DAWN'S RANCH DRESSING

This recipe is an adaptation of several recipes and the way I prefer to have my ranch dressing. Add more milk as needed for a thinner dressing. Chill at least 30 minutes for flavors to blend. Will keep about a week in the refrigerator.

1/2 cup mayonnaise (I use Duke's)
1/2 cup sour cream (I use Friendship)
1/4 cup cream or 1/4 cup half-and-half cream
1/2 tablespoon parsley
1 teaspoon instant minced onion
1 garlic clove
1/2 teaspoon pepper
1/4 teaspoon salt
1 dash paprika

Steps:

  • Combine mayo and sour cream in a medium bowl.
  • Measure out all spices and then blend gently.
  • Add milk until desired consistency.

Whisking together your own buttermilk dressing is easy and makes every salad (or any other dippable dish) just that much more delicious and special. You can use homemade mayonnaise or a high-quality prepared variety.

2 cloves garlic
1/2 teaspoon kosher salt
1 cup prepared or homemade mayonnaise
1/4 to 1/3 cup buttermilk
2 tablespoons minced flat-leaf parsley leaves
2 tablespoons minced fresh chives
1 scallion, trimmed and thinly sliced
1 teaspoon white wine vinegar
Freshly ground black pepper

Steps:

  • Mash the garlic and salt to a paste with the side of a chef's knife. In a medium bowl, whisk together the garlic, mayonnaise, 1/4 cup buttermilk, parsley, chives, scallion, vinegar and pepper to taste. If the sauce is very thick, thin the dressing with a couple tablespoons more of the buttermilk. Use immediately or store covered, in the refrigerator, for up to 3 days.
