Crunchies- South African Oatmeal Bar- Nutty, buttery, Sweet, and Crunchy - quite a treat these little wonders.

Number Of Ingredients 12

6 ounce (170grams butter)
11/2 tablespoon golden syrup or honey
1 teaspoon baking soda
1/2 cup (100grams granulated sugar)
1/4 cup (50grams brown sugar)
1/2-1 teaspoon salt
1 cup dry shredded coconut
1/3 cup sliced almonds
1 1/2 cups of oats
1 1/4 cup flour
1 teaspoon cinnamon spice
1 teaspoon nutmeg spice

Steps:

  • Prepare a 8x8 or 9x13 baking pan/sheet if you want a thin crunchies - grease or spray with cooking oil. Set aside
  • Melt butter, syrup, brown sugar, sugar and salt in a saucepan, until completely melted. You may do this in a microwave safe bowl. Then add baking soda. Mix.
  • combine all the other ingredients in a large bowl - oatmeal, flour, coconut, sliced almonds and spices. Thoroughly mix.
  • Pour butter mixture into the bowl of oatmeal mixture , mix well.
  • Press mixture into a greased baking pan. You may use parchment paper to smooth it out.
  • Start baking at 325 degrees F for about 10-15 minutes , then finish at 300 degrees for another 10 minutes or until golden brown ,depending on your oven. Start checking after 20 minutes. Remove let it cool completely, then cut in to squares and serve. You may store in an airtight container for up to a week

I first tried these fun crispy cookies at a family picnic when I was a child. Packed with oats, cornflakes and coconut, they quickly became a "regular" at our house. Years later, I still make them for my own family. -Cheryl Johnson, Upper Marlboro, Maryland

1/2 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1 large egg, room temperature
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup quick-cooking oats
1 cup crushed cornflakes
1/2 cup sweetened shredded coconut
FILLING:
6 ounces cream cheese, softened
1-1/2 cups confectioners' sugar
2 cups semisweet chocolate chips, melted

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in egg and vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in the oats, cornflakes and coconut. , Shape into 1-in. balls and place 2 in. apart on greased baking sheets. Flatten with a glass dipped lightly in flour. Bake at 350° for 8-10 minutes or until lightly browned. Remove to wire racks to cool. , For filling, beat cream cheese and sugar until smooth. Beat in chocolate. Spread about 1 tablespoon on half of the cookies and top each with another cookie. Store in refrigerator.

Sweet and Salty Double Nut Toffee Brownie Bars image

4 tablespoons unsalted butter, melted, plus 1/2 cup butter for toffee
2 ounces bittersweet chocolate, melted
1/4 cup granulated sugar
1/4 cup packed dark brown sugar, plus 3/4 cup for toffee
1 teaspoon vanilla extract
1 large fresh egg, slightly beaten
1/2 cup all-purpose flour
3/4 cup chopped quality milk chocolate
2 tablespoons ground almonds
1 cup chopped roasted and salted pecans
1/8 teaspoon Maldon or other sea salt crystals

Steps:

  • Preheat oven to 350 degrees F. Line an 8-inch square metal cake pan with parchment.
  • In large bowl, whisk together 4 tablespoons melted butter and the melted chocolate. Blend in granulated sugar, 1/4 cup brown sugar, and vanilla. Whisk in egg. Then stir in flour. Spread in pan and bake for 15 minutes, remove and leave oven on.
  • Heat 1/2 cup butter and 3/4 cup of the brown sugar in a medium saucepan over medium-high heat. Boil for 2 minutes. Pour over brownie base and bake 7 minutes more. Remove from oven and sprinkle with milk chocolate, let sit 5 minutes, and spread to cover the top. Dust with ground almonds and then pecans. Sprinkle with salt. Press down pecans. Cool, then freeze 30 minutes before cutting. Serve at room temperature.
