This zesty cheese ring can be also made as a log. The jelly may seem strange, but it is what makes this appetizer delicious.

1 pound shredded Cheddar cheese
¾ cup mayonnaise
5 medium green onions, finely chopped (white parts only)
1 pinch cayenne pepper
1 pinch garlic salt, or to taste
1 (10 ounce) jar raspberry preserves
1 (10 ounce) package thin wheat crackers

Steps:

  • In a medium bowl, mix together the Cheddar cheese, mayonnaise, green onion, cayenne pepper, and garlic salt until well blended. Coat a ring shaped gelatin mold generously with cooking spray. Spoon the cheese mixture into the mold, cover, and chill for 2 to 3 hours to set.
  • Unmold onto a serving plate, and pour raspberry preserves into the center. Arrange wheat crackers around the outside of the ring.

This is a favorite of the families in our town! This treat seems to show up at EVERY function and there is never any leftover! Some serve it topped with jam or jelly, but I find it is best with a raspberry chipotle sauce. Super easy, pretty presentation and incredibly yummy.

4 cups finely shredded sharp cheddar cheese
2 cups chopped pecans
1/2-3/4 cup chopped green onion (depends on personal taste)
2 cups mayonnaise
1/2-3/4 cup raspberry chipotle sauce

Steps:

  • Place cheese, pecans and green onions in a large mixing bowl and stir to mix.
  • Add mayonnaise and stir until throughly and evenly mixed. (May wish to use a hard, scoop type spatula.).
  • Spray tube or bundt pan lightly with no-stick cooking spray.
  • Scoop cheese mixture and place it into the pan, gently pressing mixture evenly around tube.
  • Refrigerate at least 4 hours before serving.
  • To serve:.
  • Invert the ring onto a plate and drizzle raspberry chipotle sauce (I use Fischer Weiser "The Original Roasted Raspberry Chipotle Sauce) evenly over the ring. May add more sauce if needed. Garnish with parsley, fresh raspberries and/or sprigs of mint if desired. Also looks very pretty sitting on a bed of ruffled lettuce.
  • NOTE: If the ring does not come out easily, run hot water in the kitchen sink and let the pan sit in water for a couple of minutes. Make sure the water is not too deep or it will run into the cheese ring!

1-1/2 cups sharp shredded cheddar cheese
1/2 cup chopped dill pickles
2 green onions, finely chopped
2 tablespoons mayonnaise
1 teaspoon Worcestershire sauce
1 cup chopped walnuts
1/4 cup minced fresh parsley
Pretzel sticks or assorted crackers

Steps:

  • In a small mixing bowl, combine the first 6 ingredients. Shape tablespoons of cheese mixture into balls. Roll in walnuts and parsley. Cover and refrigerate for 20 minutes before serving. Serve with pretzel sticks or crackers.

1 cup dill pickle relish, drained
1/4 cup finely chopped onion
1-1/2 cups shredded cheddar cheese

1 lb sharp cheddar cheese, finely grated
1 cup Hellmann's mayonnaise
1 cup chopped pecans
1/2 cup finely chopped onion
fresh ground pepper
1 dash cayenne pepper
1 (12 ounce) jar strawberry preserves
cracker, of your choice (I like whole grain crackers)

Steps:

  • Combine cheese with mayo, chopped nuts and onions.
  • Mix in black pepper and cayenne, and blend thoroughly.
  • Press into a 3-cup ring mold.
  • Refrigerate for at least 2 hours.
  • To serve, dip mold into a pan of hot water for 15-20 seconds before turning out onto a serving platter. Fill center with strawberry preserves. Serve with crackers of your choice.

This is a savory snack to be enjoyed as an appetizer or as a side for a main meal.

2 can(s) hungry jack biscuits
1 teaspoon(s) garlic powder
1 1/2 teaspoon(s) dill weed
1 stick(s) real butter
1 1/2 cup(s) grated parmesan cheese
1 - bundt pan sprayed lightly with cooking spray.

Steps:

  • In a microwave proof measuring cup, melt butter until completely melted.Carefully remove from microwave and add garlic powder and dill weed.Slowly stir in parmesan cheese and blend well. Open one can of biscuits at a time and seperate each biscuit from the other. Cut each biscuit in half. *(Note) Make sure biscuits are chilled before cutting, this makes cutting easier.
  • Lightly spray a nonstick bundt pan with cooking spray.Lay in a staggered fashion the first can of cut biscuits completely and evenly around the bottom of the pan. Stir butter and cheese mixture as it may have separated from sitting. Pour half of the mixture over the top of the first layer of biscuits.
  • Repeat by cutting the second can of biscuits in half. When placing the second can of cut biscuits on the first layer, also stagger these so there will be room for the butter and cheese mixture to melt between the layers. Bake at 350* for about 30 minutes. All biscuits should be cooked and golden brown. When done remove from oven and turn onto large round platter upside down. Enjoy! Serves 8-10.
