Steps:
- For the soup: Place the chicken pieces and the backbones in a large pot and cover with 16 cups water. Bring to a boil, then reduce the heat to a low simmer and poach the chicken until cooked through, 25 to 30 minutes.
- Use tongs to remove the chicken pieces and set aside to cool; discard the backbones. Once the chicken cools enough to handle, pull the meat from the bones, shred and roughly chop; set aside. Strain the chicken broth and keep warm.
- In a medium pot, melt the butter over medium heat, and stir in the carrots, garlic, celery, leeks, onions and poultry seasoning. Cook the vegetables until they begin to soften, 8 to 10 minutes, then stir in the flour.
- Add the reserved chicken broth, bring to a boil, then reduce to a simmer and cook until the soup thickens slightly and vegetables soften, about 25 minutes. Stir in the shredded chicken and bring the soup back to a low simmer.
- For the dumplings: In a medium bowl, add the flour. Use two butter knives to cut in the milk, butter, baking powder, salt and eggs. Add additional milk, 1 tablespoon at a time, if necessary. The dough should be moist but not too wet.
- Pull the dough into 1/4-cup pieces and place directly in the simmering soup; cover and cook for 10 to 12 minutes. Sprinkle with the chopped parsley and serve.

- 1. Bring a large saucepan of salted water to a boil. Meanwhile, in a medium bowl, mix all ingredients until a thick paste forms. Dip a teaspoon in the boiling water, then dip teaspoon in the dumpling mixture, picking up half a teaspoon or so, and slide it into the gently boiling water. Continue until all the dumpling dough is gone. Simmer about 20 minutes or until dumplings taste done. Drain in a colander and serve as a side dish, a Lenten/vegetarian meal (OR, in soup). Makes enough Drop Potato Dumplings for about 8 servings of soup (but not in our house). NOTE: If you like you can roll some of the dough between 2-spoons before dropping them into the broth. Just depends on how you like the look them ...taste same either way. The pic above is just drops of loose dough; bottom pic is the rolled look.

- Bring stock to boil, add carrots, celery, onion, chicken base, garlic powder, and onion powder cook for 5 to 10 minutes.
- Add parsley, pepper, and cook for another 10 minutes.
- When vegetables are tender add chicken.
- Adjust seasoning by adding salt and extra pepper if needed.
- Dumplings:.
- Stir ingredients until soft dough forms.
- Drop by spoonfuls onto boiling stew; reduce heat to simmer.
- Cook uncovered 10 minutes then cover and cook 10 minutes.
DROP DUMPLINGS (FOR CHICKEN SOUP)
I grew up with my mother making a plain version of these all winter long. I could just eat a plate of the dumplings alone and forget the soup; I liked them that much. Now I make them for my kids and add different ingredients to change the flavors.

- Mix together first three ingredients being sure to get all flour evenly incorporated into mix.
- Crush the rosemary leaves in the palm of your hand to break them up and release the oils and add to the mix along with the cheese.
- While mixing the dumplings; bring your soup or broth to a slow soft boil.
- Take two kitchen tablespoons and use them to drop tablespoons of dumpling mix into your broth by spooning up mix then using other spoon to roll it into the soup.
- Do not over crowd your soup with raw dumplings or they will stick together.
- Move around the pot as you drop to allow the dumpling to start to set before another raw one is dropped next to it.
- Cook at a slow boil for about 15 minutes to allow the dumplings to cook through and absorb some of the chicken flavoring from the broth.
- NOTE: You can change the cheese flavor with another hard cheese and use other types of herbs to create your own blend of flavors.
- Re Comment on thicknss of dumplings -- tis true this is a very thick style dumpling (my mothers side of family is russian and this is more their style I guess). You can certainly add abit more liquid to thin it out but it is still going to be a heavier dumpling than the roll out style.

OLD FASHIONED CHICKEN AND DROP DUMPLINGS
A classic southern comfort dish made of stewed chicken with fluffy drop dumplings.

- Using a pastry blender, cut the shortening into the flour until it is mealy; add chives. Set aside in the refrigerator to chill until needed.
- In a large wide pot, add the chicken and top with celery, onion, carrots, chicken stock, chicken base, salt, pepper, rosemary and thyme. Stir to mix well. Place over medium high heat and bring to a boil, reduce heat to simmer and cook about 30 minutes, or until chicken is no longer pink. Strain the stock into another container if desired, returning the broth back to the pot. Cut up the larger chunks of chicken and cut up, returning them to the broth.
- Now we're gonna make a very blond roux. In a separate pan, heat the bacon fat over medium high heat until melted. Whisk in the 3 tablespoons of all purpose flour. Cook, stirring constantly until mixture is bubbly and smooth. Remove from the heat. Scoop out 1/2 cup of the broth from the chicken pot and slowly add to the roux - be careful because it will steam up right away and can easily burn you. Immediately turn the burner down to a medium low simmer and return the pot to the burner; add additional broth, 1/2 cup at a time for a total of 2 cups, stirring constantly until the liquid has been fully incorporated. Add 1/2 cup of milk to roux and blend in.
- Add the peas, if using, and the roux mixture into the hot stock, stirring in well. Bring mixture to a boil, reduce heat to simmer. Retrieve the flour and chive mixture from the fridge, stir in 3/4 cup of milk. Using a cookie scoop, drop scoops of dough into the simmering liquid until all of the dumpling dough has been added. Cover immediately, so that the dumplings begin to steam; simmer on low about 10 minutes before checking. When they are fluffy, insert a toothpick to see if they are done. If not, allow to low simmer until done, without disturbing the dumplings. Taste and adjust seasonings if needed. Carefully scoop broth and a few dumplings into individual serving bowls.
- Cook's Notes: If you have a heat resistant, glass pie plate, use that as a lid when you are ready to drop the dumplings. This will enable you to see when the dumplings fluff up, without releasing the steam. The secret to fluffy dumplings is to keep them at a low simmer, never let them boil, and don't overcook them. Use a wider topped pot and don't overcrowd the dumplings because they will need room to expand. When they look fluffy, test them with a toothpick as you would with a cake, to see if they are done.
- May substitute cooled chicken stock or broth for part of the milk in the dumpling for extra flavor. To thicken the stew, use up to 1 cup of instant potato flakes, stirred in 1/2 cup at a time. Stir in the first 1/2 and cook for about 5 minutes; repeat with the second 1/2 cup if more thickening is needed.
- If you make your stock in advance, refrigerate and scoop off the top layer of fat. Use that fat in place of the bacon fat to make a roux. Instead of a roux, you can also substitute a can of undiluted cream of chicken soup.
- For the Slow Cooker: Substitute boneless chicken breasts and/or thighs for ease of preparation. Cut into chunks and add to slow cooker. Whisk together 2 cans of cream of chicken soup with 1-3/4 cup of low sodium chicken broth and 1 cup of water. Add the pepper, rosemary and thyme above, omitting the salt. Cover and cook on low for 7 hours. Turn cooker to high. Prepare dumplings as above and drop into top of broth. Cover and cook another 45 minutes or until dumplings are tender.
- Prefer a rolled or biscuit dumplings? Either one make a fine dumpling too.

- Preheat oven to 375°F.
- Sweat onion, celery, herbs, and cayenne in butter in a covered Dutch oven over medium heat for 5-8 minutes until vegetables are softened. Stir in flour and cook 1 minute; don't worry about clumps.
- Deglaze with wine, whisk in cicken broth, and simmer 15 minutes, or until thickened. Whisk in cream. Add chicken, peas, lemon juice, salt, and pepper; bring to a simmer. Stir carrots, squash and green beans into stew.
- Meanwhile, make the dumpling dough. Warm buttermilk and 3 tablespoons butter in for the dumplings in a saucepan over low heat until butter melts (do not worry if the buttermilk curdles).
- Combine cake flour, parsley, baking powder, and salt in a bowl. Stir buttermilk mixture into dry ingredients to form a wet dough.
- Drop dough onto simmering stew with a cookie scoop or spoon. cover, transfer pot to the oven, and steam 15 minutes, or until a toothpick inserted in the dumplings comes out clean.

GRANDMA ROSIE'S DROP DUMPLINGS
My grandma Rosie always used to put dumplings in our soup when we were little. Now they've become a comfort food. I love to have them in my soup when I'm sick . . . or any time really. This recipe is copied exactly from my grandma's. Sorry about the amounts but trust me . . . it works. It doesn't really have to be exact.

- 1. Heat the 4 tablespoons of butter in a large dutch oven over medium heat. add the onions, celery and carrots and cook for about 5 minutes. Stir in the flour and continue cooking for a couple of minutes to cook out the flour taste. Whisk in the chicken broth and 1/4 cup of skim milk. Add the thyme, bay leaves and salt and pepper to taste. Add the chicken. Cover and simmer about 30 minutes. Discard the bay leaves.
- 2. Right before you are ready to add the dumplings, Melt the remaining 3 tablespoons of butter. Heat the skim milk in the microwave for 1 minute. Add both the butter and the milk to the flour and mix well until smooth.
- 3. Return the stew to a simmer. Add the peas and parsley. Drop golf-ball sized dumplings onto the hot stew. It will make about 18 dumplings. Reduce heat to low, cover and simmer until the dumplings have doubled in size, about 15 minutes.
DROP DUMPLINGS
Steps:
- Sift together flour, baking powder and salt and set aside. Combine egg and milk. Add to dry ingredients, mixing well. Drop by teaspoons into hot chicken broth. Cover and simmer 10-15 minutes. Do not lift cover during cooking. Makes 4 servings.
