2 tablespoons margarine
1 tomatoes, peeled and chopped
2 green onions, finely chopped
1/3 cup mushroom, sliced
1/4 cup boiled ham, chopped
1/2 teaspoon basil
1/2 teaspoon salt
4 egg whites
4 egg yolks
4 tablespoons sour cream
1/4 cup cheddar cheese, shredded

Steps:

  • Melt margarine in a skillet no longer than 8 inches. Saute tomato, green onion, mushrooms and ham for 5 minutes. Season with basil.
  • Add salt to egg whites and beat until stiff.
  • Beat egg yolks until thick and lemon colored.
  • Fold egg whites and yolks together. Fold in sour cream, cheese and vegetable-ham mixture.
  • Pour into lightly greased skillet. Cook over low heat for 3 to 4 minutes until omelet is lightly browned on the bottom, then run skillet under broiler.
  • Cook until omelet is puffy and golden brown on top. Cut omelet in half and serve on warm plates, please. Serves 2.

Dinner Omelet is a simple and easy egg recipe for dinner for two people full of delicious ingredients like tomatoes and mushrooms and cheese.

4 eggs
1/4 cup milk
1/8 teaspoon salt
pepper to taste
1 tablespoon butter
1/2 cup coarsely chopped mushrooms
1/2 cup chopped tomato
3 tablespoons minced green onion
1/2 cup shredded Havarti cheese

Steps:

  • Combine the eggs, milk, salt, and pepper in a medium bowl and beat well to mix.Place a medium nonstick skillet over medium-high heat and melt butter in it.Pour egg mixture into the skillet.Reduce heat to low and cook eggs, pulling eggs to center of the pan as they cook with a rubber spatula and gently lifting cooked portion to let the uncooked egg mixture flow underneath.​​​Cook until eggs are set, and the bottom is light golden brown, but the top is still shiny.Sprinkle the vegetables and cheese evenly over the eggs. Fold omelet in half using the rubber spatula, cover, and let cook 1 minute longer to melt cheese. Cut in half and serve immediately.

2 cups ORE-IDA Shredded Hash Brown Potatoes
1 cup frozen mixed vegetables (carrots, corn, green beans, peas), thawed
6 eggs, beaten
2 Tbsp. milk
5 Tbsp. KRAFT Grated Parmesan Cheese, divided

Steps:

  • Heat oil in large nonstick skillet on medium-high heat. Add potatoes and vegetables; cook 7 min. or until potatoes are tender, stirring frequently.
  • Mix eggs, milk and 4 Tbsp. Parmesan cheese until blended. Pour egg mixture evenly over potatoes and vegetables; cover.
  • Cook on medium-low heat 15 min. or until eggs are almost set. Sprinkle with remaining cheese; cover. Let stand 5 min.
