DEVILED CRAB WITH SHERRY SAUCE



Deviled Crab with Sherry Sauce image

Number Of Ingredients 14

2 lb cooked king crab legs in shell, thawed if frozen and shells split lengthwise
1/2 stick (1/4 cup) unsalted butter
2 tablespoons all-purpose flour
whole milk
1 large garlic clove, lightly crushed
2 large egg yolks
1/3 cup medium-dry Sherry
1/2 teaspoon dry mustard
1/8 teaspoon freshly grated nutmeg
1/8 teaspoon cayenne
1/2 teaspoon salt
2 tablespoons finely chopped fresh flat-leaf parsley
1/4 cup fine dry bread crumbs
1/4 cup finely grated Parmigiano-Reggiano (1/2 oz)

Steps:

  • Preheat oven to 450°F.
  • Remove crabmeat from shell, discarding cartilage, and cut meat into 1/2-inch pieces.
  • Melt 2 tablespoons butter in a 1 1/2-quart heavy saucepan over moderately low heat, then add flour and cook, whisking, 2 minutes. Add milk in a slow stream, whisking, then add garlic and bring to a boil, whisking. Reduce heat and simmer, whisking, until béchamel is thickened, about 3 minutes. Remove from heat and discard garlic.
  • Whisk together yolks, Sherry, mustard, nutmeg, cayenne, and salt in a bowl, then add hot béchamel in a slow stream, whisking. Pour mixture into saucepan and cook over very low heat, whisking constantly, until an instant-read thermometer registers 160°F, about 2 minutes. Remove from heat and gently stir in crabmeat and parsley. Divide mixture among 6 (4-ounce) ramekins.
  • Melt remaining 2 tablespoons butter and cool slightly. Stir together melted butter, bread crumbs, and cheese with a fork, then sprinkle over crab. Put ramekins in a shallow baking pan and bake in upper third of oven until crab is bubbling and crumbs are golden brown, about 5 minutes.

DEVILED EGGS WITH BACON AND HOT SAUCE



Deviled Eggs with Bacon and Hot Sauce image

12 large eggs
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 tablespoon apple cider vinegar
1 teaspoon hot sauce, such as Tabasco
1/2 teaspoon paprika, plus additional for dusting
Juice from 1/2 large lemon
Kosher salt and freshly ground black pepper
1/3 cup heavy cream
3 scallions, thinly sliced, green and white parts separated
Coarse sea salt, for garnish
8 strips bacon, cut into thin strips and cooked crispy, warm

Steps:

  • Gently place the eggs in a medium pot of boiling water. Reduce the heat, cover and cook for 11 minutes. Gently pour off the hot water and run cool water over the eggs until they feel cool to the touch.
  • Gently crack the egg around the shell and peel the eggs. If necessary, rinse quickly under cool water to remove any small shell bits; dry them off thoroughly. Using a sharp knife, cut the eggs in half lengthwise, wiping the blade between each egg. Remove the yolks from the centers. Push the yolks through a strainer into a medium bowl. Arrange the egg white halves on a platter.
  • Use a whisk to blend the egg yolks with the mayonnaise, mustard, Worcestershire, vinegar, hot sauce, paprika and lemon juice. Season with salt.
  • Whip the cream in a separate bowl until it holds medium (but still fairly soft) peaks. Using a rubber spatula, gently fold the whipped cream into the yolk mixture. Taste for seasoning. Spoon the egg yolk mixture into a pastry bag fitted with a fluted tip or a resealable plastic bag with one of the bottom corners cut off.
  • Sprinkle the egg whites with the scallion whites, coarse sea salt and pepper. Fill a tea strainer with some extra paprika and lightly dust the whites with an even layer. Fill the hollows in the egg whites with the yolk mixture. Top with the scallion greens. Refrigerate until ready to serve. Just before serving, top with the bacon.

Grilled Prime Rib Bones With Deviled Mustard-Horseradish Sauce image

The sauce for this must be made a day ahead and refrigerated overnight to blend flavors, then the ribs have to marinade in the sauce 8-24 hours, so plan a day ahead! This sauce has a definite "kick" to it, but you can adjust the cayenne, hot sauce and horseradish to taste.

5 lbs prime rib beef bones
seasoning salt
pepper
4 tablespoons oil
3 tablespoons butter
1 large onion, finely chopped
3 tablespoons fresh minced garlic
3 tablespoons brown sugar
2 tablespoons lemon juice
2 teaspoons dried thyme
1/4 teaspoon cayenne pepper (can use more)
1/3 cup Dijon mustard
1/3 cup yellow mustard (use a grainy mustard for this)
1 tablespoon Worcestershire sauce
1/4 cup horseradish (can use more to taste)
2 teaspoons seasoning salt
black pepper
1 teaspoon louisiana hot sauce (or to taste)

Steps:

  • Make this sauce a day or even days ahead and cool.
  • For the sauce, heat the oil and butter over medium-high heat in a heavy saucepan.
  • Saute the onions for about 5 minutes until softened.
  • Add in the minced garlic, brown sugar, lemon juice, thyme and cayenne pepper; cook stirring for about 3 minutes.
  • In a bowl, whisk together Dijon mustard, yellow mustard, Worcestershire sauce, horseradish, salt, pepper and hot sauce; add into the onion/garlic mixture; mix to combine with a wooden spoon and bring to a simmer.
  • Cook/simmer the sauce for about 30 minutes over very low heat to blend flavors, adjusting salt, cayenne pepper and hot sauce.
  • Cool the sauce to room temperature then refrigerate overnight to blend the flavors.
  • The following day, in a large dish arrange the beef ribs in a single layer.
  • Pour the cooled sauce over the ribs and turn to coat on both sides, using clean hands to rub the sauce well over all the meat.
  • Cover and refrigerate for a minimum of 8-24 hours.
  • When ready to grill reserve the marinade.
  • Season the ribs with seasoning salt and pepper.
  • Grill over medium heat turning occasionally and brushing with the marinade.
  • Delicious!

This one was given to me by mother in law in 1996. Recommended for crumbed meats or a steak. Serving size will depend on how much sauce you like, used 6 as a guideline.

1 1/2 tablespoons Worcestershire sauce
1 teaspoon chutney
1 teaspoon malt vinegar

3/4 cup beef stock or 3/4 cup vegetable stock
2 teaspoons cornflour

  • Combine all ingredients in a saucepan, bring to the boil and simmer for 2 minutes.
  • Pour into a jug to serve over your desired meat.

1 8-ounce jar mango chutney
1/4 cup fresh lime juice
1 tablespoon grated lime peel
3/4 cup mayonnaise
For sausages
50 fully cooked smoked cocktail-size sausages
1/3 cup (packed) dark brown sugar
3 tablespoons ketchup
2 tablespoons Worcestershire sauce
2 tablespoons Dijon mustard
1 teaspoon hot pepper sauce (such as Tabasco)

Steps:

  • Make sauce:
  • Combine chutney, lime juice and peel in processor; blend until almost smooth. Transfer to bowl. Whisk in mayonnaise. Season with salt and pepper.
  • Make sausages:
  • Preheat oven to 425°F. Place sausages in 8 x 8 x 2-inch glass baking dish. Mix brown sugar, ketchup, Worcestershire sauce, mustard and hot pepper sauce in small bowl to blend. Pour over sausages and toss to coat. (Sauce and sausages can be prepared 1 day ahead. Cover separately and refrigerate.)
  • Bake sausages until heated through and brown in spots, turning occasionally, about 25 minutes.
  • Transfer sausages to platter. Place toothpick in each. Place chutney dipping sauce alongside and serve.

TRIPE CRACKLING WITH A DEVILED DIPPING SAUCE

This may sound odd, but tripe, when properly prepared, is an amazing thing! With the milk bath, and the harsh heat of frying, it loses quite a bit of its intimidating harsh flavor. This is a fun appetizer for your pork lovers, and will have them guessing as to what part of the porker you just fried! The sauce uses the traditional combo for any recipe that is deviled: mustard, cayenne pepper, and Worcestershire sauce.

1 pound tripe, rinsed
1 gallon milk, divided
1 large onion, unpeeled and quartered
1 head garlic, halved horizontally
2 bay leaves
1 cup sour cream
4 scallions, thinly sliced
1 tablespoon Worcestershire sauce
1 tablespoon English mustard
½ teaspoon garlic powder
⅛ teaspoon ground cayenne pepper
oil for frying
salt and ground black pepper to taste

Steps:

  • Combine tripe and 1/2 gallon milk in a non-reactive bowl. Let soak in the refrigerator, 8 hours to overnight.
  • Drain milk and rinse tripe. Return to the bowl and cover with remaining 1/2 gallon milk. Add onion, garlic, and bay leaves. Let soak in the refrigerator, 8 hours to overnight.
  • Mix sour cream, scallions, Worcestershire sauce, English mustard, garlic powder, and cayenne pepper together in a bowl to make dipping sauce. Chill until flavors combine, at least 1 hour.
  • Drain tripe, discarding milk, onion, garlic, and bay leaves. Rinse tripe and pat dry with paper towels. Cut into tortilla chip-sized triangles.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Fry tripe in batches until puffed and golden brown, 1 to 2 minutes. Drain on paper towels. Season with salt and pepper.
  • Serve dipping sauce alongside fried tripe.

4 Rock Cornish hens, about 1 pound each, split in half and backbone removed
Salt and freshly ground pepper
2 tablespoons finely chopped fresh rosemary or 1 tablespoon dried
4 tablespoons vegetable oil
4 tablespoons coarse Dijon-style mustard
1/4 teaspoon cumin
1 tablespoon fresh lemon juice
2 teaspoons Worcestershire sauce
1 tablespoon dry white wine
1/2 cup fine fresh bread crumbs
2 tablespoons melted butter

Steps:

  • Preheat broiler to high.
  • Place hens on a flat surface and pound them with a meat pounder or mallet. Sprinkle the hens on all sides with salt, pepper, rosemary and oil.
  • Combine mustard, cumin, lemon juice, Worcestershire sauce and white wine in a small bowl and set aside.
  • Arrange hen halves neatly in one layer, skin side down, on a baking dish and place them under the broiler about 3 inches from source of heat. Broil about 8 to 9 minutes; turn halves and broil about 3 minutes more.
  • Turn off broiler and set oven heat to 450 degrees.
  • Brush mustard mixture on both sides of the hens. Brush with pan drippings and sprinkle both sides with bread crumbs. Put hens in oven skin side up and bake 15 minutes. Transfer to a serving plate and pour butter over the hens.
