My boyfriend made it for me after a really hard day. Ever since then it has become a comfort food. This recipe has been passed down through his family.

2 teaspoons butter
1 egg
salt and pepper
2 slices whole wheat bread
cheddar cheese
mayonnaise

Steps:

  • Place a small pan on a burner.
  • Add the butter and heat on medium high heat. (Make sure not to heat the pan on high, or else the egg will turn rubbery.).
  • After the butter has melted, crack the egg in the pan.
  • Let sit for about a minute.
  • Pop the yolk.
  • Sprinkle with salt and pepper.
  • When egg is set, flip over and cook other side.
  • Cook egg to your liking.
  • Meanwhile, spread mayonaise on bread and place cheese.
  • Place the cooked egg on top of the cheese, so it will melt.
  • Top with other slice of bread.
  • Enjoy!

A simple and delicious way to transform fried eggs into a substantial one-dish brunch or snack dish. I read the basic idea for this recipe somewhere recently, then couldn't find it again, but I added to the original idea - which just had garlic sautéed in the oil before adding the eggs - when I made this for brunch yesterday. I used some wonderfully orange-yolked free range eggs which certainly added to the visual appeal! Everyone loved it, and I'll be making this again! The proportions used could, of course, easily be varied.

1 tablespoon olive oil
1 tablespoon lemon juice
3 cups mushrooms, sliced
1 onion, chopped
2 -4 garlic cloves, chopped
4 -6 eggs
salt, to taste
fresh ground black pepper, to taste
1 tablespoon fresh basil, roughly chopped, for garnish

Steps:

  • Heat the oil and the lemon juice in a non-stick pan and sauté the mushrooms, onion and garlic until they are just beginning to soften.
  • Add the eggs, season to taste and fry gently and, if desired, when they are beginning to set, carefully turn them over.
  • Transfer the mushrooms, onion and garlic mixture and the eggs to a serving plate or to individual serving plates and sprinkle with the chopped basil.

This is a quick method to make eggs that appear to be "over easy" without the mess of turning and it uses much less fat for the cooking. Broth can be used instead of the water as the basting liquid. Thanks to Ericjs for the proper name for the cooking technique.

2 eggs
vegetable oil cooking spray
2 -3 tablespoons water
salt and pepper

Steps:

  • Spray a non-stick frying pan (size to accomodate the number of eggs) with oil spray. I often use well-seasoned cast iron skillets.
  • Place the pan over medium heat.
  • When pan and oil are heated, break eggs and place in pan with some separation between eggs.
  • When the egg whites begin to turn opaque (about 1 minute depending on how hot your "medium heat" is, pour water into the pan
  • Cover the pan tightly
  • Cook for 30 seconds before looking at the eggs
  • Cover the eggs after checking and cook until the eggs are the desired degree of doneness.

4 ounces turkey breakfast sausage
1/2 cup chopped onion
1 cup chopped unpeeled apple (such as Red Delicious or Granny Smith)
6 eggs
2 tablespoons milk
1/4 teaspoon salt
1/4 teaspoon dry mustard
1 dash pepper
snipped fresh parsley

Steps:

  • In a large skillet cook sausage over medium heat until brown.
  • Renove from skillet. Drain, reserving 1 tablespoon of pan drippings (add oil if necessary).
  • In reserved drippings cook onion over medium heat anout 4 minutes or until tender.
  • Stir in cooked sausage.
  • Meanwhile, beat together eggs, milk salt mustard, and pepper.
  • Pour over sausage mixture.
  • Cook, uncovered, over medium heat with out stirring until mixture begins to set on bottom and around edge.
  • Using a metal spatula, lift and fold partially cooked egg mixture so uncooked portion flows underneath.
  • Continue cooking about 4 minutes or until eggs cooked throughout but still moist.
  • Stir in apple.
  • Sprinkle with snipped parsley.
  • Serve innediatelt.
  • Makes 4 servings.
