SUGAR FREE OATMEAL RAISIN SPICE COOKIES MIX IN A JAR
My personal version of a recipe I found on www.budget101.com. I wanted to do more than just have a good sugar free cookie since the starchy carbs in the flour will also jack blood sugar. This version comes out fantastic! They are more cake like than a standard crisp cookie and stay wonderfully moist in a cookie jar. Not that they will actually last long enough to worry.

Steps:
- Carefully measure each ingredient into layers in a 1 quart jar. Re-used glass ice tea jars work great as well. Judicious us of a slim rolled paper cone does wonders to keep the layers clean. If mix is to be shipped ingredients may be measured into a clear plastic disposable pastry bag or decorative food safe cello bag to reduce shipping weight and then carefully tied closed.
- Be sure to attach instruction card or label with the following directions: Combine above listed ingredients (from the list of "additionally to make cookies from mix") with 1 package of "Sugar Free Oatmeal Cookie Mix". Drop by cookie scoopfuls 1" - 2" apart onto parchment lined baking sheets. Bake 10 - 15 minutes at 350oF. Cookies do not spread much so will still be rather round and cake like. Allow to cool 5 minutes on baking sheets before carefully removing to cooling racks to completely cool. Store in a cool dry place.

NO SUGAR ADDED OATMEAL AND RAISIN COOKIES
Steps:
- Preheat your oven to 350. Prep a pan for nonstick- I use parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and ground cinnamon. Set this bowl aside.
- Now in a mixing bowl, cream together the granular sugar alternative and the butter. Then add the vanilla and the eggs, gently stirring them into the mixing bowl
- For the next step, we will add the dry ingredients from the first bowl (flour etc) to the mixing bowl. Do this by adding half of the dry ingredients at a time, mixing gently between additions. Then continue mixing the cookie dough until the ingredients are mixed together.
- Next, stir in the oatmeal and raisins by hand. Bake these cookies for 10-12 minutes or until the edges begin to brown

DIABETIC OATMEAL-RAISIN COOKIES
This is my absolute favorite homemade cookie in the whole world! When I make a batch, I have to hide them, give part of them away, and basically lock them in the cabinet. They just don't last. I got so tired of not being able to eat the regular ones from the Elves in the magic tree, so I adapted a really good recipe. I hope you like them as much as I do.

Steps:
- Preheat the oven to 325 degrees.
- Mix the flour with the cinnamon.
- Cream the butter and both the sugars until fluffy. Add the egg, milk, and vanilla. Gradually add the flour mixture.
- Stir in oats and raisins.
- Drop by teaspoonfuls if small cookies are desired, tablespoons if larger cookies are desired onto parchment paper (this stuff is reusable - one sheet will do the whole batch).
- Bake until golden brown, 10-12 minutes. Cool on wire racks.
SUGAR FREE OATMEAL RAISIN COOKIES
I have not tried this recipe. I got this recipe from Group Recipes. You can also layer these ingredients and put in a jar for gift giving with the instructions attached.

- Grease cookie sheet.
- Mix 2/3 cup melted butter, 4 egg whites, 1/2 cup skim milk and 1 teaspoon vanilla extract.
- Add oats and Splenda, flour, salt, cinnamon and baking powder to the butter mixture.
- Drop by teaspoons onto cookie sheet 1-2 inches apart.
- Bake 10-15 minutes.

SUGAR-FREE OATMEAL BANANA RAISIN COOKIES
I was searching for something sugar-free to take to a bake sale, and came across a recipe similar to this online. This is my modified version of that recipe. These sold quickly at the bake sale! They have a granola-like appearance and are soft and chewy. A little cinnamon added in might be good, too.

- 1. You'll need a 1 quart mason jar,wide mouth is easier to fill and empty. Mix flour with salt and baking powder. Fill bottom of the jar with oatmeal, then flour, raisins and splenda on top. Pack down ingredients after every addition. Don't forget to Attach following tag to the jar: Sugar Free Oatmeal Raisin Cookies Preheat oven to 350 degrees F. In a large bowl mix 2/3 cup melted butter, 4 egg whites, 1/2 cup skim milk and 1 tsp. vanilla. Add contents of jar and mix until well blended. Drop by teaspoonfuls onto greased cookie sheets, about 2 inches apart. Bake 12-15 minutes. Cool on sheets for 5 minutes then remove to racks to finish cooling.
