20 ounces elbow macaroni or 20 ounces shell macaroni
2 cups mayonnaise
1 cup dorothy lynch salad dressing
1/2 cup cucumber (unseeded)
2 ounces radishes (optional)
1 1/2 ripe tomatoes, diced (unseeded)
2 tablespoons sugar
1/2 teaspoon salt
3/4 teaspoon pepper

Steps:

  • Cook macaroni. Drain and rinse with cold water.
  • Mix mayo, dressing, sugar, and salt in large bowl.
  • Add vegetables and macaroni. Stir gently.
  • Refrigerate.

2 cups elbow macaroni, or any shape you like
1 cup avocado oil mayonnaise
1/3 cup sweet, tangy tomato-based salad dressing (I use Dorothy Lynch Home Style dressing )
1/3 cup diced onion
1/3 cup diced radishes
1/3 cup frozen peas, defrosted for 10 minutes
Kosher salt and freshly ground black pepper

Steps:

  • Cook the macaroni according to the package directions. Drain the pasta and rinse under cold running water to cool completely. Drain well, put in a large bowl and set aside.
  • Mix the mayonnaise, salad dressing, onion, radishes and peas together in a medium bowl until well combined and evenly distributed. Pour the mixture over the macaroni and fold to combine. Taste and adjust the seasoning with salt and pepper. Serve immediately or cover and refrigerate until ready to serve.

This is my husband's favorite dressing, and it is the best dressing to use in taco salad. The original dressing was made in St. Paul, Nebraska and is sold in the midwest but is becoming more expensive. This recipe is very similar to the store version and uses products I regularly have in my pantry. We love it.

1 (10.75 ounce) can condensed tomato soup
1 cup vegetable oil
¾ cup white sugar
½ cup vinegar
1 teaspoon dry mustard powder
1 teaspoon salt
1 teaspoon celery seeds
¼ teaspoon coarsely ground black pepper
⅛ teaspoon garlic powder
¼ teaspoon cornstarch, or as needed

Steps:

  • Mix tomato soup, vegetable oil, sugar, vinegar, dry mustard, salt, celery seeds, black pepper, and garlic powder in a large jar with a lid. For thicker dressing, stir in cornstarch. Serve immediately or refrigerate overnight for best flavor.

16 ounces shell macaroni, cooked, drained and cooled
1 (4 ounce) can shrimp, drained
1 onion, chopped
2 celery ribs, chopped fine
2 dill pickles, chopped
2 eggs, boiled and chopped
1 cup mayonnaise
1 cup dorothy lynch salad dressing

Steps:

  • Cook macaroni according to package directions, drain and cool.
  • Drain shrimp, chop onion, celery, pickles and boiled eggs; add to macaroni.
  • Mix mayonnaise and Dorothy Lynch dressing. Add to macaroni mixture. Stir well and chill in refrigerator at least 4 hours.

My friend and co-worker, Jody, makes this easy macaroni salad all the time. It was so good, I've adopted it and take it to a lot of family gatherings!

1 (12 ounce) package macaroni noodles
1 ripe tomatoes, diced
1 small cucumber, peeled,seeded,and diced
1 green bell pepper, seeded and diced
1 small onion, diced
1/2 cup Miracle Whip
1 cup dorothy lynch salad dressing (can use more- I like the peppery taste with the veggies)

Steps:

  • Boil macaroni according to package directions and drain well.
  • Allow macaroni to cool.
  • Clean and prepare vegetables as listed (peel, seed, dice, etc.) Mix cooled macaroni, veggies, Miracle Whip and Dorothy Lynch until evely coated.
  • Refrigerate until well chilled.
  • This is best served very cold.

Have made this for years. It is just a common recipe here in Nebraska. Very simple and delicious. Great for a picnic or tailgate as there is no mayonnaise. A link to the dressing recipe will be in the comment right after the recipe.

1 lb salad pasta of your choice
1 small onion, diced
1 small green pepper, diced
2 stalk(s) celery, diced
2 c frozen peas, thawed and drained
2 c diced ham (salami works too)
dorothy lynch salad dressing or other sweet type french dressing (recipe link to follow in comments)
salt and pepper to taste

Steps:

  • 1. Cook pasta according to package directions. Drain and chill with cold water. Drain well. (The cook time is for the pasta.)
  • 2. Combine all other ingredients except dressing and salt and pepper.
  • 3. Add dressing to moisten. Mix well. Chill for several hours. Adjust seasoning and stir before serving.

This is my own macaroni salad. I did not get it from my mother or my grandmother and I did not get it out of a book or off the internet. It is not Amish, Cajun, Mexican or any other description of the various macaroni salads that are posted on the internet. It is my own made up salad. It is designed after my own recipe #20155 that I have posted on Recipezaar (with 121 high reviews, thank you very much to those that have tried it). The dressing is mostly the same, but there are a few other ingredients in this salad that is not in my potato salad. I hope some of you will enjoy it as much as you did the other.

1 lb large elbow macaroni, cooked to desired tenderness
1/2 cup thinly sliced celery
1/4 cup finely diced sweet onion
1 small red sweet bell pepper, finely diced
1/4-1/2 cup sliced pimento stuffed olive
1 1/2 cups mayonnaise (I like half and half) or 1 1/2 cups salad dressing (I like half and half)
2 teaspoons prepared yellow mustard
1 teaspoon apple cider vinegar
1/4 cup sweet pickle relish
2 teaspoons sugar
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon celery seed
1/2 lb bacon, prepared as in Homemade Fresh Bacon Bits

Steps:

  • Mix cooled macaroni, celery, onions, bell pepper and green olives together in a large bowl.
  • In a separate bowl mix together the mayonnaise, mustard, vinegar, pickle relish, sugar, salt, pepper and celery seed, stirring well.
  • Stir dressing into the macaroni mixture.
  • Stir in the crumbled bacon.
  • Serve chilled.
  • For another variation, omit the green olives, add sliced black olives and a container of grape tomatoes.
  • For a meal type salad, add diced cooked chicken or tuna fish.

1 c oil
3/4 c sugar
1/2 c vinegar
1 tsp dry mustard
1 tsp salt
1 tsp celery seed
1/4 tsp ground black pepper
1/4 tsp garlic powder

Steps:

  • 1. Place all ingredients in a jar and shake well to combine.
  • 2. Refrigerate overnight and serve on your favorite salad.
  • 3. This is delicious on any salad greens and makes a great macaroni salad with green peppers, onions, celery, peas, ham, and macaroni. It is also used on Taco Salad in this area. Yum!
  • 4. This is what I grew up with served on salad at school lunch. It is just how we rolled here in Nebraska! And I am proud of it.
