1 cup salted butter (melted and slightly cooled)
3 large eggs (room temperature)
2 tsp pure vanilla extract
¾ cup granulated sugar
1/2 tsp sea salt
1 cup brown sugar (packed)
¾ cup cocoa powder ((75g))
1 cup all-purpose flour ((128g))
4 oz bittersweet baking chocolate (chopped)
¾ cup chopped walnuts

Steps:

  • Preheat the oven to 350°F. Grease a 9x9" baking pan with baking spray and line with parchment paper, leaving an overhang over the sides to allow for easy removal of the brownies.
  • In a large bowl, whisk together melted butter, eggs, vanilla extract, and sea salt until smooth.
  • Add in sugars and mix well.
  • Sift cocoa powder and flour into the bowl and fold with rubber spatula until well combined.
  • Fold in chopped chocolate and walnuts.
  • Add batter to prepared pan and smooth to the edges.
  • Bake for 25-30 minutes or until center is set. (see note)
  • Cool in pan for 20 minutes and then transfer to a wire rack to cool completely.

3/4 cup chocolate chips
2/3 cup cocoa powder, unsweetened
1 1/2 cups sugar
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon vanilla extract
4 eggs
3/4 cup California walnuts, chopped

Steps:

  • Preheat oven to 350°F.
  • Butter a 9″x9″ square baking pan.
  • In a double boiler over low heat, melt butter and chocolate chips together and remove from heat.
  • In a separate bowl, combine dry ingredients.
  • When the chocolate/butter mixture has cooled a little whisk in the eggs and vanilla.
  • Note: it is important to cool the chocolate/butter mixture or the eggs will cook.
  • Add the dry ingredients and whisk to combine.
  • Stir in the chopped walnuts.
  • Pour batter into prepared baking pan.
  • Bake for 40 to 45 minutes or until a knife inserted into center comes out clean.

10 ml vegetable oil, for brushing
30 g flour, for sprinkling
55 g chocolate, broken into pieces
70 g butter
180 g caster sugar
70 g self raising flour
1 pinch salt
2 eggs
1/2 teaspoon vanilla extract
55 g walnuts

Steps:

  • Pour a few drops of oil into a square cake tin.Sprinkle the tin with a little flour. Set aside.Put the chocolate and butter into a heatproof bowl.Put a little water in a saucepan and heat gently until it simmers. Stand the bowl over the water making sure it does not touch the hot water.Turn the heat down to medium. Using a wooden spoon,stir the chocolate and butter until it has melted. Remove the pan and stir in the sugar ,keep on stirring ocasionally.Set aside.
  • Sieve the flour and salt together into a large mixing bowl. Break the egg into a small mixing bowl.Pick out any pieces of egg shell that have fallen into the bowl. Beat the egg lightly with a fork until the yolk and the white are mixed together.Add the vanilla extract and set aside.
  • On a chopping board,roughly chop the walnuts using a kitchen knife.Set aside.
  • Add the chocolate mixture,beaten eggs and walnuts to the flour.Mix well until smooth,using a wooden spoon.Spoon the mixture into the prepared tin and level the surface with a palette knife.
  • Place the tin in the oven and bake for 35-40 minutes or until the brownies are well risen.Wearing oven gloves, take the tin out of the oven. Leave the brownies in the tin for about 5-10 minutes or until almost cold. Using a kitchen knife, carefully cut the brownies into 12 bars.Carefully remove the brownies from the baking tin using a palette knife.

2/3 cup butter or 2/3 cup margarine, melted
1 1/3 cups sugar
2 eggs
1 1/2 teaspoons vanilla extract
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/4 teaspoon salt
1/2 cup chopped toasted walnuts (optional)

Steps:

  • Heat oven to 350 degrees.
  • Grease an 8" square baking pan with non-stick cooking spray.
  • In medium bowl stir together butter, sugar, eggs and vanilla.
  • Add flour, cocoa and salt stirring just until blended.
  • Mix in half of the walnuts, if desired.
  • Spread mixture and sprinkle with remaining walnuts.
  • Bake about 30 minutes, until top appears dry and center is set.
  • Cool brownies in pan on wire rack.

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Heat butter and unsweetened chocolate over low heat, stirring constantly, until melted; cool slightly.
  • Beat in sugar, vanilla and eggs in a 3 quart bowl on high speed 5 minutes.
  • Beat in chocolate mixture on low speed.
  • Add flour; beat just until blended.

4 ounces unsweetened chocolate, coarsely chopped
2 cups sugar
4 eggs
2 teaspoons vanilla extract
1-1/2 cups all-purpose flour
1-1/2 teaspoons baking powder
1 cup chopped walnuts or pecans
TOPPING:
1/2 cup butter, cubed
4 ounces unsweetened chocolate, coarsely chopped
1 cup sugar
1 can (5 ounces) evaporated milk
3-3/4 cups confectioners' sugar
3 teaspoons vanilla extract
4 cups miniature marshmallows

Steps:

  • In a microwave, melt butter and chocolate; stir until smooth. Cool. In a large bowl, combine the sugar, eggs, vanilla and melted chocolate. Combine flour and baking powder; add to chocolate mixture and beat just until blended. Fold in nuts. , Spread into a greased 15x10x1-in. baking pan. Bake at 325° for 25-30 minutes or until a toothpick inserted in the center comes out clean., Meanwhile, in a large heavy saucepan, melt butter and chocolate. Stir in sugar and milk. Cook over low heat for 20 minutes, stirring frequently. Gradually whisk in confectioners' sugar until smooth. Remove from the heat; stir in vanilla. , Place marshmallows over warm brownies; pour warm topping over marshmallows. Cool on a wire rack for at least 2 hours before cutting.
