Simple, delicious, tangy chicken breasts baked in a melody of spices using fresh ingredients. After baking, garnish with fresh herbs such as thyme sprigs, if desired. Best served over a bed of rice.

4 (5 ounce) boneless chicken breasts
4 tablespoons honey
5 lemons
4 teaspoons dried dill weed
1 teaspoon dried oregano
1 teaspoon dried basil
½ teaspoon garlic powder
salt and freshly ground black pepper to taste
4 tablespoons butter

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Set chicken breasts into a shallow casserole dish and brush 1 tablespoon honey onto each breast.
  • Zest 1 lemon, then cut in half. Slice remaining lemons. Squeeze juice from 1 lemon over the tops of the chicken breasts and sprinkle with lemon zest. Combine dill, oregano, basil, garlic powder, salt, and pepper in a small bowl and sprinkle spices on top of the chicken. Cover chicken breasts with lemon slices and set 1 tablespoon butter on each piece of chicken breast.
  • Bake until chicken is no longer pink in the center and the juices run clear, about 40 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

2 chicken breasts (skinless & boneless)
1 tablespoon oil
1/2 cup white wine or 1/2 cup chicken stock
1/2-1 teaspoon dried dill or 1 tablespoon chopped fresh dill
1 grated lemon, juice and rind of
1/2 teaspoon lemon pepper seasoning
chopped parsley or green spring onion (to garnish)

Steps:

  • Heat the oil in a non stick pan and cook the chicken over medium heat until a nice golden brown on each side.
  • Takes about 8mins in total.
  • Meanwhile mix wine, dill, lemon rind, juice and lemon pepper seasoning together.
  • Pour over browned chicken and heat to boiling, then reduce and simmer for about 15mins.
  • Remove chicken from pan and bring sauce back to the boil to reduce to about half.
  • Pour over chicken and garnish with the parsley or spring onion.
  • Serve over boiled or steamed rice with a salad on the side if liked.

2 boneless skinless chicken breasts
1 tablespoon all-purpose flour
1 pinch salt
1 pinch pepper
1 teaspoon butter
1 teaspoon vegetable oil
1/4 cup white wine or 1/4 cup chicken stock
1/3 cup whipping cream
1 tablespoon fresh dill
2 teaspoons chopped fresh chives or 2 teaspoons green onions
1/2 teaspoon lemon juice
lemon slice (to garnish)
dill sprigs (to garnish)

Steps:

  • Dredge the chicken breasts lightly in flour; season with a pinch each of salt and pepper.
  • In a skillet, heat butter and oil over medium-high heat; cook chicken, turning once, for about 6 minutes or until golden brown and no longer pink inside.
  • Remove from the pan and keep warm.
  • Pour off all the fat from the pan.
  • Pour in the wine and bring to a boil over high heat; cook, stirring to scrape up any brown bits in the pan, for about 1 minute or until reduced and syrupy.
  • Add the cream; boil for about 1 minute or until thick enough to coat a spoon.
  • Stir in the dill, chives, lemon juice, and salt and pepper to taste.
  • Stir any accumulated juices from the chicken back into the pan; pour the sauce over the chicken.
  • Garnish with lemon slices and dill sprigs.

I used another recipe for inspiration and came up with this recipe that is my own creation. The sauteed chicken breasts are topped with a rich and flavorful dill caper cream sauce. This sauce would also be wonderful over whitefish fillets. If you use dried herbs, reduce the quantity to 1/3, as dried herbs are more potent.

4 boneless chicken breast halves, pounded very thin
¼ cup all-purpose flour
salt and ground black pepper to taste
3 tablespoons butter
3 cloves garlic, minced
½ cup white wine
1 cup heavy whipping cream
2 ½ tablespoons lemon juice
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh parsley
2 teaspoons dried dill weed

Steps:

  • Dredge chicken breasts in flour and season with salt and pepper
  • Melt butter in a large skillet over medium-low heat. Add garlic and cook until fragrant, about 2 minutes. Add chicken to skillet and cook over medium-high heat until chicken is no longer pink in the center and the juices run clear, about 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove chicken from skillet, cover in aluminum foil, and keep warm.
  • Pour white wine into skillet and deglaze pan by scraping up all the brown bits from the bottom. Stir in cream, lemon juice, basil, parsley, dill, and thyme; bring to a boil. Reduce heat to medium-low. Cook, whisking constantly until sauce is reduced and has a creamy consistency, 3 to 5 minutes. Stir capers into sauce and heat for 1 to 2 minutes more.
  • Plate chicken breasts and spoon sauce on top.

5 slices bacon
1 shallot, chopped
nonstick cooking spray
5 boneless, skinless chicken breasts
¾ cup ricotta cheese
¾ teaspoon garlic powder
2 tablespoons butter
1 tablespoon all-purpose flour
1 cup chicken broth
¼ cup heavy cream
3 tablespoons lemon juice
2 tablespoons dry white wine
1 tablespoon chopped fresh dill

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Transfer bacon to a paper-towel lined plate to drain, leaving bacon grease in the skillet. Chop bacon when cool enough to handle. Add shallot to bacon grease in the skillet and cook over medium-low heat until caramelized, 5 to 10 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Coat a glass casserole dish with cooking spray.
  • Place the tip of a sharp knife 1 inch from the top of a chicken breast. Cut a shallow slice lengthwise down the center, stopping 1 inch from the bottom. Cut shallow slices horizontally across the top and bottom of the slice. Repeat with remaining chicken breasts.
  • Combine chopped bacon, caramelized shallot, ricotta cheese, and garlic powder in a small bowl. Stuff each chicken breast with 2 to 3 tablespoons of the ricotta mixture and place in the prepared casserole dish.
  • Cook in the preheated oven for 25 minutes.
  • Meanwhile, melt butter in a saucepan over medium-high heat. Add flour and whisk to create a roux. Slowly pour in chicken broth, stirring constantly until smooth. Add in cream, lemon juice, white wine, and dill. Cook, stirring continuously, until slightly thickened, about 5 minutes.
  • Remove chicken from the oven. Pour sauce over chicken breasts, return to the oven, and cook until chicken is no longer pink in the center and the juices run clear, about 10 more minutes.
  • Set an oven rack about 6 inches from the heat source and turn on the oven's broiler. Broil chicken until slightly golden, about 3 minutes.

1 cup plain yogurt
1 tablespoon grated onion
1/4 cup minced fresh dill

  • Place grated cucumber in a strainer and sprinkle with salt. Let drain 15-30 minutes.

1 onion, chopped
1 bay leaf

2/3 cup sour cream
2 tablespoons all-purpose flour
1 tablespoon lemon juice
1 pinch ground cloves
1 pinch ground allspice
1 pinch pepper
1/3 cup pickle, diced
1/4 cup fresh parsley, chopped

Steps:

  • In shallow saucepan, bring 3 cups water and salt to boil.
  • Add carrots, celery, onion and bay leaf; cook for 4 minutes or until tender. Using a slotted spoon, transfer vegetables to bowl; set aside.
  • Add chicken to pan; bring to simmer.
  • Cover and simmer over medium-low heat, turning once, for about 12 minutes or until no longer pink inside.
  • Discard bay leaf.
  • With slotted spoon, transfer chicken to serving plate and keep warm.

4 boneless skinless chicken breasts (about 1 1/3 pounds in all)

4 carrots, quartered and cut into 2-inch lengths

  • In a large stainless-steel frying pan, heat 1 tablespoon of oil over moderate heat. Season the chicken breasts with 1/4 teaspoon salt and 1/8 teaspoon pepper and add to the pan. Cook until browned, about 5 minutes. Turn the chicken; add the broth, dill, and 1 1/4 teaspoons salt. Bring to a simmer, reduce the heat, and simmer, partially covered, until the chicken is just done, about 4 minutes. Remove the chicken and cover lightly with aluminum foil to keep warm. 4 boneless skinless chicken breasts
1/2 cup salted butter
4 tablespoons lime juice (the store-bought kind)
3 -4 limes
3 tablespoons dill weed
1 teaspoon minced garlic (to taste)
salt and pepper (to taste)

Steps:

  • Salt and pepper chicken breasts, and sprinkle both sides with a little dill weed.
  • Heat large skillet on medium heat.
  • Melt 1/2 stick of butter in skillet, garlic, salt & pepper, 1T of dill weed, 2T lime juice and the juice of 1.5-2 limes.
  • Add chicken breasts, over medium heat cook approximately 6-8 minutes per side or until done.
  • In seperate smaller skillet combine the other 1/2 stick of butter, 1.5T dillweed, 2T lime juice and juice of 1.5 lime (save at least 1/2 of a lime for garnish). Heat over low heat until combined and melted.
  • Pour sauce from second skillet over plated chicken breasts.
  • Garnish with lime slices. Slice off a thin circle of lime. Cut 1/2 down center and then pull ends in opposite directions to create a spiral like shape.
  • I serve this dish with rice or parmesan angel hair pasta and a vegetable.
