DOUBLE CHOCOLATE COVERED CHERRIES

These candies are delectable. Covered first with chocolate and than white chocolate, they are truly decadent! If you're really a chocolate fanatic (like me), try using semisweet chocolate instead of white for the second coating.

Number Of Ingredients 8

1 (10 ounce) jar maraschino cherries (with stems if possible)
3 tablespoons butter, softened
2 tablespoons light corn syrup
1 ounce unsweetened chocolate, melted
2 teaspoons milk
2 cups confectioners' sugar
1 (12 ounce) package white chocolate chips
1 tablespoon shortening or 1/4 paraffin wax block

Steps:

  • Drain cherries on several paper towels and press out excess moisture; allow to drain at least an hour.
  • Fondant: In a medium bowl, combine butter, corn syrup, chocolate and milk; beat until smooth.
  • Stir in confectioner's sugar (mixture will seem dry).
  • When most of the sugar is mixed in, turn out onto counter and knead until smooth.
  • Divide into 24 pieces (about 2 tsp each) and shape into balls.
  • Flatten each ball and mold around cherries, covering cherry completely (leaving stem out).
  • Refrigerate at least an hour or until very cold and very firm.
  • Line large cookie sheet with waxed paper.
  • In a small saucepan over very low heat or in the microwave, melt chips and shortening or wax until smooth.
  • Place pan or bowl over hot water to keep dipping consistency.
  • Holding stems (or use toothpicks if your cherries have no stems), dip covered cherries into melted chocolate and allow excess to drip back into pan or bowl.
  • Place on waxed papered cookie sheet to set.
  • Place in miniture muffin cups if desired and store in tightly covered container or in the refrigerator.

1 1/3 cups whole maraschino cherries, well drained
1 pouch (1 lb 1.5 oz) Betty Crocker™ double chocolate chunk cookie mix
2 tablespoons vegetable oil
1 tablespoon water
1 egg, beaten
1/2 cup chopped macadamia nuts
1 teaspoon powdered sugar

Steps:

  • Heat oven to 375°F. Cut 15 of the maraschino cherries in half; set aside for topping cookies. Chop remaining maraschino cherries.
  • In large bowl, stir cookie mix, oil, water and egg until soft dough forms. Stir in chopped cherries and nuts. Drop dough by rounded teaspoonfuls 2 inches apart on ungreased cookie sheet. Press one cherry half lightly into center of each cookie.
  • Bake 7 to 9 minutes or until set. Cool 2 minutes; remove from cookie sheet to wire rack. Cool completely, about 15 minutes. Before serving, sprinkle with powdered sugar. Store loosely covered at room temperature.

6 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
24 large fresh cherries with stems

Steps:

  • Line baking sheet with waxed paper. Place chocolate in top of double boiler set over barely simmering water (do not allow bottom of pan to touch water); stir until melted and smooth. Remove chocolate from over water. Holding cherry stem, dip 1 cherry halfway into chocolate. Place cherry, chocolate side down, on prepared sheet. Repeat with remaining cherries and chocolate. Chill until chocolate is firm, at least 15 minutes. (Can be made 2 days ahead. Keep chilled.)

2-1/2 cups confectioners' sugar
1/4 cup butter, softened
1 tablespoon 2% milk
1/2 teaspoon almond extract
2 jars (8 ounces each) maraschino cherries with stems, well drained
2 cups semisweet chocolate chips
2 tablespoons shortening

Steps:

  • In a small bowl, combine the sugar, butter, milk and extract. Knead until smooth and pliable. Shape into 1-in. balls and flatten each into a 2-in. circle. , Wrap one circle around each cherry and lightly roll in hands. Place with stems up on waxed paper-lined baking sheet. Cover loosely and refrigerate 4 hours or overnight. , In a microwave, melt chocolate and shortening; stir until smooth. Holding on to the stems, dip cherries into chocolate; allow excess to drip off. Place on waxed paper until set. Store in a covered container. Refrigerate 1-2 weeks before serving.

I love chocolate covered cherries,and these are so easy to make.I make them every Christmas and Valentines Day

Number Of Ingredients 8

1 jar maraschino cherry, drained well
3 tablespoons butter, melted
1/4 cup evaporated milk
1 teaspoon vanilla
1/4 teaspoon salt
4 1/2 cups sifted powdered sugar (, may need more)
1 (12 ounce) bag semi-sweet chocolate chips
2 tablespoons shortening

Steps:

  • Drain cherries,place on paper towels and pat well.
  • Set aside.
  • Place sifted powdered sugar in bowl.
  • Combine melted butter,evaporated milk vanilla,and salt.
  • Pour over powdered sugar and mix well.
  • May need to use hands to form a stiff,not sticky dough.
  • Add more powdered sugar slowly,if need to form dough.
  • Now pinch of a small amount,flatten into a disc and form around each cherry.
  • Pinch off any excess dough.
  • Place cherry on wax paper lined cookie sheets and refrigerate for 1 hour.
  • Melt chocolate chips and shortening over boiling water in double boiler.
  • Dip cherries in chocolate,scraping off excess.
  • Refrigerate until chocolate is hard.
  • (I cheat sometimes and just use the chocolate flavored Almond Bark or candy coating).
