One of my very favorite meals my Gram would make when I was a kid. True comfort food. My beans are my own recipe. Not sure how she made hers, but these come real close. I serve them just like she did, with a side of yummy fried potatoes and favorite bread to soak up the yummy juices. Enjoy!

1 lb dry - large lima beans
6 - 8 c water
1 Tbsp oil
1/2 lb cooked smoked ham, cubed
3 medium stalks celery, chopped
1 large onion, chopped
4 - 5 clove garlic, minced
pinch dried thyme
1 1/2 Tbsp better than buillon ( chicken ) soup base
1 bay leaf
salt & pepper to taste

Steps:

  • 1. Place 8 cups water in a dutch oven and bring to a boil. Once boiling add the bean, and boil for 5 minutes. Turn off burner, cover pot and let sit for 1 hour.
  • 2. Drain and rinse beans.
  • 3. In a med skillet over medium heat add the oil, onion, garlic, celery and ham. Saute until vegetables become tender, about 5 minutes.
  • 4. Place beans back into dutch oven and cover with 6 cups water, making sure all beans are covered. Add the vegetable mixture and thyme. Stir and bring to a boil. Boil for 30 minutes, then lower heat, add bay leaf and simmer until beans are to desired tenderness Add more water as they cook if need be. We like ours thick, not like soup, but want some juice to serve over the potatoes Salt and pepper to taste.
  • 5. In total mine were cooked in 1 1/2 hours after the initial soaking. They are delicious served with fried potatoes and onion, fried in bacon fat. This is exactly how my Gram would serve them.

When my DH and I got married he requested Creamed Lima Beans. I had heard of Creamed Corn before but never limas. I soon found out it was a dish his great aunt prepared for him regularly so I dutifully learned to fix it too. She also used this sauce for creamed peas or carrots.

1 (10 ounce) package frozen lima beans, cooked
water, for cooking lima beans
3 tablespoons butter
3 tablespoons flour
1 1/2-2 cups milk
1 teaspoon sugar
salt and pepper

Steps:

  • Cook lima beans according to package directions; I use the microwave.
  • Melt butter in saucepan, stir in flour and blend well.
  • Add milk, about 1/2 cup at a time, and blend with whisk.
  • Cook over medium heat until thickened.
  • Total amount of milk depends on how thick you prefer the sauce to be.
  • Stir in sugar, salt and pepper.
  • Add cooked, drained lima beans.

SOUTHERN LIMA BEANS WITH HAM



Southern Lima Beans with Ham image

This classic Southern Lima Bean recipe is a delicious side dish or budget-friendly entrée. The rich, smoky butter beans are flavored with a ham hock and slowly simmered until tender!

1 lb. large dried lima beans
2 tablespoons olive oil
2 medium onions, diced
1 stalk celery, diced
4 cloves garlic, minced
1 smoked ham hock, meat scored (about 12 ounces)
1 bay leaf
8 cups water
½ teaspoon kosher salt, or more to taste
½ teaspoon ground black pepper
Garnish: hot sauce; chopped fresh herbs
Optional, for serving: cornbread

Steps:

  • Rinse and sort the beans. Set aside.
  • In a large Dutch oven, heat olive oil over medium-high heat. Add onion and celery; cook, stirring frequently, until soft, about 5-8 minutes. Add garlic and cook for 1 more minute, stirring constantly.
  • Add the rinsed beans, ham hock, bay leaf, water, salt and pepper. Bring to a boil; reduce heat slightly just so that it's at a low boil, and cook for 20 minutes. Reduce heat again just so that the liquid is simmering. Cover and cook for about 1 ½ hours, or until beans are tender. Check the beans after 1 hour, because they may be soft enough at that point if you like your beans a bit more firm. If you prefer the beans really soft and broken down, you may prefer to extend the cooking time to 2 hours. While the beans are cooking, check to occasionally make sure that the beans are covered with water (adding more water, if necessary). Discard bay leaf, remove ham hock from the pot, and shred or chop the meat. Return chopped meat to the pot with the beans. Taste and season with additional salt and pepper, if necessary. Garnish individual servings with hot sauce and herbs; serve with cornbread.

2 slices bacon
1 clove garlic, minced
1/2 teaspoon salt
1/2 teaspoon onion powder

1/8 teaspoon prepared horseradish

  • Saute garlic.

I don't think you'll be sorry you tried them. :) If you want to have more of a buttery flavor,remove the beans from the liquid and place into a bowl then add the final 2 Tablespoons of butter and then salt and pepper to taste. I love lima beans and wanted to make a simple recipe that was tasteful but quick and easy to make. I had made something similar years back but changed it to suit my taste.

1 (10 ounce) package frozen lima beans
2 1/2 cups water
4 garlic cloves, crushed
3 fresh thyme sprigs (leaves only, refer to Note below. Use fresh thyme only, not dried)
1 bay leaf
2 -3 tablespoons extra virgin olive oil (good quality brand, or else it won't taste the same)
1/2 teaspoon sea salt (more or less to taste)
1/4 teaspoon fresh ground black pepper

Steps:

  • Place frozen lima beans in a saucepan. Cover with the water.
  • Add garlic, thyme and bay leaf and stir. Bring to a boil. Cover, reduce heat, and simmer 15 - 20 minutes or until tender.
  • Into a sieve that is place over a bowl, pour off broth. Pour approximately 1/2 - 1 cup of broth back into saucepan with lima beans. Shake any garlic or thyme that sticks to sieve back into the lima bean mixture. Discard bay leaf. Stir in salt and pepper to taste. Evenly pour olive oil over all and stir. Check for seasoning and adjust with salt, pepper, olive oil, if necessary. Serve hot.
  • NOTE: to remove leaves from stem, turn stem upside down and run both index finger and thumb down main stem. This will remove outer stems and leaves. Add outer stems and leaves to dish. Do not chop.

1 lb dried lima beans
3 teaspoons salt
3/4 cup butter (Butter is best, but often I use half butter and half oleo) or 3/4 cup oleo (Butter is best, but often I use half butter and half oleo)
1/2 cup dark brown sugar
1 teaspoon dry mustard
1 tablespoon molasses
1 cup sour cream

Steps:

  • Soak Beans overnight, with plenty of water above the beans. They soak it up!
  • In the morning, drain the beans, cover with water, add 1 tsp salt and cook until slightly tender -- 20-30 minutes. However, you must watch these babies, because they have a big tendency to boil over!Just bring them to a boil (watching them), then lower the heat --- and still watch them!
  • After the beans are cooked, drain again and rinse them under hot water, and place them in a lightly sprayed or greased (oleo) casserole dish.
  • Dab Butter over beans; mix "lightly"! or they get squishy.
  • Stir in Molasses.
  • Finally, pour in sour cream and mix "tenderly".
  • Bake at 350 for one hour. (again, keep an eye on them, I don't think I usually bake them for and entire hour).

1 ½ cups chicken broth
1 (16 ounce) package frozen baby lima beans

Steps:

  • Heat a large saucepan over medium heat, and spray with cooking spray. Saute onions until soft and translucent. Pour in chicken broth, and bring to a boil. Add lima beans, and enough water just to cover. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes, until beans are tender.
