Seared Macadamia Crusted Tuna image

2 pound sushi-grade tuna
Salt and freshly ground black pepper
1 egg white, beaten
1 1/2 cups macadamia nuts, chopped
1 to 2 tablespoons canola oil

Steps:

  • Cut tuna into 6 blocks. Salt and pepper all sides of the fish. Roll in the egg white and then into the nuts. Sear in a lightly oiled cast iron pan to desired doneness.
