DIABETIC SWEET/SOUR CUCUMBER SALAD
My mother used to throw together something similar to this before my dad became diabetic. We have altered it to fit his diet. It's a nice light addition to various meals, especially a summer lunch

Steps:
- Peel and slice cucumber and onion.
- Set vegetables aside.
- Mix Splenda, Vinegar and Pepper (taste to see what is the right amount of seasoning for you).
- Add vegetables to sweet/sour dressing.
- Cover and refridgerate for 1 hour to allows flavors to blend.
DIABETIC DILL SWEET CUCUMBER SALAD
It is a variation on a cucumber salad my grandmother always makes in the late spring and summer. Of course, she uses real dill out of her garden. In any case, my dad is now diabetic and so we made some substitutions. It is a refreshing addition to any meal.

Steps:
- Peel and slice the two cucumbers and slice the onion.
- Set aside cucumber and onion.
- Mix together fat free sour cream, Splenda and dill (add more Splenda if you desire it to be more sweet).
- Add the vegetables to the sweet dressing.
- Cover and refrigerate for 1 hour to let flavors blend.

Cool, delicious cucumber salad. For a pretty salad, peel only half of each cucumber, leaving strips of skin on each. Don't make the vinegar solution first and then chop the cucumber because it's important that the vinegar solution be hot to ensure proper flavoring.

- Toss together the cucumbers and onion in a large bowl. Combine the vinegar, water and sugar in a saucepan over medium-high heat. Bring to a boil, and pour over the cucumber and onions. Stir in dill, cover, and refrigerate until cold. This can also be eaten at room temperature, but be sure to allow the cucumbers to marinate for at least 1 hour.
