I was given this recipe years ago by my friend Debbie. I've had it written down on a torn piece of paper for years and decided today that this recipe needs to be on AllRecipes. It is a moist, sweet, and delicious bread with a crispy crust. By far my favorite bread recipe!

2 eggs
2 cups white sugar
½ cup vegetable oil
2 teaspoons vanilla extract
2 cups apples, peeled and diced
2 cups all-purpose flour
1 ½ teaspoons salt
1 teaspoon baking powder
½ teaspoon ground cinnamon, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
  • Beat eggs, sugar, vegetable oil, and vanilla extract in a mixing bowl; add apples.
  • Mix flour, salt, baking powder, and cinnamon in a separate bowl; add to apple mixture and stir just until evenly combined into a thick batter. Pour batter into the prepared loaf pan.
  • Bake in the preheated oven for 45 minutes. Cover loaf pan with aluminum foil; continue baking until a toothpick inserted into the center comes out clean, about 15 minutes more. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

This is probably my favorite cake of all time (excluding cheesecake but that's another category altogether, ha). It is rich and moist and bad for you ... but so very good.

2 c sugar
1 1/2 c vegetable oil
4-5 large eggs
3 c all purpose flour
1 tsp baking powder
1 tsp baking soda
1 Tbsp cinnamon
1 tsp nutmeg
1 tsp vanilla extract
3 c apples, chopped (i use granny smith)
1 c pecans, chopped

Steps:

  • 1. Note: This is one of those recipes that is going to require you to get your hands messy if you really want to mix the cake up well. It will be thick and will need to be "placed" in the pan and spread out, not "poured."
  • 2. Beat the sugar and oil together; add eggs, one at a time and beat to blend between each addition.
  • 3. Mix together the flour, soda, baking powder, nutmeg, and cinnamon. Add to the batter and mix well. Add vanilla.
  • 4. Fold in the apples and pecans, using a heavy spoon or, my preferred method, you hands, to ensure the cake is mixed well.
  • 5. "Pour" into a greased Bundt pan or 13 x 9 baking pan and bake at 325 degrees for 1 hour and 10 minutes.
  • 6. Note: I prefer baking this cake in a 13 x 9 inch pan because it comes out a bit crunchy on top.

1/2 cup butter, softened
1 cup sugar
2 eggs
1/4 teaspoon vanilla
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 1/2 cups shredded peeled apples (about 2 medium apples)
1/2 cup chopped walnuts
1 quart vanilla or cinnamon ice cream

Steps:

  • Heat oven to 350°F. Spray 9-inch round cake pan with baking spray with flour.
  • In large bowl, beat butter and sugar with electric mixer on medium speed until light and fluffy. Beat in eggs, one at a time. Stir in vanilla, flour, baking soda, cinnamon and salt. Stir in apples and walnuts. Spoon into pan.
  • Bake 40 to 45 minutes or until toothpick inserted in center of cake comes out clean. Cool 10 minutes. Remove from pan to cooling rack. Cool 10 minutes longer. Serve warm with ice cream.

This is one of those cakes that, well, the longer it sets, the better it gets. Oh, don't get me wrong, it is just as delicious warm and fresh out of the oven. The added bonus to this lovely cake is that instead of drying out, it gets more moist as the days pass on, if it lasts that long...

3 eggs
1 1/2 cups oil
2 cups sugar
3 cups flour, sifted
1 teaspoon salt
1 teaspoon baking soda
1 cup pecans or 1 cup walnuts, chopped
2 teaspoons vanilla
4 Granny Smith apples, about 3 1/2 apples (1 shredded, the others chopped fine)
1 cup light brown sugar
1/2 cup butter
1/2 cup milk

Steps:

  • Cream together the eggs, oil and sugar.
  • In a separate bowl, sift the flour, salt and baking soda.
  • Combine all.
  • Now add your nuts, vanilla and apples.
  • Note~this batter is VERY stiff, don't worry, it's suppose to be that way. When the apples cook they add plenty of moisture to the cake to make it moist. Plus, your going to add more moisture when your glaze soaks inches.
  • Pour into a greased and floured 9 X 13 cake pan. Bake at 350 for 45 minutes or until a toothpick comes out clean from the center of the cake.
  • In a sauce pan, combine your glaze ingredients and boil for a few minutes. Set aside.
  • When cake is done, puncture the top of cake with a fork, quite a bit. Pour on your glaze.

Paula Deen's recipe for fresh apple cake is better than my grandma's--- but don't let her know that! I like this even better than apple pie.

3 tablespoons sugar
3 cups sugar
3 teaspoons cinnamon
3 cups flour
1 teaspoon baking soda
3/4 teaspoon salt
1/4 teaspoon nutmeg
1 1/2 cups vegetable oil
3 eggs
3 cups chopped apples (about 3 apples)
2 teaspoons vanilla extract
1 cup chopped pecans
1/2 cup raisins
prepared frosting, melted (from a can)

Steps:

  • Preheat oven to 325°F Grease 10" tube pan, combine 3 Tablespoons sugar with 1 teaspoon cinnamon, coat pan with sugar mixture.
  • Mix flour, soda, salt, nutmeg, and cinnamon; set aside. Beat oil and sugar until blended. Beat in eggs, one at a time, and then stir in apples and vanilla. Add flour mixture until blended; stir in pecans and raisins.
  • Transfer to pan and then drop and shake the pan to release bubbles.
  • Bake 1 1/2 hours - 1 3/4 hours until toothpick comes out clean. Cool on rack 15 minutes, remove from pan and glaze.
