When you're craving an egg sandwich, but also kind of want a grilled cheese sandwich, look no further than this easy copycat Denny's Moons Over My Hammy recipe.

2 slices of sourdough bread
3 tablespoons of butter, divided
2 eggs, beaten
2 slices of Swiss cheese
4 slices of ham
2 slices of American cheese

Steps:

  • Butter both sides of each slice of sourdough bread using about 1/2 tablespoon on each side.
  • Place the remaining 1 tablespoon of butter in a cast iron skillet. Turn the heat up to medium-high.
  • Place the eggs into the skillet and begin to scramble them.
  • When they have cooked, set them aside.
  • Toast both slices of the sourdough bread on each side in the skillet and then set the slices on a cutting board.
  • Place the sandwich components in the following order on 1 slice of the bread: the Swiss cheese, ham, scrambled eggs, and American cheese. Close the sandwich with the other slice of bread.
  • Place the whole sandwich into the skillet with the heat on low. Toast for about 1 minute on each side, until the cheese melts.
  • Remove the sandwich and slice it down the middle.
  • Serve immediately and enjoy!

1/4 ounce thinly sliced cheddar cheese or 1/4 ounce swiss cheese
1 slice heart healthy ham
1 pinch salt and pepper

Steps:

  • Spray a small frying pan with Pam. Cook egg beaters and scramble. Add salt and pepper.
  • Remove from heat.
  • Heat a grilling pan over medium heat. Place english muffin open faced on pan. Cook for about 5 minutes until warm and crispy.
  • Place thinly sliced cheese and both sides of muffin. Add egg and ham to both sides.
