrimp, preferably live
1 1/4 cups Mei Kuei Lu Chiew, dry Gewürztraminer, or gin

Steps:

  • If you are using live shrimp, run them under cold water to clean them thoroughly. In any case, leave the shells on. Place the shrimp in a bowl with 1 cup of the wine, cover, and refrigerate for 20 minutes.
  • Heat a wok or deep skillet over high heat, then add the remaining 1/4 cup wine. When the wine is almost boiling, carefully ignite it, then immediately add the shrimp with its marinade. (If you are not comfortable igniting the wine, bring it to a rolling boil.) Cook the shrimp, stirring, until they turn pink, about 5 minutes. Remove from the heat and serve

1 cup coconut rum
1/2 cup pineapple juice
1/2 cup red onion, minced
1 tablespoon garlic, minced
1 tablespoon red pepper flakes
1 teaspoon kosher salt
1 piece fresh ginger, peeled
12 large shrimp, thawed and peeled
1 mango, diced small
1 avocado, diced small, reserve peels
1/2 cup fresh pineapple, diced small
2 tablespoons cilantro, chopped
2 tablespoons red onions, minced
2 tablespoons lime juice

Steps:

  • In a saute pan, add rum, pineapple juice, red onion, garlic, red pepper, salt, and ginger.
  • Bring to simmer on medium heat.
  • Let cook for 5-7 minutes, to allow the flavors of the vegetables to let out.
  • Gently drop shrimp into the pan and braise on medium low heat until pink, about 4 minutes.
  • Remove shrimp and arrange half in each avocado skin "chests".
  • Serve with rice for a fuller meal.
  • For salsa, after chopping all ingredients to appropriate size, mix together and season with salt and pepper.
  • Let sit for at least 30 minutes to marinate.
  • Serve over hot shrimp, to look like an opened chest of buried treasure.
  • Drizzle pan sauce over the whole dish for extra flavor.

This dish is so easy and so good. It can be served warm or at room temperature. It can be made ahead, refrigerated, and then brought to room temperature before serving. It's a lovely appetizer or it can be served as a main dish. The grilling of the melon and the pepper can be omitted, but the carmelization that happens in the grilling really adds a dimension to the flavor.

1 lb large shrimp, peeled and deveined
2 tablespoons ouzo
1 tablespoon brown sugar
2 garlic cloves, chopped
2 tablespoons orange juice
1 1/2 tablespoons extra virgin olive oil
3/4 cup couscous
1 cup water
2 teaspoons butter
1 medium cantaloupe, peeled seeded and sliced
1 red bell pepper, peeled, seeded and quartered
1 teaspoon ouzo
salt & freshly ground black pepper
1/2 cup basil leaves

Steps:

  • Combine the two tablespoons of ouzo, tablespoon of brown sugar, chopped garlic orange juice and olive oil in a bowl.
  • add shrimp and toss.
  • Allow to marinate at least thirty minutes.
  • Bring water to a boil in a small saucepan.
  • Add couscous and butter, cover pan and remove from heat.
  • Let stand five minutes.
  • Heat a grill pan (or a George Forman type grill).
  • Grill cantelope slices and peeled red pepper quarters briefly.
  • Dice cantelope and red pepper and add to couscous.
  • Stir the teaspoon of ouzo into the couscous and season with salt and pepper to taste.
  • Cover and let sit so flavors can blend.
  • Heat a saucepan large enough to hold the shrimp in a single layer (or cook the shrimp in batches) over high heat.
  • When the pan is hot, add the shrimp and the marinade.
  • Stir fry the shrimp until done --this should take only a few moments--the longer the shrimp marinates, the less tiome it will take to cook.
  • Do not overcook the shrimp.
  • Place the shrimp in a bowl with any remaining pan liquid .
  • Prepare each of four plates as follows:.
  • Place basil leaves around the plate.
  • Lightly pack the couscous/fruit/pepper mixture in a custard cup or ramekin and invert in the center of the plate.
  • Place the shrimps around the mound of couscous.
  • Enjoy!
