I received this recipe from a good friend who is a fabulous cook. The colorful side dish gets its zesty flavor from spicy canned tomatoes with green chiles. -Donna Brockett, Kingfisher, Oklahoma

4 cans (15-1/2 ounces each) hominy, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (10 ounces) diced tomatoes and green chiles, undrained
1 can (8 ounces) tomato sauce
3/4 pound bacon strips, diced
1 large onion, chopped
1 medium green pepper, chopped

Steps:

  • In a 5-qt. slow cooker, combine the hominy, tomatoes and tomato sauce. , In a large skillet, cook bacon until crisp; remove with a slotted spoon to paper towels. Drain drippings from pan, reserving 1 tablespoon. , In the same skillet, saute onion and green pepper in drippings until tender. Stir onion mixture and bacon into hominy mixture. Cover and cook on low until heated through, 6-8 hours.

1 clove garlic, minced
1 tablespoon chopped jalapeno pepper, or to taste
½ cup sour cream
1 tablespoon butter, or to taste
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine hominy, garlic, and jalapeno in a saucepan. Bring to a boil, reduce heat, and simmer until hominy is tender, 15 to 20 minutes. Strain out liquid and pour hominy mixture into baking dish. Stir sour cream and butter into hominy mixture; top with Cheddar cheese.

My mother-in-law introduced me to hominy shortly after my wife and I were married. I created a dish that would satisfy my love of spicy food.

6 slices bacon
¼ white onion, chopped
2 (14 ounce) cans hominy, drained
3 fresh jalapeno peppers, chopped
3 cloves garlic, pressed
2 pinches red pepper flakes
2 pinches ground white pepper
2 pinches ground black pepper
2 tomatoes, cut into 8 wedges each

Steps:

  • Place bacon in a large skillet and cook over medium heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels, reserving bacon grease in the skillet. Crumble bacon.
  • Cook and stir onion in reserved bacon grease over medium heat until caramelized, about 15 minutes. Stir hominy, jalapenos, and garlic into onion. Season with red pepper flakes, white pepper, and black pepper. Continue to cook and stir until flavors are combined, 7 to 10 minutes.
  • Stir bacon and tomatoes into onion mixture; cook and stir until tomatoes are heated through, about 5 minutes.
