I WAS WORKING AT MY RESTURANT AND A CUSTOMER WHICH WAS DIABETIC, CAME TO THE KITCHEN AND ASKED IF I COULD COME UP WITH A SUGAR FREE PIE FOR HIM TO TAKE TO A FAMILY GATHERING, I WAS UP FOR THE CHALLENGE, SO HERE IS THE PIE I CAME UP WITH, I MADE MANY OF THEM. 2 pkg 8 oz low fat cream cheese (room tep. is best)
1 pkg sugar free orange jello (not prepared)
8 oz sugar free cool whip
1 can(s) mandrain oranges (any size) drained
1 short bread, grahm, or chocolate pie crust

Steps:

  • 1. place all ingrediants in a medium bowl, and mix till creamy (when blended i put on high so it will be fluffy)
  • 2. pour into pie crust and place in fridge till cold. for a treat, place in freezer for about an hour.

Found this recipe written down on scratch paper in my Mom's recipe box...I remember it well...she liked to make it because it it was so easy and she could make it ahead when we were expecting company for the week-end.

Number Of Ingredients 6

1 pkg (8 oz.) light cream cheese, softened
1 can(s) (14 0z. can)-sweetened condensed milk, (not evaporated milk)
1 can(s) (6 oz.)frozen orange juice concentrate, thawed
8 oz can(s) mandarin oranges, (drained well & divided)
8 oz. pkg whipped topping, thawed
1 graham cracker pie crust, (9-inch)

Steps:

  • 1. IN: A lg. bowl with electric mixer, mix cream cheese until fluffy. ADD: Sweetened condensed milk and mix well. MIX: In orange juice until smooth and creamy. ADD: 4 oz. (well drained) mandarin oranges until well blended. GENTLY: Stir in whipped topping. ADD: Above ingredients into crust. DECORATE: Top of pie with remaining (well drained), 4 oz. mandarin oranges. Cover with pie carrier cover and refrigerate for 1 hour or overnight. SERVE and ENJOY! PLACE: Covered leftovers back in refrigerator. Serves: 8
