1 cup firmly packed brown sugar
3/4 cup butter, softened
1/2 cup sugar
3 eggs
1 teaspoon vanilla
1/4 teaspoon salt
1/2 cup instant espresso coffee powder
1/2 cup flour
3/4 teaspoon baking powder
3/4 cup semisweet chocolate morsel
powdered sugar, for dusting

Steps:

  • Preheat oven to 350F.
  • Lightly butter and flour an 9-inch square baking pan; set aside.
  • Beat brown sugar, butter and sugar in a mixing bowl.
  • Add eggs, vanilla and salt.
  • Beat until well blended.
  • Stir in espresso powder, flour and baking powder, mixing until smooth.
  • Fold in chocolate chips.
  • Pour batter into prepared pan.
  • Bake for 30 mins.
  • or until skewer inserted in the centre comes out clean.
  • Cool completely in pan; cut and serve dusted with powdered sugar.

Number Of Ingredients 10

5 ounces semisweet chocolate
2 ounces unsweetened chocolate
3 tablespoons cocoa powder
1 1/2 tablespoons instant espresso or 1 1/2 tablespoons instant coffee powder
8 tablespoons unsalted butter, cut into quarters
3 large eggs, room temperature
2 teaspoons vanilla extract
1 1/4 cups sugar
1/2 teaspoon salt
1 cup all-purpose flour

Steps:

  • Adjust oven rack to lower-middle position and heat oven to 350 degrees.
  • Spray 8-inch square baking pan with nonstick vegetable cooking spray.
  • Fold two 12-inch lengths of foil lengthwise so that they measure 7 inches wide.
  • Fit one sheet in bottom of greased pan, pushing it into corners and up sides of pan; overhang will help in removal of baked brownies.
  • Fit second sheet in pan in same manner, perpendicular to first sheet.
  • Spray foil with nonstick cooking spray.
  • In medium heat-proof bowl set oven a pan of almost-simmering water, melt chocolates and butter, stirring occasionally until mixture is smooth.
  • Whisk in cocoa and espresso powder until incorporated.
  • Set aside to cool slightly.
  • Whisk together eggs, sugar, vanilla, and salt in medium bowl until combined.
  • Whisk chocolate mixture into egg mixture; then stir in flour until just combined.
  • Pour mixture into prepared pan, spread into corners and level surface with rubber spatula; bake until slightly puffed and toothpick inserted in center comes out with a small amount of moist batter clinging to it, 35 to 40 minutes.
  • Cool on wire rack to room temperature, about 2 hours, then remove brownies from pan using foil handles.
  • Cut into 1-inch square and serve.
  • Do not cut brownies until ready to serve, brownies can be wrapped in plastic and refrigerated up to 5 days.

3/4 cup all-purpose flour
1 tablespoon best-quality cocoa powder, preferably Valrhona
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, plus more for pan
3/4 teaspoon instant espresso powder
5 ounces semisweet chocolate, finely chopped
3/4 cup granulated sugar
1/4 cup light-brown sugar
3 large eggs
1 teaspoon pure vanilla extract
3/4 cup (4 1/2 ounces) semisweet chocolate chips, optional

Steps:

  • Preheat oven to 350 degrees. Butter an 8-by-8-inch square baking pan. Line with parchment paper and butter parchment.
  • In a medium bowl, sift together flour, cocoa powder, and salt; set aside
  • In a large, heavy-bottomed saucepan, combine butter and espresso. Place over low heat and stir until butter has melted. Add chocolate, and stir constantly until mixture is smooth, about 2 minutes. Remove from heat, stir in both sugars until well combined.
  • Add eggs and vanilla and continue stirring until well incorporated and mixture no longer appears grainy. Sift flour mixture over batter, and stir until just combined. Stir in chocolate chips, if using.
  • Pour batter into prepared baking pan; smooth top with the back of a wooden spoon or a spatula. Bake until a toothpick inserted in the center comes out with a few moist crumbs, 28 to 30 minutes. Be sure not to over bake. Let cool completely on a wire rack. Cut into 9 brownies.
