DEEP FRIED BRIE
Warm melted brie oozes out of a crispy breadcrumb coating when you bite into these pieces of heaven. Serve with cranberry sauce and a small side salad and you have the perfect dinner appetizer or snack.

Steps:
- In a small bowl, whisk the egg with some salt and pepper using a fork. Place the bread crumbs in a separate bowl. Dip the cubes of Brie into the egg, then roll in breadcrumbs until evenly coated and well covered. Place the cheese cubes on a tray, and refrigerate for about 20 minutes, to firm up.
- Heat oil in deep-fryer or heavy saucepan to 375 degrees F (190 degrees C). Fry the cheese cubes for 3 to 5 minutes, until deep golden brown. Remove with a slotted spoon, and drain on paper towels. Serve warm with cranberry sauce for dipping. You can also make these before your guests arrive, and keep them in a warm oven.

THREE GREEN SALAD WITH WARM BRIE
I have served this many times at dinners where a seperate salad course is appropriate.It is simple, quite sophisticated and the taste combinations are interesting.

Steps:
- Wisk together in a small bowl the oil of your choice,lemon juice and a little salt and pepper.
- Let stand at least an hour at room temp.
- If you use plain olive oil you may want to flavor to taste with a little garlic powder in the oil.
- Preheat the oven to 350*.
- Toss the dressing with the greens and divide among salad plates.
- Arrange brie on the baking sheet and bake until soft but not runny.
- You really need to stand there and keep an eye on it.
- (about one minute) Top each salad with the wedge of cheese and toasted pecans.
- A nice variation is a"fan" of thinly sliced pear on the plate.
WARM BRIE SALAD DRESSING
This is a lovely salad dressing recipe from Paula Deen that would make me happy to eat salad for every meal & it is certain to be shared w/our friends on a dinner occasion. I hope you enjoy it as I know I will. (The prep & cooking time has been combined & does not include time to cool slightly)

- Heat oil in a saucepan over low heat. Add onion & cook till softened.
- Add mustard to saucepan, then the vinegar & stir well.
- Remove rind from Brie & add cheese to the pan, mixing till smooth.
- Let mixture cool slightly & add capers if you are using them.
- Add salt & pepper to taste & serve warm over mixed salad greens.

DEEP FRIED IRISH BRIE WITH SEASONAL SALAD
I took a trip to Ireland November 2011. I picked up this cookbook called A taste of Killarney, compiled by Jane Bergin. This recipe is from Gaby's Seafood Restaurant, Chef Geert Maes.

- 1. Brie Bites
- 2. Sprinkle flour onto one plate and the wheat germ onto another. Beat the eggs in a bowl. Toss the brie cubes in plain flour, then dip into the beaten eggs, and finally in the wheat germ. Deep fry the brie in a hot fryer (275C) 525F for 5-6 minutes until golden brown, then drain.
- 3. Vinaigrette
- 4. Place mustard in a bowl, add the white wine vinegar (it doesn't give an amount), and the lemon juice and whisk. Season with salt and pepper. Toss with the seasonal greens.
- 5. Place the salad in the center of the plate and arrange the brie around the edges.
- 6. Tip: Brie can be frozen for up to six weeks, but leave it the refrigerator over night to thaw.
