2/3 cup chopped dates
1/4 cup water
3 cups vanilla ice cream
1 cup 2% milk

Steps:

  • In a microwave-safe dish, combine dates and water; microwave, covered, on high for 30-45 seconds or until dates are softened. Cool completely., Place date mixture in a blender; cover and pulse until pureed. Add ice cream and milk; cover and process until blended. Serve immediately.

1/4 cup walnuts
1/2 cup Deglet Noor or Medjool dates, pitted
Pinch of ground cinnamon
Pinch of kosher salt
1 cup vanilla ice cream

Steps:

  • Preheat oven to 350°F. Toast walnuts on a rimmed baking sheet, tossing once, until slightly darkened in color and fragrant, 8-10 minutes. Let cool.
  • Meanwhile, place dates in a small bowl and add 1/2 cup hot water to cover; soak 10 minutes to soften.
  • Blend walnuts, dates with their soaking liquid, cinnamon, and salt in a blender until a coarse paste forms. Add ice cream and 3/4 cup cracked ice and blend until smooth. Divide shake between 2 glasses.

10 dates, pitted
1 banana, broken into large pieces
6 ounces bourbon
6 to 8 ounces sweetened whipped cream

Steps:

  • Add the milk, vanilla ice cream, vanilla paste, dates, banana and 4 ounces bourbon to a blender. Blend on high until well mixed and smooth.
  • Divide evenly among 4 chilled glasses, adding about 1/2 ounce bourbon "float" atop each shake.

1/2 c medjool dates, roughly chopped
1/2 c milk
1 large ripe banana
1/4 tsp pure vanilla extract
1 pinch fleur de sel
1/4 tsp freshly ground nutmeg
1 1/2 c good quality vanilla ice cream

Steps:

  • 1. In a small saucepan over medium-high heat, add milk and bring to a boil. Add dates and stir to separate and soaking them all in hot milk. Cover with a lid, turn off heat and let it sit for 30 minutes. Remove from the burner and cool off for 20 minutes.
  • 2. Pour date mixture into the blender container. Add banana, vanilla extract, fleur de sel, freshly ground nutmeg and ice cream. Process until the ingredients are well-blended, about 2 ½ to 3 minutes. Pour in a 16-ounce glass or two 1-cup glasses. Enjoy immediately. Makes 2 cups

If you've ever driven on I-10 from Los Angeles to Palm Springs, you've passed Hadley's -- a wonderful desert shop that sells dried fruits and nuts (and was doing so when it was hard to find such places). Their little sandwich shop featured the famous Hadley's "date shake" -- an unbelievably yummy milk shake made with dates. This is an attempt to transfer that flavor to frozen yogurt.

1/3 cup dates, minced
2/3 cup honey
1/3 cup evaporated milk
1 tablespoon unflavored gelatin (softened)
2 cups plain yogurt (you can use nonfat if you use Greek yogurt)

Steps:

  • Mix the dates and honey together.
  • Heat the milk in the top of a double boiler. Add the softened gelatin and date/honey mixture. Stir constantly until ingredients are thoroughly mixed and smooth.
  • Remove from heat and allow to cool to room temperature.
  • Add yogurt and mix well.
  • Chill at least 4 hours or overnight; add to ice cream maker and freeze according to manufacturer's directions.

1 cup milk
10 ice cubes ((or more)

Steps:

  • Chop up the dates quite finely, until sticky. I recommend: First halve, and then mince all the dates. Then, run your knife through them until they are almost like a paste.
  • Put them in your hand blender, blender, or smoothie maker.
  • Add in the about half the milk and mix until combined. Don't worry, the dates won't stick to the bottom!
  • Add in a few (3) of the ice cubes, and blend until smooth.
  • Add the rest of the ice cubes in small increments, along with some of the milk.
