WISCONSIN DINER GRIDDLE CAKES



Wisconsin Diner Griddle Cakes image

Made with strawberry yogurt and buttermilk, these are light and tender and very flavorful. Have also tried with vanilla yogurt, also delicious. From the Wisconsin Milk Marketing Board, changed to my tastes. In Wisconsin these would be served with butter and real maple syrup.

Number Of Ingredients 10

1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 tablespoon sugar
1/8 teaspoon salt
1 egg
1/2 cup strawberry yogurt
1 cup buttermilk
2 tablespoons butter, melted
2 tablespoons butter, for greasing griddle

Steps:

  • Combine first five dry ingredients.
  • In another bowl whisk the egg, yogurt, buttermilk and melted butter. Add the dry ingredients, stirring just until combined.
  • Heat griddle and 1 tablespoons butter over medium-low heat.
  • Pour 1/4 cup batter onto griddle for each pancake. Cook 2 minutes, until golden (these won't bubble as much as regular pancakes so watch closely), flip and cook 2 minutes more, until the center springs back when pressed.
  • Use additional 1 tablespoons butter to grease griddle for next batch, if necessary.

These pancakes are soft in the middle and alittle crispy on the edges when made on a cast iron surface.

Number Of Ingredients 6

2 tsp baking soda
2 c buttermilk or sour milk
2 c sweet milk ( i use whole milk)
2 c white flour
1 tsp salt
3 Tbsp melted butter

Steps:

  • 1. Add soda to sour milk and stir well. Add sweet milk. In a separate bowl sift together flour and salt. Thoroughly beat together milk and flour mixtures.
  • 2. Add melted butter and beat once more. Fry on a well-greased griddle at medium heat. Pour out batter for 6 inch cakes. Flip when top is covered in popping bubbles, about 3 to 5 minutes. Cakes should be light and golden. Serve immediately with butter and maple syrup or I also mix up soft butter and strawberry or blackberry jam and spread that on my hot griddle cakes. Yum!
