2 c flour
1 c cocoa
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt (super fine)
1 3/4 c sugar (super fine)
TO MAKE MIX
3 eggs
1/4 c shortening
1 1/3 c water

Steps:

  • 1. run salt and sugar through food processor until super fine. mix all dry cake ingredients and run through sifter untill completely blended. store in mason jar or baggie marked with contents and date.
  • 2. Mix all ingredients to make cake bake as foolows at 350* greased pans 13x9" 35-40 minutes 8-9" rounds 30-35 minutes Cupcakes 18-20 minutes Bundt 45-50 minutes
  • 3. Enjoy the savings! Note- For german chocolate I powder 6 german chocolate squares and replace the same amount of cocoa before mixing everything!

Homemade Chocolate Cake Mix is an easy, from-scratch pantry staple for whipping up light, moist chocolate cake or cupcakes in a matter of minutes!

2 cups sugar
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs (at room temperature)
1 cup milk (at room temperature)
1/2 cup light vegetable oil (such as sunflower or safflower)
2 teaspoons pure vanilla extract
1 cup boiling water

Steps:

  • In a large bowl, whisk together the sugar, flour, cocoa powder, baking powder, baking soda, and salt until very well combined. Transfer to a gallon-sized plastic baggie. (Repeat for as many cake mixes as you wish to assemble.)
  • Adjust oven rack to the center position and preheat oven to 350°F. Grease and flour a (9- by 13-inch) rectangular baking pan, OR two (9-inch) round baking pans, OR line 24 muffins cups with paper baking liners.
  • Pour the Homemade Chocolate Cake Mix into a large bowl. Blend in the eggs, milk, oil, and vanilla using an electric mixer. Beat on medium speed for 2 minutes, scraping the bowl as needed. Gradually stir in the boiling water (1/4 cup at a time) until the batter is well-combined (it will be thin and runny).
  • Pour the batter into the prepared pans, dividing evenly. Bake until a wooden toothpick inserted in the center comes out clean, using these times as a guideline: one (9- by 13-inch) rectangular baking pan = 35 to 40 minutes; two (9-inch) round baking pans = 30 to 35 minutes; 24 cupcakes = 20 to 22 minutes.
  • Cool cake(s) in pans for 10 minutes (only 5 minutes for cupcakes) before turning out onto a wire rack. Allow to cool completely before frosting.

3 cups all-purpose flour
2 cups sugar
1/3 cup baking cocoa
2 teaspoons baking soda
1 teaspoon salt
2 cups water
3/4 cup vegetable oil
2 teaspoons vanilla extract
2 teaspoons white vinegar
CHOCOLATE CREAM CHEESE FROSTING:
3 ounces cream cheese, softened
1/4 cup butter, softened
2 cups confectioners' sugar
1/3 cup baking cocoa
Dash salt
3 tablespoons 2% milk
1/2 teaspoon vanilla extract

Steps:

  • In a large bowl, combine the first 5 ingredients. Add the water, oil, vanilla and vinegar; mix well (batter will be thin). , Pour into a greased 13x9-in. baking pan. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool completely. , For frosting, in a large bowl, beat cream cheese and butter until fluffy. Add the confectioners' sugar, cocoa, salt, milk and vanilla; mix well. Spread over cake. Store in the refrigerator.
